Dropped in here after visiting the chocolate shoppe next door, because when you walk in there all you can smell is smoked meats!! we were just getting to town so we asked when they opened and on the way out in the morning we grabbed some of the many different varieties of brats! Love this place! We visit Caspar every year and always plan a campfire dinner w/ a steak from Roundman's. The selection of products here is vast and impressive. On our recent trip we snagged a lovely rib eye, some smoked salmon, a couple packs beef jerky and the "Turk-ulator" sandwich. The roll was incredibly dry & a bit bready, so I ripped out some of the middle and it was an improvement. The flavorful smoked turkey and house-made sauce made me forget about the lackluster bread. I also perused the pantry items and the snack packs (various meat + cheese combos vacuum sealed) but resisted the temptation. We'll be back... perhaps again this summer, or maybe next year. Regardless of when, Roundman's will continue to be a staple of our visits to the Mendocino Coast. read more

They also sell kitchen items, jarred items and candies. They have a meat display window where you can order meat as well. So awesome to have this butcher shop in Fort Bragg! I've never been disappointed in any of the offerings here, from fresh cut or ground meats to prepackaged cuts to smoked meats and fish to the great selection of spice rubs and marinades. It's all great and delicious! Some memorable purchases have been the boneless ribeye steaks, the ground pork, and the pork belly. The ribeyes had beautiful marbling and the fat caps rendered down to flavorful crispy edges after cooking. The ground pork had a perfect blend of fat to the lean, tasty meat. And the pork belly played a starring role in a Korean bbq at home as well as in a bowl of tteokboki. Absolutely delicious. Oh! And don't miss their house made bacon and sausages either. You can find them prepackaged or loose/by the pound. I believe they use all natural casings for their sausages and that makes a difference. I'm also a fan of their dried beef and poultry sticks and jerky. It's always fun to browse the smoked, dried meat cooler to see what's new. There are also smoked fish offerings that change with the seasons. You pay what I consider to be fair prices for the effort to source sustainable, humane products as well as the human labor and time it takes to smoke meats properly. Wow - a butcher and smokehouse in town! Everything looked very delicious. I asked the lady behind the counter if the beef was organic and grass fed. She said yes to grass fed and they follow organic practices but aren't certified. Then I checked out the web site that says, "grass-fed, grain finished and all natural, hormone and antibiotic free." -buzzer sound- If it's grain finished it would be extremely unlikely that it's organic. All natural has no legal definition, it's just another way the factory food industry tries to pull the wool over our eyes. Ticked me off so I left without buying anything bit I'll probably cave and return to checkout the smoked products, but I'll have the same sourcing questions. Harvest Market has actual, pretty local organic beef. The chicken is out because they use "all natural, free-range" Rocky Junior Chickens. Same problem with the all natural labeling. Free-range only means they open a tiny door at the end of the coop but the chickens never go outside. I gave an extra star for their selection and their reasonable prices. read more

Sausages: all house made and filled with amazing ingredients. My favorites are the hot ass, the turducken, and German sausage. They also have unique varieties like loaded potato. Bacon: the pepper bacon is cut so thick you might as well be eating a slab of ham. It is the best bacon I have EVER encountered and worth every penny. Ham hocks: every winter I like to make bean soup and these ham hocks are totally packed with flavor and so delicious! Ok, my fiance and I went a little crazy in here and bought $60 worth of meats/cheese! Rounman's is a perfect stop while driving along the highway and picking up some snacks for a good hike. The meat is preservative free though, so make sure you finish the meat once you open it. If you won't have access to a fridge for awhile, you can buy a cooler and they'll put ice packs in there for you! My favorite is the summer sausage and their pepperjack cheese! read more

