This is easily one of the more dynamic tasting menus we've been to- each dish was banger after banger of wildly, different flavor profiles. We came hungry, and we were stuffed about 3/4 of the way through the experience. We were hit with pretty generous gnudi portions, ricotta is super filling!! Then the lamb saddle which was delicious. When the sorbet came out to relieve the palette I thought we were in for the home stretch but was surprised to get another super fatty (delicious) Iberico pork. Half way through that I had to tap out from the richness and portion. The energy sitting at the chefs tasting is part of the charm. OK I've had time to mull over my visit, so it won't be as harsh. I gave 2 stars instead of 1 ‍. I was super excited to visit the 2nd of the best of Breck food trifecta and left absolutely disappointed. Super cute restaurant. The evening started with them not remembering the food allergy that I told you about when i submitted your survey, but I digress. We started with a martini and an old fashioned. The martini was tasty but half of it was missing like where's the rest of my drink ‍. Second I had to ask for plates, not sure how you forget but remembered to give them to the table next to me ‍. At this point I'm over it and prefer my experience at raticato. Next strike, you ask us to order everything and you'll course it out but instead you interrupt us mid chew and ask to clear the table for our meals, absolutely unacceptable. How do you rush your customers. I get it's 8pm but you're open until 9:30 and if you're in a rush go home and send a server that wants to be there. Service, service, service. It was absolutely non existent and at a restaurant that isn't McDonalds prices, do better. You never came back to our table and asked if the food came out ok or if we needed more drinks. As a matter of fact, my spouse walked to the bar and ordered their own drink, unacceptable. Absolutely ridiculous. We couldn't enjoy our meal because the service was so poor and I'd absolutely not return. We had the Halibut, which was tasty but could do without the ro and the chicken dish, which was prepared well. The steak tartare was just ok and the bread and hummus was a good addition. Nah, wouldn't recommend. Please have a conversation with Olivia Z., if she's having a day she needs to exit and not work that day in hospitality. We wanted to love this place as friends had recommended it to us. And I will say that the food is great. Our experience with service was overwhelming and bordered on driving us crazy. We felt like we couldn't have a conversation without being interrupted. "Are you finished with this?" My wife and I had a really great experience here this week. First and foremost the service is incredible -- all the staff in the restaurant is working together to make your experience seamless. The food is excellent as well -- highly recommend the bread and hummus app -- so tasty. We also really enjoyed the steak entree. Rootstalk was a truly transcendental experience! I went with three of my girlfriends and we were all absolutely blown away the first night that we had to return the second night (just for cocktails, but we wish we could have stayed for dinner too). First of all, the service is second to none. Teddy, who we assume was the manager, was so kind and friendly. He even recognized us the second night that we came in, which was so nice. The bartender, Jacob, was so knowledgeable and patient with us and helping choose our drinks. They were absolutely amazing and top quality! The vibes of the place were also 10 out of 10. We sat at the lively bar for our second night, but our first night was in the downstairs intimate, warm basement. Finally, what everybody's been waiting for... The food! We started off with a flight of bites. You wouldn't believe that all four of us shared each bite, but we were able to, and every next bite was better than the last. They were alllll top-tier. Two of us got the ribeye steak, one of us got the cabbage dish, and one of us got the scallops. Each dish was so flavorful and cooked to perfection. What a fabulous dinner we had! We went with another couple and we were celebrating both of our anniversaries. To help us celebrate, the Rootstalk staff gave us each a glass of champagne! To start we shared the Esoterra Culinary Garden Summer Salad-it was so delicious and full of flavor. We also split the Cured wild caught king salmon-it had salmon, beets, pastrami slices, horseradish and strawberry-so good! Two of us got the alaskan halibut-with morel mushrooms (love!!!), fava beans, English peas, potato gnocchi and spring onion. It was incredible. My husband had the NY strip with fingerling potatoes, esoterra scallions, morel mushrooms and roast onion fondue. He really loved it and he normally is a ribeye fan. Our other friend had the ricotta cavstelli-foraged chanterelle mushrooms, sweet corn, Australian summer truffle and pecorino. Awesome! We ordered the ice cream sandwich dessert and it was so yummy-different than we expected but we love it so much. Then, for