Absolutely loved this restaurant! I came here for a special dinner, and everything we tried was delicious. We started with the Burrata Sourdough, which was like whipped burrata served with tomato basil jam and balsamic. It was absolutely amazing and my favorite dish of the night. We also tried the Saverina Sourdough Pizza. It was cheesy, flavorful, and really good. For drinks, I don't remember the exact names, but I had a hibiscus, gin, and prosecco cocktail that was slightly sweet and very refreshing. My friend had an orchard-style bourbon cocktail, and they enjoyed it as well. The ambience was nice and the service was quick. Towards the end I also ordered a wine which they ran out of and they were nice enough to offer another wine on the house. The food, drinks, and overall experience were all excellent. I stay at hotels through the Bring Fido app, often with my service dog Bodhi. The Claret is so crowded and hectic; it is definitely NOT dog-friendly! I have never had such a horrific experience! I was greeted at the host desk at their restaurant Saverina by a server who refused to seat us in the restaurant because I had my service dog with me. I gently reminded her that she is not allowed to refuse us service (he is extremely well-behaved and wears all the apparel required for a trained service dog). I was shocked that she was questioning his validity. After continuing to argue with me, she finally huffed off and said that she would have to ask her manager. They finally got me a table, but we sat there waiting for service for a ridiculous amount of time--something to do with the bartender waiting on us. Kimpton has always impressed me with their hospitality and extremely dog-friendly hotels. Sadly, they have completely missed the mark with the Claret Hotel and restaurant Saverina. read more

Three of us came here for brunch. It wasn't busy and was a nice space below a new hotel. Service started out great and then we started noticing the manager talking to a couple different tables about issues with their orders. I feel like this made our server grumpy. I got the egg in the hole, my mom got a trad bfast, and my cousin got the lemon ricotta pancakes. The food was great as were the mimosas. My mom was particularly irked by the server, which I think bothered me more haha. Everyone has off days. Food and a non-busy dining room win for me. read more

I got the ancient grains to fuel before a long day of hiking, and my partner got the eggs in a hole. Mine was simple and good! My partner would've preferred a more traditional eggs in a hole with non fried bread, but the flavors were great! I tried it and really liked it. I really wanted to rate Severina higher, but the experience was uneven. Service time dragged more than it should have. I'll give credit where it's due though--the appetizers were the highlight. The green mussels and the Caesar salad were genuinely good and set the bar high at the start. The pizza is where things went sideways. The first one was delayed because it was burned. The second attempt still came out semi-burned and didn't look or taste as appealing as expected, especially after the wait. I also ordered a spicy mezcal margarita. There was nothing spicy about it, and the presentation was plain at best. For a cocktail with mezcal and heat in the name, I expected more intention behind it. Atmosphere is decent. Medium lighting, plenty of space, and good potential for private dining. That part works. The service itself was polite and very apologetic about the delays, which I appreciated. Went here almost everyday when staying at the Kimpton for a week. Breakfast menu had a lot of different options. My biggest issue is that the food was never consistent; however it almost always tasty. Dinner and lunch were wonderful. The service was impeccable. The restaurant shared its lobby with the Kimpton Claret Hotel, which looked nice and modern, but the dining area itself has a vibe similar to average business hotel, mainstream, not overly formal or fancy. Perhaps because it's newly opened, the menu was quite simple. Beyond wood-fired pizzas, it offers burgers, salads, and a few pasta dishes. Both pizzas and pasta were made fresh in house. For lunch, there are five pizza options, with customizable toppings available; four entree choices; and three pasta selections and two salads. No soups or desserts though. Dinner options were similar but with more varieties and larger portions. Ordered the classic brisket ragu and a Wagyu burger with salad. Though desserts weren't available, the server kindly offered a yogurt-strawberry angel food cake from the hotel's room service, so ordered a cup of locally roasted coffee to complement the dessert. The pasta sauce was well balanced, neither too acidic nor salty. The brisket was tender and flavorful and the pasta was smooth and chewy. The Wagyu burger had a coal smoked flavor and rich meatiness, with tender, juicy patties that weren't overly dense. Overall, the food here was tasty and pretty good, though the menu options felt somewhat limited. It would be great