I have found my go-to smokehouse for meats in the US. I have travelled all around the US and have found some great locations that offer local smoked meats, fish, and now cheese. I think I am about to order every morsel of Ahi, pepper smoked cheddar, and bacon stick they can produce. This is a heads up and a word of warning. There will be no future supply of these items. Over two years ago me and my girlfriend (now fiancee) made a trip up the coast to Fort Bragg. We bought a wide variety of cured products and took it back to the Bay Area. By the time we made our move to New Jersey in June of 2011 we had eaten all of what we bought except for the bacon, which was sitting in our freezer in Oakland. Before setting off I gave the bacon to my mother and she put it in her freezer. Fast forward to the week before Christmas 2012. I was on the phone with my mom and we were talking about cooking Christmas breakfast and dinner. Me and the fiancee had decided to make some French Toast for breakfast. I mused that bacon would go perfectly with the French Toast, my mom said she had some bacon in the freezer. I told her to defrost it and we'll cook it for Christmas breakfast..Little did I know that she still had that slab of bacon and was saving it for my return. Best Christmas Present... ever. After two plus years in the freezer, you could still smell the smoke and cure after removing the bacon from the vacuum pack and before putting it on the pan. Roundman's RAWKS!!! I'm totally addicted to their hot smoked salmon. They use alder wood which enhances the salmon flavor without being overbearing and it's never salty. They also have smoke tuna, chicken, duck, turkey.....sausages...cheese.........and the list goes on and on. You will find great eats right off the shelf, or you can buy butchered stuff to cook at home. They also have some kicka** garlic mustard. If you've been in FB for more than half an hour you'll notice that folks are really down to earth. Roundman's staff is no exception, they love what they do and are happy to chat, give cooking suggestions, and answer questions. Oh....and I almost forgot to mention the JERKY...this is The Bomb my friends. You can get hot beef, peppered, teriyaki, etc, but my total favs are the Turkey jerky and the Salmon jerky. This is going to sound crazy to members of the male bacon-loving tribe, but I just ate a sausage from Roundman's that was as good as bacon. Now before you consider me nuts or stupid or go Yelp-ape on me, read that again. It was as good as bacon, but not the SAME as bacon. I just wouldn't be disappointed if I thought bacon was coming and this chorizo sausage showed-up instead. Now what is it we love about bacon? It's ultra delicious and fantastic, right? It's got a nice smokiness and is meaty. Well all those things describe this chorizo which was also not greasy or runny or full of pieces that you won't eat. It was just a fantastic sausage. I know, too, as my heritage is German and I grew up eating all sorts of German-style sausages. Meat that comes in a handy shape that can be wrapped with a burrito or piece of bread and eaten on the go is just a good idea. And as someone who knows a butcher who makes sausage that has won plenty of awards, I know what of I speak (er, write) when I write that this was the best sausage I've ever eaten in my life. Period. There are lots of other goodies at the Roundman's Smoke House too, all of which are really great. This is just your typical old-fashioned butcher shop that used to populate the world before Sam Walton decided we all need to eat ground pig's snout for less money and put places like this out of business - places that use great meat and cure it to the point that it's fantastic. So while the people who run Roundman's are still doing so, run and load up a bag or two of their meats and then wonder why you ever loved that garbage sold at the grocery store. I was initially very excited to discover this smokehouse on a roadtrip. My favorite food on the planet is smoked salmon. They have a wide variety of smoked meats, fish and cheese. Everything is vacuum packed to help ensure freshness, or so I thought. I am only reviewing their smoked fish and cheese. I did not buy any of their other meats--those might be really good..I don't know. I bought several strips of salmon jerky and the pepper encrusted cheddar. Salmon Jerky: It looked really nice in the packages, but the eating part did not work out so well. The salmon had the distinct 'canned' flavor to it. I'm not certain how this is possible. A lot of local salmon are caught there, so they should have access to fresh fish. It must be something in the way they process and pack the fish? Also, it seems that the meat has been frozen after smoking. It doesn't have the nice texture a jerked salmon should have. I'm guessing that after they smoke/dry it, they cool and vacuum pack it. Then, in the freezer it goes until they defrost it for sale.. The problem is that this mushes the meat... Smoked cheddar: The one thing I liked about this is the pepper. They did a super nice job encrusting the outside of the cheese with some beautiful pepper. There was a mild smoke flavor too--that was nice. Unfortunately, this is where it went downhill. The processing was not done sufficiently to allow the smoke to permeate fully into the cheese, so only the outermost layer had a smoky flavor and aroma. Also, the cheese was a very mild cheddar--almost an 'american cheese' (think Kraft). If you are going to use a mild cheese, then please smoke it properly! Perhaps my standards for smoked fish and cheese are high. To taste truly five star smoked fish and cheese, I would suggest visiting Creekside Smokehouse near Half Moon Bay, CA. Wow.... Their stuff will blow your mind. They use premium cheddar and you can really taste the smoke. The fish has wonderful texture and flavor. No canned taste! Am I qualified to judge this place? Well, I am a recreational fisherman, so I have learned the best way to preserve freshness and texture in fish. I also smoke salmon and cheese at home, so know that it is quite possible (actually easy) to produce a decent product. So, while I really enjoyed visiting the place and seeing all of their beautiful (looking) products, I could not recommend buying their products. If you must, ask for a sample or buy one piece and try it before committing to a whole cooler full of food. Hopefully, the owners will address the issues and the products will improve. read more

I was thrilled to find this place while visiting Fort Bragg. Was hoping to find some ready to go meat for a picnic-and we did! They had a great selection of salami both sliced and not sliced. The one we wanted was not sliced and when we asked if we could get it sliced, the employee replied, "Whatever you want, I am at your service, here to help!" She was very helpful, sweet and nice. We got the summer sausage which was SO good, it was very juicy. The clerk sliced it and then vacuum sealed it so it would stay fresh until lunch time. We also got some beef sticks to snack on-pepperoni flavored and chipotle flavored. Both were delicious. They sold loaves of bread that were made at the local bakery which were very soft and fresh.
