Sauce is pretty good! It's located in Copper Village, which makes it super easy to get to (definitely a plus when you're flying). It is a bit pricey, but honestly that's expected for any ski town restaurant. We ended up coming here two nights in a row. The first night we had pasta--good overall, but the portions were a little small for the price. The vodka pasta, though, was definitely the standout. Highly recommend. The second night we tried the pizza and a Caesar salad. The Caesar could use some work--the dressing was a bit underwhelming. However, the arancini was top tier, and the pizza was good. Ohhhh. So much potential here. Just a few tweaks. White shirt guy - who greets every customer and makes sure they get a table - but never asks the customers about their experience. Seems like a manager - and yes, you should be doing that. This is an interesting place, and one of the nicest places to eat AT Copper Mountain. Yes, there is a free shuttle bus to Frisco, but you can get EVERYTHING good here. We went twice on our trip. The first time, we had some coordination issues with the appetizer and the main course. The appetizer came out - Gorgonzola Filet Tips. They were served in a - wait a second, the main course arrived 1 minute later? Okay, back to the Gorgonzola Filet Tips. They were sautéed in a thick beef base, with arugula leaves. They were very tasty, but eaten fast due to the coordination issue. For the main course, I had their 8 ounce Colorado Filet Mignon which was served with mashed potatoes and green beans with peppers, while my wife had their Spaghetti Marinara with sausage. Both were cooked correctly, and were tasty. We wrapped up dinner with a slice of Cheesecake which we shared. There was attention to detail and good presentation on the food! Looking around the restaurant, we have some vintage photos on the wall which are eye catching, and a BEAUTIFUL bar, with excellent liquor displays - backlit bottles, nice huge clean racks - it was quite impressive. You can also see the wine racks with bottles available on the wall. I found it curious that a Louis Martini cabernet was priced higher than a Beaulieu cabernet. Inexplicitly curious - I know both brands and their price points. (Hint: Check your prices) The second visit we didn't have any coordination issues. We started with their bruschetta, which served on toast circles. My wife had their Lobster Ravioli of the day, while I had their Seared Atlantic Salmon, which was served with mashed potatoes and enough green beans to feed a family. There were so many green beans, that no dessert was needed. While we were waiting, I noticed a few things that caught my eye. When the bar staff would pour a beer, they would dump the first two seconds off the tap down the drain before properly lifting and angling the beer glass. When I saw the flow rate, I suspected that the CO2 pressure was a bit on the low side, which seemed to be confirmed when I saw the beer, which came out with almost no head. It also looked like the cocktail stations needed to be rearranged - the bartenders did great shakes (at head level), although one only shook the cocktail two or three times, the other was much more vigorous. When it was time to strain out the drink, there were steps and reaching that shouldn't be needed (and cause increased drink prep times) when compared to a better staged bar station. The waiters asked us how the food was, but again, where was the owner / manager (white shirt guy?) I would have loved to provide the above insights, but nope, never came around. We were up in Copper for New Years Eve and we were told to stop in and try Sauce on Copper, it was extremely busy for the dinner rush full of a bunch of reservations lucky for us we were able to get squeezed in at the bar. We ordered the family spaghetti (feeds 3-4) I would say if your the type that doesn't eat a lot in one sitting it won't feed the much. Me and my girlfriend were more than capable to finish the entire bowl. The Spaghetti on the hand was good with a good sauce had a bunch of flavor. My family of 3 just ate here tonight. We ordered a caprese salad which was delicious. And we also ordered the family style bolognese. And it was delicious, but wasn't a family style amount. It was enough for two people, not 3 and definitely not 4. If we had read the reviews before hand we would have each ordered our own meals and would have had enough food. We left hungry. First off- our waiter was so patient. He had his hands FULL in the back room we were in. Screaming kids, spills, etc. Kidos to Mitch! Lobster Bisque- phenomenal! I didn't get a pic because we ate it too fast.. oops. The Brussels sprouts were to die for! All of our plates had a ton of veggies. We all kind of shared those. The green beans were crispy and fresh. The filet cut like butter! It was cooked to our liking and was delish! The lamb was ok. I wouldn't crave it but I would eat it again. Our 9 year old loved the pizza of course! We are a vegetarian family with Pn/Tn allergy who were excited to try this restaurant since Italian is always a safe bet. We ordered Bruschetta, Penne Vodka and Eggplant Parm. We specified that we wanted everything to be vegetarian. When we received our family order of Penne, there were chunks of chicken. Our waitress Dawn was mortified and brought it back to the