if they can add soups, desserts, and french pressed coffee to the menu to make the dining experience more complete in the future. We enjoyed our experience last night. The ambience was a little on the chilly side... seeing that they are attached to a hotel, that makes sense. That was the toughest part of the evening, since the rest was stellar. Our waitress was phenomenal. She took my drink order (the blueberry limoncello spritzer, which was light and a little sweet and very bubbly... perfect for summer) and then took one look at my husband and guessed his drink order to a T. Apparently he looks like a whiskey drinker... who knew? She did a great job the entire night at reading the table and guessing when we wanted guidance for the menu or specials, and when we wanted to be alone. I ordered the pork chop and my husband ordered an alteration of one of the pizzas. The ambiance improved as the restaurant filled up and the lights dimmed. And our plates arrived about 15 minutes later... they were both stunning. The chop comes with polenta and a berry garnish on top, with wilted kale and onions on the side... sounds meh, but the port sauce that it was also garnished with made everything pop. No exaggeration that I licked my plate. The chop was about 2" thick and was perfectly cooked. The polenta was also well cooked, and both are tough to get right. And my husband loved his pizza. It came with a chili crunch and gave it some serious heat. The sausage was tasty and everything came together well. The food was so good that we ordered dessert. We opted for the chocolate pudding which was obviously made with excellent dark chocolate and was sooooo rich. Order this with an espresso if you can tolerate caffeine... it would help you polish it off. We didn't, but no complaints. We will come back... excellent experience! read more

This is an OK place, not wonderful and not bad, just OK. Had the focaccia bread with the olive tapenade and it was a wonderful app - until you run out of the olives, then the bread is well cooked but quite bland - but since it's to be paired with a very strong tapenade it was understood. I had the brisket ragu, which was good but needed a touch of salt. It wasn't anything stellar but it was a good dish. She had the chicken and mushrooms and the pasta was pretty underdone (and, no, not el dente, it was underdone) and in dire need of salt and pepper. The chicken was underwhelming for her and she picked it all off. This place was so loud, we had to lean in to talk just to hear one another, and the tables are so close that you are pretty much having a meal with strangers. It was a bit on the chilly side, but fairly bright until they cranked the lights down at about 8pm. Honestly I think their pizza is likely the star, as it's the most prominent thing on the menu and we saw plenty of folks having that. I am not really sure I would totally classify this place as "Italian" but maybe more "Italian adjacent" because it's mostly a pizza place with a few various Italian dishes that you've likely never heard of before, which sort of says that they used an Italian flare for their own thing - which isn't a bad thing, but it doesn't make it the spaghetti and meatballs kind of Italian joint you generally classify Italian joints as. read more

This is Denver's newest Italian restaurant... Saverina has opened its doors and is bringing the spirit of Italian cooking through local, seasonal, and sustainable ingredients. We arrived at Saverina and were seated in the main dining room. The ambiance was light & airy with modern touches throughout. The staff of Saverina was fantastic - they were welcoming, attentive, & seamlessly ran dinner service. General Manager, Crystal was active on the floor our entire meal, assisting her staff & engaging with customers (she had fabulous recommendations) Our server, Kevin was our 'luxury tour guide of food' for the evening and he ensured we tried the highlights Saverina had to offer. The Blueberry Limoncello Spritz was made with limoncello siciliano, blueberry syrup, Aperol, & prosecco. This was a perfect summer cocktail - bubbly and refreshing with the blueberry adding a touch of sweetness. The Negroni Bianco di Roma was made with strawberry gin, basil lillet, & suze. The strawberry gin added a subtle fruit flavor that was balanced out by the distinctive bitter & herbaceous suze. The Montebello Marg was made with ghost reposado, salerno, lime juice, & honey syrup. I loved this margarita - it had a slow-building spicy kick that didn't overwhelm and was still refreshing. The Fresh Mozzarella + Chili Crunch was made with fried bread, charred scallion puree, bee pollen, purple basil, & villa manodori balsamic. The mozzarella was thick with a lovely chew. The taste profile of the cheese was kicked up a notch by the chili crisps and the acidity of the tomatoes. The Tuna Carpaccio + Semolina Fried Sweetbreads were served alongside fennel pollen aioli & crunchy capers. The tuna was diced into small, fresh cubes. The Funghi Sourdough Pizza was made with black trumpets, hen of the