Several people in town recommended this place over the other older and more famous one. So we stoped in around 2 in the afternoon. There were 5 people working and chair up with a regular customer while they prepared his to go order. We were asked to wait for the "cutter" and he came up less than a minute later. I had a few questions and right as I told him I wanted a brisket sandwich he turned his attention to the woman taking drive thru orders. This place scores high ratings for customer service and cleanliness, but the food was just plain old not good and very overpriced. I really wanted to like this place; we stopped in for lunch a couple of weeks ago and I'm still pissed at myself for not sending my food back. Both of us ordered a brisket plate and everything that came out, except the coleslaw, appeared to have been left in the oven overnight on low. The meat was so dry and had the texture of cardboard/90% reconstituted beef jerky, and the only thing you could taste was the overwhelming acidic and cloyingly sweet barbecue sauce. They slather that on everything... i'm pretty sure it's an attempt to cover the maids appearance and add some moisture back. I think the worst part was the peach cobbler, which is best described as gummy and bland. I don't mean to be hateful, but you won't learn about issues unless somebody brings them to your attention so you can make adjustments. I may give it another try down the road, tho...I did sample the smoked turkey, which was delicious but I really wanted to try their brisket and I'm sorry I didn't get the turkey now. Lunch for two people should not cost nearly $60 but with a drink and some cobbler to go that's what it cost me. I could've driven all the way to Tim's Tavern in Benton, covered my gas, covered my cost of lunches and gone away completely happy. We're staying at the Microtel Hotel across the street and this is a super convenient restaurant within a few minutes walking distance. I ordered it and they asked how quickly I wanted it. I asked for 10 minutes and it was ready then! I ordered their Super Spud (Baked Potato) with Brisket, beans and coleslaw. Portions were big and it tasted delicious. I highly recommended this one for quick and cheap dinner for almost 2 people. I also got the their peach cobbler which was yummy too. Passing through Hot Springs Arkansas MUST include a stop to Stubby's BBQ. Lucky to catch it on a Friday...and even luckier that there were beef ribs still available. The server split the two bones apart and I got one that I swear almost touched Little Rock...MASSIVE! Oh, and so so delicious. Nice and tender, and just enough fat attached to permeate flavor to the meat. BBQ sauce excellent compliment and something to smear in the mandatory BBQ supplement, white bread. Enjoyed 1/2 chicken (juicy breast meat!), baked potato, slaw, pot o bean (bbq beans, with chopped ham topping) and the always ever present peach cobbler. My wife and I split the potato, and in my half were two strips of fat. No bueno. Apparently you can ask for lean, but you may not get it. Was passing through Arkansas on a solo road trip and was reminded by hubby to bring home some BBQ. All the BBQ places in Little Rock were closed (it was Sunday), so waited till I got to Hot Springs. Stayed at the Hotel Hale (another 5-star experience) and the owner and mayor of Hotel Hale said "Go to Stubby's"! He was right! Finger-lickin' ribs and brisket (lean or fatty) were delicious. I must watch my salt intake so wasn't a fan of the cole slaw, and potato salad had too much mayo for my liking but it was still tasty. I'm from Texas, so don't like sauce on my BBQ, only on the side which they obliged. It's also sweeter than I like. Service was excellent and I will happily return the next time I'm in Hot Springs. Awesome old school Bar-B-Q. The brisket was the leanest I've seen and smoked to perfection. The ribs were huge and meaty and tasted great. They only have a red sauce but it is perfect. The cole slaw was fresh but the beans were average. They only have one dessert, homemade peach cobbler, and it is fantastic. The prices are reasonable and they prepare the food as you order. This is a smaller BBQ place that's nestled right near a Sonic so parking and getting to the area can be a bit of a challenge. Inside the decor was fun and welcoming. There wasn't a line when we got there so that was nice. We got the standard brisket plate. I opted for the potato salad over the beans which was nice because they didn't surcharge for it. The food itself was pretty good. I liked the brisket but the coleslaw was pretty wet and the potatoes were a bit undercooked in my potato salad. It's still a nice place overall. read more

I was charged 17.30. My husband had the ribs. He said they were tough and fatty. He had a side of baked beans, which he enjoyed. We both had water, and our bill was 35.00. The servers were not friendly or helpful, except for the sweet lady who ran the cash register. She was the only bright spot in the place. We won't return. We were visiting Hot Springs from out of town and this restaurant was recommended by our hosts. Being from Texas, where a love of BBQ is practically required to declare residency, I would say that Stubby's is okay, but far from the best I have ever tried. I would classify their BBQ sauce as a very sweet sauce and some people either love or hate that. Personally, I appreciate a sweet sauce from time to time and found it pretty tasty. If you prefer a tangy and/or spicy sauce, this might not be your thing. I had the chopped brisket sandwich and my husband had the pulled pork sandwich. The meat was moist, but maybe a little too moist. The bottom buns on our sandwiches disintegrated and I ended up having to eat my sandwich with a fork. What I found surprising and disappointing about the meat was that it just didn't seem to have any smokiness to it. When we pulled up to the restaurant, my mouth was watering from the smoky smell that permeated the parking lot but that smoke was nowhere to be found in the actual food. I ordered a side of potato salad and my husband got the beans. The potato salad was really good and mustardy so a big thumbs up for that. The beans, like the BBQ sauce, were very sweet baked beans. We actually ended up trading sides since he is one of those who doesn't like sweeter BBQ. The service was good on our visit and everyone was super friendly. I was a big dummy and took off my ring to wash my hands and somehow left it at my table. One of the men working there found it and ran after us to give it back, so I am extremely grateful for that. Price-wise, the meat seemed about on par with other BBQ joints I've visited, but the sides run a tad on the expensive side. Overall, I would classify our experience here as okay, but I don't think I would feel the need to eat there again. read more
