Had to come back and update this because Spruce Creek Pizza really stepped it up. My last experience was maybe a 3-star at best, but man... they completely turned it around. The crust is way better now -- perfect crunch on the outside, soft inside -- and the sauce has that real homemade vibe. Cheese ratio is on point and the toppings were super fresh. Both pies tasted very fresh and the cheese to sauce ratio was perfect. The crush was also crispy and tasty. The pepperoni pie was loaded with lots of pepperoni, which made it delicious. First time here and I was not disappointed. Their pizzas are one size, a huge 18" - nice, thin crust. We got the Hawaiian and it was hot out of the oven when I picked it up. Not greasy, the crust was tender and not overcooked, cheese was nice and melty and the ham and pineapple were bite sized. The pizza was delicious! Cheese slice was average to me. Crust is good. Experience could be different on a fresh whole pie. Meatball sub - depends on what you like. I ordered mine without provolone. This place is so reliable. You get a great pizza every time. I usually build my own 3 topping. Sauce is perfect and the dough is outstanding. The pizza screams fresh. You can tell a good pie by how it heats up or eats cold the next day. It does very well either way. I have tried other places and a few chains but I am done as this place rules for me. We were shopping around at KTP and were lucky that a decent pizza place was right around the corner. There's a few bar seats inside, or most just take their pizza to go. I'd seen others post about Spruce Creek in a foodie FB page so I was excited to try them out. They were good, thin pizzas, with the grandma's slice giving some extra crunch. To be expected at this location, there is minimal parking. Or, go to another parking lot and walk over. They have small counters attached to the wall with tall stools for a few people to sit on. Great place to stop for a quick bite while shopping at the outlets. They have lots of different types of slices to choose from. I got the Buffalo chicken and the meat lovers. There are a few bar seats to eat inside or take it to go. The pizza was a priced a little high but you get a huge slice for the price. My boyfriend tried two different kinds as well. my girlfriend and i were passing through the area on our way back home to NY when she started craving pizza...as we are from long island NY, i was hesitant to try a local pizza joint while in maine. with that said, spruce creek pizza did not disappoint! the staff was very friendly and eager to help us with our order. we ordered 2 slices of pepperoni and 1 margherita slice & let me tell you, our only regret was not ordering another slice! "Brand new Amazing Pizza" place that was always missing in Kittery. On our recent visit we are delighted to find Spruce Creek Pizza across from shopping mall with plenty of parking. As soon as we entered, we were welcomed by smiling and attentive staff ready to serve us. We ordered a variety of slices to our liking and each one of them was original and delicious! I live in Kittery. Their pie is just OK. I make much better pizza at home, but it's taken me over 10 years to learn the secrets of a true pizzaiollo. For starters, their red sauce is too bland. I use a blend of crushed tomatoes (28oz), petite-cut (28oz) for a more rustic style, and small can (8oz) of paste so it's thicker than a spaghetti sauce. I prefer Cento brand, but Hunts is good too and less expensive. Drain the juice from petite-cut and set aside the cubes, but save the juice. Add the juice, crushed tomatoes and paste to a sauce pan. Now add the flavors. It needs sauteed chopped garlic for a marinara influence, an acid like red wine vinegar for a little tang, salt, pepper, oregano, touch of hot pepper flakes (optional), splash of sweet marsala (optional) and a little sweetness - either a few pinches of sugar or I prefer a bit of orange soda (learned this from Pizzeria Regina in Boston). Heat the sauce until just simmering, then turn off the heat. Now add the petite-cut cubes. This makes a fresh tasting sauce that is not over cooked, since the sauce will be fully cooked when the pizza is in the oven. Next, their crust is too stiff and cardboard-like. My dough is an upgrade from standard NY style pizza crust with more hydration, and olive oil: closer to a Neapolitan/NYC hybrid dough. It needs to be cold-fermented in the fridge for 1 to 2 days, with 3 days the ideal (learned this from Tony Gemignani. Tony is an 11-time world pizza champion). I also like a cheese blend closer to a Papa Gino's style - 70% mozzarella, 25% mild white cheddar, and 5% romano (learned this from a former Papa GIno's employee). The pizza itself is shaped using semolina flour on the work surface, which act like ball bearings when you put it on the pizza peel. Using bench flour changes the hydration of the dough and makes it more like a saltine cracker (bad). And finally, I cook my pizzas in a 550 degree oven on a steel pizza "stone". It needs to be preheated for at least an hour to get hot enough. Cook time is under 5 minutes for a crispy outer crust and puffy inner crust. My pies are medium thin, like a Papa Ginos / Regina hybrid style. This ensures there is little to no flop on the individual slices: just in case Dave Portnoy comes over for a pizza party and does a review (search for "barstool pizza review" on youtube - he's the Man). I'd give my pie about a 9.1 Portnoy-style score, only because I don't have a wood or coal fired oven, which adds a char flavor that you can't get with an electric oven. This recipe is also good for a Grandma / Sicilian style sheet pan pizza without the need for a pizza stone/steel. Just do me a favor and don't put the sauce on top of the cheese. It's not American (my opinion), unless you're from Long Island or Detroit. There are other details that I can't all describe here. This past summer I was working in Kittery for the day. When lunch time arrived I was hoping to find an alternative to the usual fast food choices but also didn't want to take the time for a full sit down meal. I was fortunate to stumble across this fantastic pizza shop. I walked in and reviewed the overhead menu but was told by the staff that the shop wasn't actually open yet for business, but would be hosting a grand opening soon. When I told them I wasn't local and it was unlikely that I'd make it to the opening, they immediately went into customer service mode. They were baking pie that day and GAVE me two slices of my choosing and also gave me some absolutely delicious seasoned bread balls. The staff were so friendly and enthusiastic. The food was wonderful and exactly what I was looking for! This pizzeria is now a "go to" lunch time destination whenever I'm in Kittery.