woods, & black truffle puree. The pizza crust was made in-house and generously topped with thick, milky, chewy cheese (that made for epic cheese pulls) & meaty mushrooms. This pizza was fabulous. The White Corn Ravioli + Heirloom Tomatoes was made with slow-roasted corn, white truffle, & brown butter. WOW. The ravioli was a first bite sensation that lasted to the final bite. The delicate pouches of sweet corn were complemented by the white truffle & brown butter. The Angel Hair Slippery Noodles were made with Dungeness crab, Meyer lemon, green onion, parmigiana reggiano, & uni butter. The crab and uni resonated well throughout the thin, bouncy pasta. The Baked Fresh Caught Halibut (flown in fresh daily) was served with heirloom tomatoes, thyme, & extra virgin olive oil. The Halibut had a classic Sardinian preparation - so buttery & flakey. The Halibut was paired with the Pieropan - Soave, Veneto white wine. The wine tasted of crisp peaches & honey which paired beautifully with the butter in the Halibut. The Roasted Baby Carrots were topped with mint & pistachio then served alongside lemon ricotta. The carrots were caramelized in the pizza oven which kept the integrity of the carrot intact while giving the exterior a nice crispness. Went here for Mother's Day brunch Buffet and I have 5 words...The Very Best Brunch Ever!! What an excellent buffet!! The service was excellent, (thank you Megan), she made sure our water coffee and drinks were always filled. I had the Limoncello Blueberry Spritzer.....delicious to no end.....Limoncello, blueberry syrup, aperol, prosecco and basil. WOW!! The buffet was not overdone with a hundred choices so the items they did have out were done to perfection. The smoked salmon was to die for, the oyster were not large but they were VERY fresh. The sausage links were wonderful and upscale plus all the other items. The place was not over crowded by reservations but gave all 6 of us an enjoyable place to talk and eat. It's very unusual that we find the server the highlight of a restaurant. The space is new. The tables are a little bit crowded. Great drinks, great service and our bartender was extremely knowledgeable and forthcoming about the dinner menu, when we asked. We were seated exactly on time and soon after was greeted by our waitress Jamie. It went downhill from there. She didn't tell us anything about the menu, or specials, so after we ordered drinks we asked. No specials. We ordered a pasta for a shared appetizer, in addition to entrees. Didn't ask us if we wanted any sides. The appetizer arrived cold. The crabmeat was warm, but the pasta noodles were cold. There were no utensils on the shared plate, so we used our forks. We ended up using our salad forks for the entrees, as never got the silverware replenished. She never came by and asked how we were doing, or how we were enjoying our meal. We also were never asked if we wanted another drink, nor did we get our water glasses filled. We noticed the other tables had carafes of water on their table. Ours did not, and water glasses were never filled. A second glass of wine, in addition to water, would have been welcomed. Our entrees of chicken (large portion) and swordfish (small portion) were really good. We ordered a dessert to share. Again, no utensils at all and no individual plates, just the plate in the middle. The manager did stop by our table before we ordered, but never came by after, as we would have said something. She seemed to spend most of her time by the kitchen talking to staff. The hostess asked us about our meal as we left. We mentioned the cold pasta and the lack of water and additional drinks. She just rolled her eyes at us and we left. The hotel is beautiful and we might try the bar upstairs for another visit, but Saverina was disappointing for a Saturday night on the town. read more

I also thought their bar was cozy, well stocked and seemed like they had good service. We had the Red Wine Braised Short Rib, a Pizza with Parmesan cheese only and another butternut squash ravioli dish. Both the main dishes seemed a little expensive for the size of the dishes. Each was tasty, but left us a little hungry. Leading us to get a pizza to share. Which was clean and well made, even the crust was worth every bite. Our only complaint but also greatest compliment was in allergen handling. We mentioned an allergy we found a piece of mushroom on the pizza. We brought it up to them, and they made every effort to make it right. Based on that interaction alone they earned a 4 start review. Met a friend here for brunch and we both loved the ambiance of the space. A huge bar and bright white aesthetic with lots of comfortable seating strewn about in a welcoming way. The staff were sweet and got me all set to wait then sat us promptly when my friend arrived. We both wanted to try so many things we decided to share a couple dishes to get the most out of our dining. The egg in whole came first and the prosciutto paired with the res sauce was a savory treat when combined with the eggplant and egg. The Mac and cheese was the big hit with its thick noodles and wonderful sauce, the eggs and pepper flakes brought the perfect heat and umami to the dish. Finishing up with the pancakes for dessert was just what the doctor ordered. The ricotta was so smooth and the lemon curd paired with the huckleberry to make a sweet tart so perfect we didn't even use the syrup. My rating breakdown: The ambiance is comfortable, stylishly elegant, and upscale. 