our anniversaries they gave us 2 strawberry sorbets. I can easily say this is one of the best food experiences I've ever had. To be fair, I have not had many tastings in my life, but the flavors I experienced were top-notch. My wife and I sat at the bar and had excellent service from all that interacted with us. Wow. Finally had the Apres burger and it did not disappoint. Beyond that, it's a definite contender for best burger ever...let alone for $12! And I used to wait in line in Madison Square Park for the original Shake Shack to open. I have had some great burgers. Where to start. The burger was cooked perfectly--juicy and somewhere around medium rare. While it looked a little large, the roll compressed nicely for eating and the bottom didnt disappear. It held the juices well. It literally melted in my mouth and I could probably eat it every day. The cheese had the perfect amount of salt for me and the onions gave it a patty melt feel in a burger. The spicy sauce that came with the fries was also excellent--just enough heat to make you want more. Really cant recommend this enough. Well done! read more

I don't eat seafood, so the rest of my group couldn't try the tasting menu. I ordered the Fitch Ranch NY Strip, and for dessert we had the Threefold Bread Pudding. The steak was excellently cooked and seasoned, and the bread pudding had a lot of flavor. The atmosphere and service were excellent. As expected, the portion sizes were a little small for what you pay. It's worth going to at least once, especially if you're celebrating a special event. read more

Holyyyyyy. This place is unreal. One of my favorite things about high-end restaurants is how they can take seemingly everyday ingredients and completely transform them -- and this spot nailed it. The heirloom tomato dishes were the perfect example of this (yes, there were two!). The first featured heirloom tomatoes with sheep's milk feta and a pine nut shruq sauce -- absolutely divine. The flavors were so intentional, each component lifting the tomatoes to a whole new level. The second was the heirloom tomato toast: crispy bread, a punchy aioli, and fresh, juicy tomatoes -- simple but elevated to perfection. The fried oysters were spot-on -- a perfectly crisp coating giving way to briny, tender oysters inside. The eggplant paillard was another standout, with thoughtful touches of hummus and vinaigrette that gave the dish real depth. The halibut and beef tartare weren't quite as much of a standout for me (though my husband loved the halibut), but they were still excellent. Overall, this spot is an absolute gem in Breckenridge. It makes me so happy to see this level of culinary talent here in Colorado. Huge thanks to the chefs and the team for a 10/10 experience -- from food to service, it was flawless. As far as pricing: not bad at all tbh, we didn't do the set menu, we each got two cocktails and left VERY full and it came out to about $250 total with tax & tip. Out of the four restaurants where we dined last week, this ranked #4. Here's why: Bar - what in the world?!? One in our party ordered a beer, the rest cocktails. The beer was probably about 8-10 oz. We (cocktail drinkers) were all shocked at the pours. How a bar can fathom that a one ounce pour is acceptable for a scotch or bourbon on the rocks is beyond our comprehension. The mixed drink was so weak that two were required. And I'll say, their prices don't seem to equate to these measures! Service - Best experience was with the host who was personable, warm and inviting. Our waiter and support staff for him were not only not attentive nor flexible but also not warm and friendly as you typically find in Breck. Out of the 3 or 4 who served or poured water for our table, only one was friendly enough to engage in conversation. Next - they wanted our table to order everything at once and I believe the menu even says the portions for entrees are shareable - so we proceeded accordingly. The problem was that the kitchen ignored the gluten allergy noted and sent out both salads improperly accommodated which was visibly noted in one when they were presented. Unfortunately, the other was also not appropriate and was only revealed AFTER the waiter retuned to the kitchen and then returned to inform our GF guest NOT to eat the salad she had served herself and was about to bite. Of course the salad debacle affected the service and subsequent experience. Menu - while this place seemed to have a wonderful array of choices, when you're with someone GF in Breckenridge, Colorado, you can typically expect reasonable accommodation at worst but ample menu options at best. Our experience here did not live up to those expectations. Food - aside from the lack of starter options for our GF guest who also suffers a mushroom allergy - what we ordered were just OK and the only small plate she could eat - the tuna - wasn't shareable on one crispy blue corn tortilla chip. Next, the entrees were difficult for someone with her dietary restrictions. Don't be fooled by the description of the chicken. Despite the Mediterranean description, it's breaded. Breaded!?! Halibut was fresh but lacked sufficient seasoning due to the changes required for the GF and mushroom restrictions. The steak was small and just OK. Ambiance - We ate downstairs which may feel warm and cozy during ski season but was a little too warm for a 5 o'clock summer dinner. Overall, we all hope to hear they improve in key areas above because I read the backstory of the restaurant and the hometown talent that runs the place. I do wish them well. For us, however, it doesn't make the list of recommended restaurants. read more

