Shibu Ramen is my usual ramen place since I am live in this area. Is it the best ramen I have ever had, maybe not. But they have not disappointed me yet. Their appetizer this always good. I had fried octopus and chicken before in the past. Simply tasty. I am not a fan of pork so for me to have ramen is usually a challenge. As you know most ramen are pork broth, I usually order either their veggie or chicken options. Sometimes, there will be seafood as well. In this place, their grilled chicken is pretty tender. Broth has sweetness to it. Bean sprout and Yu Choi in one bowl. The standard order is wavy noodles with chicken broth. I tried both and I have to say my preference is wavy also. The noodles are more bouncy, chewy and just firm enough. Orders usually come out quick and pretty good service. It is a place designed for the college students to hangout for lunch. I've tried another fare here and will give my 2 cents later on. My hubby have tried several of their ramen and was very pleased. I tried the spicy Shibu Ramen and I'm really hooked. The good: Ramen are straight and a little bit more al dente(I love the bite in it) than other Ramen places. The surprise is the kimchi in the soup. It's absolutely worked well. It has shaved bamboo, bean sprouts, green onions, your essential pork belly and marinated egg. The broth is the outstanding factor for this ramen. It's meaty and just satisfying. I think the salt level is just right. The spiciness is on par with 3 stars. The pork belly is delicious. The disappointment is the tamago (egg)- it needs to be marinated a little more and it seems to come out as hard boiled egg instead of the soft boiled with a slightly sweet and salty tamago I'm used to. It's a good ramen. I also tried the garlic tonkatsu and loved it. My daughter is in love with the takoyaki. They're presented well and they're crunchy. As for the tacos, they're a tad bit greasy and sweet. Maybe I shouldn't have ordered tacos in a ramen place but I know better now. Decent ramen stop. It's clean. I tried gluten free ramen for the first time and added garlic to it. Overall it was very delicious and I enjoyed the veggies in it. I believe the broth is animal based, has egg, and some naruto fish cake but the rest of it is tofu and veggies. The gluten free ramen noodles go well with the soup, they don't have a weird texture that some gluten free noodles tend to.