5 stars. Service was excellent. Orders taken quickly and servers attentive to the pace of the client. We had a four course meal as a part of restaurant week and there was little lag between dishes. While we appreciated the gesture of a server dedicated to making sure our water glasses were full, it was awkward and we would have preferred refilling our own glasses at our own pace. Four stars. Starter - endive and beet salad with candied walnuts, goat cheese, and a vinaigrette. Three stars. Generally good, but the candied walnuts were slightly overcooked giving them an oily taste. The walnuts were not texturally oily, but had a strong oil flavor. Three stars. First - pesto pasta. Good texture, but somewhat overpowering lemon flavor could have been cut with more parmesan or pecorino. Three stars. Main - chicken with broccolini. Broccolini perfectly tender and lightly charred. Well-paired with the balsamic glaze. I don't have much to say about the chicken. It was good, not great, and not bad either. Just good. Three stars. Dessert - chocolate custard. I'm not sure I would call this a custard. It was too thick. It was very rich and enjoyable. I would have preferred about half the amount of caramel sauce that was layered on top. Tried Sabrina last night. We live very close so we're thrilled to have this new restaurant nearby. I wish there were 1/2 stars on yelp because likely this would be a 4.5 star review & I'll tell you why. Food = 5 stars, Server Kevin = 5 stars! We had cocktails (the marg is wonderful!) the halibut, baby artichokes and ravioli (with fresh corn). It was all very delicious and prepared well. Serving sizes were perfect. Love that the pasta portions are reasonable and it's easy to pair with another small dish without being too fully. Having a server like Kevin - knowledgeable, outgoing, and overall just a great guy - making sure we were happy throughout the experience rounded out our great dinner. The 1/2 star off would be the host stand workers. Would it kill them to act semi-happy to see us, especially when most of the people coming through the door right now are likely trying the restaurant for the first time? They didn't act like they cared much. Their attire was also so casual we almost didn't walk in because we didn't think it could possibly be the Saverina we heard about.. I know this restaurant is quite casual, but dressing smartly has gone out the window. YOU reflect what people think of Saverina the second they walk in & interacting with you first at the host stand. We went for dinner during restaurant week and it was okay. We started off with the foccoia and that was the best thing we ate. A little heave on the oil but it had some good flavor and the olive tapenade was wonderful. Next we got the Cesar salad which needed more dressing. The salad was a tad dry. Then someone got the brisket Ragu and it was missing something. It was just bland. It looked delicious but had no flavor to it. Someone got the pesto bucatini and there was no lemon flavor at all. I should have asked for a lemon just to add some flavor. It was also bland. Both dishes required a good amount of salt. Lastly the lemon cake had this lemon glaze on the side which was again the only flavor on that plate. The cake itself was super dense and lacked flavor. Service itself was great, our server was very knowledgeable and knew the menu. She spoke highly of the menu and honestly sold us on a few dishes but then we were disappointed when it came down to eating it. The ambiance was great, quiet, and overall a good atmosphere. Very good first time experience at this restaurant. All the food we had was incredibly good and well prepared. The artichoke appetizers were crazy good. Two of us had the sourdough pizza which I would definitely go back for. The wine was good. The service was excellent. They're really going above and beyond and we will be back. We went for my cousin's birthday dinner. All of the staff was very dialed in and made our experience pleasurable. They have a beautiful pizza oven. Next time we go, we'll try something different. Nothing to write home about. Service was average and so was the food. Jamie was the name of our server. Not real engaging. Nothing special.

We ate at the bar last night - first time at the restaurant. Given mixed reviews, I was a bit suspect, but kept on an open mind. We simply ordered salad and pizza to keep things simple. Overall food was decent quality (salad was a little under-dressed), pizza was light and fresh. Service at the bar was terrible - forgot to order pizza, then when we reminded, it still took at least 30-40 minutes to arrive, after we kept asking repeatedly.