Had another top meal of 2025 (for moi) at Rootstalk. I found it as soon as I landed at Denver International Airport and was shuttling over to Breckenridge. I searched for some of the top-rated restaurants in Breck, perfect for celebrating a friend's birthday. We luckily found an early dinner res and we opted for the 7-course tasting menu ($149) and added on the wine pairing (~$100). OMG, chef's 7-course seasonal tasting menu ... it's a lot of food. A LOT. Portions are sizeable and we needed to be rolled out of there. And that's our fault because we cleaned our plates! My favorite was the chicken fried oyster and the congee. I really appreciate they made a few changes for me since I don't eat red meat, duck, and pork. Loved all the wine pairings that were selected and thoughtfully described from the sommelière (yay, a female!). Can't wait to go back in the spring. Fingers crossed we can get a table! read more

I loved the ambiance of this charming 1800s house. The staff was so kind and was on the spot all night. The food... oh man, the food. We had a Blue Crab small plate (bite), the Ricotta Cavatelli (dish with house made rabbit sausage), the Alaskan Halibut, and the Duck Breast. Everything was wonderful. My favorite was the Halibut, and that says a lot as duck is usually it for me. We topped off the meal with their Rhubarb Shortcake. This is a place where you get what you pay for. We came to Rootstalk while on a family vacation with my husband's entire extended family. It was our anniversary, and my husband knows that I like very creative and high-end food and so set up this reservation. From the moment we walked in to the moment that we left, the experience was extraordinary. We did the chef's tasting, and every single item that came out was wonderful. We received our own personalized menus for our anniversary, and an anniversary card as well as a fun little dessert. Rootstalk is simply the very freshest food. I can imagine you can get in the mountains.. The greens of all types, the ramp butter, the lightness but extreme flavor of their foams. Our spring pea amuse bouche as well our tomato amuse bouche were a very impressive start. Then the in house bread, having both a fresh ramp butter and a chermoula-like spread was excellent. The egg chawanmushi was unreal. The texture, the touch of chili - best dish of an unparalleled meal. English pea tortellini tasted like spring in Wales. The chicken mousseline was very good but my husband struggled with the mousseline texture. If an airy pate texture isn't for you this might have been the one that wasn't complete top notch but even he said the mushroom sauce and roasted mushrooms made it delicious. The perfectly done ribeye was again amazing. The rhubarb dessert was fabulous as rhubarb or strawberry rhubarb is my very favorite sweet flavor in the world. So pretty much the only words I have are amazing and perfection. The ever more impressive dishes just flowed out flawlessly. It is simply unparalleled in the area. This is a very high-end dining experience, but it's worth every single dollar if you're a foodie. read more

We were greeted and seated by Megan. Her knowledge of wines is readily apparent as she walks you through the wine list. We selected the '23 Petrussa Sauvignon Blanc and the '23 Tyler Pinot Noir, both were very delicious. For dinner we selected the Nee Zealand Sea Bass ad the Hayden Fresh Farm Pork Collar. As you see in the pictures both entrees were plated perfectly. They tasted beyond delicious. On a scale of 1 to 10 I would give them both a 15. Through the course of our meal Megan would check in and see if everything was ok and to be sure our experience was way beyond ok. Rootstalk is housed in a building from the 1800s and when you walk in you will feel the Classiness that is there from the ambience through the meal and even in the desert offerings. Speaking of desert we selected the Chocolate Date Cake, mmmmm goood. The entire experience was over the top. I recently had the opportunity to sit at the Chef's Counter. There are only four seats available per night. With complete confidence I can say this is the best restaurant I have ever experienced. We had over seven courses that were so wonderfully created and decorated. The chefs took time to explain what each course was to us, even when they were busy making food for other customers. It was an exceptional experience to see the chefs cooking with skill. The professionalism was through the