This restaurant is amazing! The entire experience from the service to the atmosphere to the chef to the food was absolutely enjoyable. My husband and I went to Crested Butte for our honeymoon and wanted to really spoil ourselves since we had been camping and mountain biking the majority of the trip. We LOVED this place! The service is impeccable, the atmosphere is beautifully cozy, and, most importantly, the food is PERFECT!!! That is the only way to describe the food but PERFECT. We ordered the lamb, which was tender and perfectly seasoned, the escargot, which was the best I've ever tasted, and the chicken, which was not as spectacular as the lamb but still wonderful! The chef found out we were on our honeymoon and brought out complimentary champagne and dessert. He was very accommodating because we didn't have a reservation and allowed us to dine with his private family party in the back room. He uses fresh ingredients from his garden out back, and the wine selection fits every taste and budget. We live in the bay area but will be returning to this restaurant for our 3rd wedding anniversary - it really made the trip to Crested Butte even more special. read more

Granted we were having dinner with great friends, and the ambiance was charming... But the food was absolutely fantastic. The amuse bouche of thinly sliced filet mignon was enough to change the order from one in our party from the duck. Seared scallops ( which were definitely dry-pack) seared fois gras - spot on! As were the lamb shanks, filet mignon, and elk. Hefty prices; but you are in a resort town and the portions are Large and the food is phenomenal. From start to finish, Soupcon was amazing. Dan, our server, perfectly executed our dining experience. He was funny, knowledgeable, patient with our kids-quite frankly one of the best in his profession I've ever seen. He thoughtfully described menu items. When we had decided what we wanted to eat, we asked him to select a bottle of wine for us. He returned with a beautiful bottle of Spanish wine, 100% Tempranillo. It was perfect. Chef Jason brought out a delicious pork belly amusè. My son actually ate them all, and he's usually such a picky eater. For starters, my husband had the Foie Gras-gorgeous and perfectly prepared. I had the Gumbo. I hardly ever order Gumbo in restaurants, but had a feeling this dish would be good at Soupcon. It was hands down the best Gumbo I've ever had. Our entrees were works of art both visually and taste wise. We were practically in tears over how special the food was. I'll never forget taking bites of my steak, dipping my fork into the porcini mushroom powder. For dessert, I was eyeballing the creme brûlée, but ordered a chocolate dessert for my daughters sake. My husband ordered the soufflé. Dan went ahead and brought me a creme brûlée anyway. How could I say no. From the quaint cabin dining room, to Chef Jason thoughtfully answering my questions about how to make the perfect gumbo- to Dan's charming and wonderful service, we were just blown away. I spent many years working in fine dining in San Francisco, and I must say, this is one of the very best, elegant dining experiences I've ever had. World class! This is a really nice restaurant. Chef Jason was there and came out to greet us. He was very nice. I had a scallop dish that was excellent. The scallops were cooked perfectly. The restaurant is small and intimate, with a fine dining menu. I also tried some crab cakes that were not my favorite, but overall I think that this is still a five star restaurant. My dad also ordered the Stonehedge Cabernet and really enjoyed it. He said that it was a steal of a find on the wine list for $52 / bottle. read more

Had a birthday celebration with group of 5 at 6pm sitting and the meal was impeccable. I often pass on Soupcon because of the two sittings - 6 too early and 8:30 too late. But after our recent meal there I get it. To serve great food with flawless service having everyone (or every table) going in the same direction at essentially the same time is the key to success. My first dining experience at Soupçon was a pleasure; quite possibly the best meal I have had in Colorado. Jason Vernon, the proprietor/executive chef, personally delivered a sample of the filet, served crostini style to introduce himself and welcome our family to his establishment. Scallops, rabbit confit, and a hearts of palm greens to start. Tender, well prepared, and all as visually appealing as enjoyable to eat. An entrée of beef tenderloin, twice baked potato and baby bok choi may possibly be the finest preparation of a filet I have had in a long time. Dessert was par to the course and not surprisingly an excellent combination/ layering of flavors. My entire family was treated with courteous respect. This could quite possibly be the best restaurant that I have eaten at, with a meal surpassing premier establishments of significant cities in both flavor and creativity. It truly appears to be a hole in the wall and may not look like much from the outside once you find it, but it is quaint and cozy with a wonderful atmosphere. I honestly cannot say enough about Soupcon - the service was admirable, and Chef Jason stopped by our table (as well as all of the other tables over the course of our meal). The seafood was very evidently fresh and of the highest quality. The filet mignon was absolutely spectacular, and the serving portion of the steak was particularly impressive - I challenge you to find a better cooked and better tasting filet for the same price that approaches the portion served up by Soupcon. I highly recommend this one; they are doing all the right things, and I will certainly go back the next time I find myself near Crested Butte. read more