kitchen. A little later, the dish was delivered by possibly a manager who dropped it off. Again, we saw that it had chicken in it. We were able to show it to Dawn who was again horrified and offered to have the kitchen redo it. By this point the family was starving and opted to just eat around the chicken pieces. We've never had to be put in a situation like that in any restaurants, including international. During all of this, Dawn who was running around with a few tables including a very large party was very comforting and offered to buy us dessert. Sadly, there was NO engagement from management to try to make it right. It was unfair for Dawn to feel like she needed to buy us a dessert. Dawn was able to take the pasta off of our bill. The food that we did eat was good. I would have given more stars if it weren't for the fact that they weren't able to get our pasta order right, not once but twice. Just had a dinner for a party of 10. We waited one hour for an order of Brussel sprouts and 2 bottles of wine. The table next to us sat down 20 minutes after us and was finished with their meal and received the bill before we even received anything else. Our dinner was over 2.5 hours and the food was so not worth of the price. We were recommended by locals and I would never mention the name Sauce to anyone I know. The pizza joint across the way is so much better for the price. They kept coming to the table saying "we had an extra" for some random appetizer that we didn't order. We ate here on a Sunday. It wasn't very busy, but we didn't mind. The atmosphere was relaxing. Waitress was very nice, but disappeared a few times. We were one of the only tables for awhile. We had to grab someone to get us some more tea. My husband's trout was just as amazing as the Sauced on the Blue. My Penne ala Vodka with shrimp was good, but I do prefer the sausage rigatoni. I had to add some salt and a lot of Parmesan for a depth of flavor, and I never do that. All in all, we for sure will be back because we like the overall atmosphere and food. read more

On March 29, 2024 three of us dined at Sauce on Copper, at my suggestion and my expense. The following morning my daughter was violently ill. It became obvious it was food poisoning caused by the linguine with clams that she had eaten in the restaurant. This was made even more distressing because she was scheduled for surgery in Vail early on April 1. When we realized what it was, I called the manager to alert him there was a food issue. He said he couldn't discuss it because he was too busy and too stressed. He took my phone number, said he would call me back, but he never did! My intent was solely to warn him. Days went by, so I emailed one of the owners thinking the manager never told him. I received no response from him either. I sent a second email a few days later thinking maybe he missed the first one, but still, no answer. On April 19, three weeks after the incident, the manager called. He was defensive, and kept belligerently insisting we were wrong about food poisoning. He questioned why I was so concerned because it hadn't been me who got sick! I was shocked by his attitude, and personal accusations. I was also puzzled why he was so upset when all I had tried to do was warn him. He hung up on me. We will certainly not be returning to Sauce on Copper. I'm disappointed and shocked by the behavior of the manager and one of the owners. They obviously have issues to deal with. Anyone who has experienced food poisoning can relate to how horrible and frightening it is. We simply did not want this to happen to anyone else, and have been astounded by the reaction of management. Since this happened a doctor told me that with food poisoning, the health department should be called immediately. read more

We ate the prior night and the food was not good... the next night we had a reservation and so did all of our friends. We came with all 10-15 of our party. They refused to seat us until our party was here, even though they sat the two 15 party's of our friends when they only had 5 people there. Tim, the man at the front desk was rude, childish, and passive aggressive. He decided he didn't like us before we even walked through the door. We waited and waited for TIM to seat us and he would not until our party was there. He proceeded to tell us we were "ruining his business" but wouldn't let us cancel our reservation after we apologized about the five people who were late. Meanwhile, the 2-15 people at the other table were seated with drinks. Finally, I told him to seat us or he will lose our business because we did not want to stand in the cold any longer. He Decided to seat us and once we did the waitress ( her name was Winter) came took our drink order and was very nice. Then, 5 of us went outside to take pictures since we are on vacation, although some people were still seated. TIM, said we we needed to leave because we were imposing on a ten top. Our friends were 5 minutes away and were only 20 minutes late, although the 10 others were already there.... He proceeded to take away the drinks we paid for while we were drinking them. I have never met someone more rude, judge mental, inconsiderate, and honestly a straight up asshole. I will never go back, nor give TIM any of my business ever again!!!! Worst experience of my life.