roof. From the moment we walked into the restaurant we were greeted by the kindest people. TLDR: if you're in town, make a reservation, do not flake. You will absolutely not be disappointed. I feel like as much as I tell people about this restaurant I should probably write a review to be more formal about it too. I have had the pleasure of dining at Rootstalk on four separate occasions. Each occasion was widely spaced from the last. Each time the menu was completely different which I love and with my group we ordered multiple appetizers and multiple different entrées to share with the table. Everyone had their own cocktails and we had one or two desserts each time as well. Let me start with the cocktails, I don't think I have had fresher, tasting cocktails, or more balanced tasting cocktails in my drinking experience. I've had great cocktails at a lot of different places, but these tended to be more unique and you could tell that the ingredients were all made from scratch at the time of making your drink. Or if they weren't, it tasted like they were highly recommend anything on the menu for cocktails. As for appetizers, haven't had a single bad one yet. The most underwhelming is probably a charcuterie board. You have to have it on the menu. People are always gonna order it, but it just doesn't do it for me. It feels like something that I can get anywhere that said any other appetizer was phenomenal. As for entrées, there's always some kind of steak and chicken option but if you can branch out, I think you'll be impressed. One time I had duck another time I did have some kind of unique steak preparation and tried other people's plates the mains the sides. It didn't matter. Everything was perfectly cooked perfectly executed. Incredible flavor just phenomenal. The desserts are definitely worth having as well to cap off and incredible experience overall. Service has always been exceptional very attentive. It's a small restaurant they can see the entire place, so you're never gonna go unnoticed everybody's super friendly and knowledgeable on the menu. They all seem to have pride in working for such a unique restaurant. I also love the setting of the restaurant. It is a little bit tight and it can be a little bit noisy, but because it's small enough that keeps the noise level down to a tolerable level so if you're partially hearing impaired like I am, you can still have conversations. The tables are small I would not take a group there unless you rent out the entire restaurant otherwise I don't know how they would accommodate a large table. There is a basement as well that's a different vibe and it's site into the kitchen. If you're into that that's cool overall it's a small restaurant with limited seating so I would expect it to be difficult to get in at peak hours. I believe I've made a reservation each time and that was the way to go. I tell people about this restaurant all the time mind you, I live in Florida. I have oversold this restaurant every time to everybody that I've taken, yet still they've walked away having expectations exceeded. This is hands-down my favorite restaurant. My only criticism is that it's not easier for me to get to. read more

Wow. What an incredible experience! Rootstalk was recommended to me by a bartender from the brewery Nextdoor. Shout out to Taylor from High Side Brewery, who recommended dropping in for happy hour. 2024 James Beard award winner Matt Vawter is doing some truly special things in Breckenridge! First of all, the hour long happy hour is an absolute steal. A solid après menu with great drinks at a bargain. We ended up having the beef tartare, mussels, the duck, and rigatoni. Every dish was a 10/10. I cannot recommend the tartare enough. Easily the best I've ever had in my life. The fried maitake mushrooms were a stroke of genius. It just works! Do not sleep on this dish. The rigatoni was phenomenal. Mussels would rival some of the best I've had around the puget sound. And the duck was absolutely divine. Not to be outdone by the food, the front of house service was absolutely impeccable. Big thank you to Zach, our server who really took his time to give us a memorable experience. All of the staff here seem to really love what they do and boy are they good at it. I would not be surprised to see a Michelin star in the future for this gem of a dining experience. Food: overall it was very good. A few dishes were on the lukewarm side vs hot or cold but it didn't change too much of the experience for us. (1) HEIRLOOM TOMATO SALAD: really tasting. Fresh. The fried eggplant "croutons" were a nice touch (2) PRIME BEEF TARTARE: this was one I expected to be colder than it was. But the flavors were wonderful and that onion dip was crucial! (3) CAPPELLETTI: fresh pasta with gooey cheese in the middle and all around mushroom flavor? Yes please! My favorite dish of the night (4) FLIGHT OF BITES: 1 EGGS IN THE EGG, 1 BUTTERMILK FRIED CHICKEN, 1 EVERYTHING GOUGÈRE, and 1 GOAT CHEESE TART. Overall this was my least favorite. Everything had balance flavors but