Jason is a landmark in Crested Butte. If you plan to visit, do make reservations ahead of time.....the small cabin doesn't have much space, but is very charming.... A miners cabin reconverted into a fabulous restaurant. Jason's culinary credits overwhelm our small town and a dining experience there may surpass any which you have had recently......anywhere. Wow! What can I say? This was probably the best meal I've ever had in my life, and that's saying a lot as I've dined pretty much all over the country, as well as abroad. Chef Jason has certainly created a wonderful hidden gem here in Crested Butte, and my boyfriend and I were so lucky to have found out about it for our romantic birthday dinner this past weekend. You arrive to find a quaint cabin hidden off the main drag, and once inside discover such a cute and cozy atmosphere, it feels just perfect! Once seated, we were brought a filet mignon hors d'oeuvre by the chef himself, and that pretty much sealed the deal on what we then wanted as an entreé. After a duck confit and bistro salad for starters, we were delivered two perfectly cooked medium filet mignons, the most mouth-watering and delicious cuts of meat ever. To go along with it, a delicious potato cake type side (and I'm not doing justice to it through the description, but it was fantastic!) For dessert we ordered a creme brûlée and a flourless chocolate torte to die for! So incredible! The entire experience was perfect, the chef came out to check on us two more times, and our waiter Mike was fantastic as well. We couldn't have asked for a better experience and will definitely be back the next time we are in town. Until then...dreaming of that food will have to suffice!! read more

For a small place like Crested Butte this restaurant is a gem. The service is terrific, the ambiance lovely and the chef/proprietor Jason Vernon is charming and very inviting. The food, again for this neck of the woods, is marvelous. We had Foie Gras as one of our starters and it was very fine as was the duck purses, dumplings stuffed with a savory duck ragout. Main courses, all delightful, included Colorado lamb, duck breast and Elk steak. All of us--seven people--were pleased. the Rosemary polenta was light and perfectly seasoned. The wine list ranges from moderate to expensive. We had a Montrachet that was $83 a bottle and got mixed reviews from the party. The price turned out to be $110 per person, but that included two rather expensive bottles of wine and drinks before. The Foie Gras was also expensive. We had no trouble getting a table at the second seating at 8:15 p.m. We were there in early June, a relatively quiet tourist time in Crested Butte. By all means go to Soupçon while in Crested Butte and you will be very pleased. read more

We had a nice meal at Soupcon. It was really pricey but we knew that going in. Most of our food was outstanding. Some way okay. My husband had the scallops and they were perfect. The bacon beurre blanc was lick your plate good. The tomato napoleon was nice but can be replicated easily at home so I wished I too had the scallops. My husband had the lamb for dinner and loved it. I had the filet and enjoyed it but wasn't overwhelmed by it and found the texture to be a bit off. We had very attentive service. It's quaint and very small. Sometimes at expensive restaurants the portion sizes are tiny but the Soupcon meals were substantial and I left full. I got the lamb and it melted in my mouth; my husband got the duck and was also very pleased. We got a butternut squash soup as an appetizer and although we did not request it, they offered to split it into two bowls since they knew we planned on sharing it - so thoughtful! Soupcon is by far the best restaurant I have ever been to. I went in late July 2002 and can't forget about it. No one would go with me because no one wanted to pay $75 for a meal, but it was my 30th birthday, so totally worth it. I ate more than I've ever eaten in my life. I considered forcing myself to vomit, but that would have been a waste. Everything was perfect and the flavors exploded in my mouth. I realize how trite that sounds, but it's the honest truth. We just returned from our first ski trip to Crested Butte. As a Jaded New Yorker i made reservations for this restaurant based on the reviews. We were overwhelmingly surprised. The ambiance, service, timing, and preperation was spot on. The chef/owner came out with the Amuse Bouche and introduced himself (nice touch). We thoroughly enjoyed the scallops, foie gras, elk, and lamb chops. The sauces were not overpowering but complemented the beautifully presented plating. Portions were large, and did not have room for dessert. The superb wine list had choices in all price ranges. We enjoyed it so much that we made reservations and returned two nights later. This was not a mistake. It was fantastic. We had the soup, mussels, lamb Shank and pork appetizer. This time we saved room for dessert and had the souffle. Great finish to a lovely evening. When is Crested Butte, dont make a mistake and miss this place. You will not be dissapointed. read more

You just cannot imagine how good this is. I want to admonish Kenneth T for his 4 stars. Who cares if you pay more for a bottle of wine! They charge no more than any top restaurant and I know for a fact the selection is all hand picked by Jason, the chef/owner, to go with his innovative and always changing dishes. I have a second home in Crested Butte and have had everything on the menu, high season and low. Everything is perfect regardless which is not the case in resort towns. Jason has an attention for detail that will not be undone by any top restaurant I have been in anywhere! It is located in a tiny but well appointed home conversion, so cozy and intimate that it is hard to leave. The wait staff is so professional you wonder where you really are at times. From wonderful fresh bread (at 8,800 ft no less) to a truly world class crab cake appetizer (always a risky order away from the coast), everything was cooked to perfection.