nothing stood out to me. (5) CAPE COD DIVER SCALLOPS: I really didn't prefer the sauce that came with this. I almost tasted like olive puree. Oddly I didn't see any shrimp and corn fritters like the menu says which was a bummer. The scallops were cooked well. The pork belly was luke warm which I would have like to be hot. Did the tasting menu here during a boys' trip to Breck on a friend's strong recommendation. Happy to say this lived up to the recommendation. The service was amazing, no water glass remained empty for more than a minute and the servers were friendly and knowledgeable. None of the dishes were mindblowingly inventive or anything, but the flavors were all balanced and delicious throughout a wide tasting menu. Shout out to the course with the duck liver mousse and house made bread, that was an unexpected highlight of the evening. Incredible experience for a special occasion! Rootstalk made our anniversary so special. We were originally going to just get things a la carte but the tasting menu looked good so we decided to go for the tasting menu. The service was so great, we had so many people coming up to wish us a happy anniversary. Each dish was so uniquely crafted and enjoyable. Even a few that we weren't as interested in, like the asparagus, ended up being so unique and interesting that we enjoyed it. I think the lamb tartare was my favorite of them all. Also the cocktails were all delicious. Like many places in breck Rootstalk is located inside an old house but we loved the ambiance. Best dinner restaurant out of the ones my fiance and I hit up in Breck (Bistrot, Radicato, and this one). The food, the service, and the vibe were all top notch. The fiance rates it a 4.5/5 - and its hard to disagree - our experience was fantastic! We had a (Tock) reservation for 2 at 745pm on Sunday, January 14, and arrived at 740pm to get our choice of tables. Before I go further - order the duck breast. Don't even think about it - just do it, and then thank me later. I was considering the pork tenderloin, and I did actually order the NY steak, but the duck breast stood out so much that it literally needs to be recommended on its own. For appetizers? Go with the roasted beet salad. If you know your vegetables (and fruit), you'll definitely appreciate how this dish came together, and then savour all of the different flavours that they put together. For service - my water cup was never less than 1/4 full - and I really tried to chug it! The drinks came out fast, the appetizer was quick, entrees were quick, and desserts were also fast. The only annoying thing (that bigger parties may encounter) is that they only serve the "same" entree stage at the same time. So if you're on entrees, until they've made all of them, you're not going to get it early. Ambiance - it was a quiet playlist, but the only complaint I'll say is that the sound carries too easily here - I could clearly hear conversation from both the table next to mine, AND the table two rows down (even though they were at normal speaking volume). Great place. Coulotte Steak description was: Fingerling Potato, Grilled Baby Gem Lettuce, Green Garlic Caesar, Crispy Alliums. Steak was perfect medium rare. Everything else was very mayo based (i hate mayo, but i suspect most people will love. I just wish mayo was part of the description so I could have asked for it on the side (it wasn't needed). Incredible dining experience, delectable food with pristine service. I came here to celebrate a graduation and the staff all wrote a card and signed it which was an incredible touch. They also gave us the best seat in the house next to the window. The ambiance was a mix of modern classy American. I really enjoyed how unique each dish was as well as how thoughtfully prepared and presented they were. Restaurant was first recommended to me by a friend who visited Breckenridge a couple years ago... a lot of the locals also recommended it, now I will too when asked. 1,000% amazing! Emily, the hostess with the mostest started off our night with open arms! Warm, inviting, and made our experience out of this world. Making sure the whole team was on board. Speaking of team, we were sat downstairs to watch the chefs at the kitchen bar... chef's kiss incredible. No one missed a beat including the ENTIRE STAFF! We went on back-to-back days because we lived the service and food so much! On the fancy end of the spectrum we made a Chef's Counter reservation for Saturday night. The tasting menu was fantastic but it was really the service that blew my girlfriend and I away. As we sat there we noticed burgers flying out of the kitchen alongside the high end dishes on the tasting and regular a la carte menus. It turns out they were part of a happy hour offering for $12. We came back on Sunday for happy hour and ordered one of each of the three items: cheeseburger and fries, citrus salad, and pasta with ragu. It was amazing to experience the same top level service on both ends of the spending spectrum. If you get a chance to dine with them I highly encourage it! read more
