Tried first time but was closed at 1 as guess they sold out early. So second time got there right when opened. Loved her shirt as it was funny and she was helpful and nice. Ordered the sampler to get an idea of what they do. The ribs would be the only thing I'd recommend. They were good and the spicy bbq is good. The brisket was ok. Tougher than I like. The sausage is good. The pulled pork was dry and not much flavor. Shame as they put so much in there. The ribs go quick as I was there at opening and they only had 3 racks left as they have a sign saying so. Hence just get ribs. For sides, I enjoyed the beans and the potato salad. Lots of flavor and sweetness on the beans. The salad was like a twice cooked potato. The grandma slaw would skip. Surprisingly for all that food the price is very reasonable! We fed 2 kids and 2 adults and was plenty left over. read more

We arrived from Nevada to celebrate my daughters 40th birthday. I was craving bbq and collard greens. My daughter recommended the Rib Cage BBQ and it was awesome!! The ribs were fall off the bone fantastic. The loaded baked potato was enough to feed four. The best!!! I was still craving collard greens but they were sold out. I told the owner that I travelled 2000 miles to have some great greens. She promised to make some for me and they would be ready the following day. My son in law picked up two quarts of collard greens the following day. I ate one entire quart in one sitting. THE BEST GREENS I EVER ATE!! This was the best BBQ we've had in awhile. The slaw was amazing, slightly different bc it was definitely their own recipe, but I loved it. I thought the beans had a lot of pepper but I enjoyed them. This place is a "permanent " food truck where you can order to-go, or sit at one of their picnic tables under the shed. This is off the main drag, where the locals go. I got the loaded potato. They asked me if I "wanted everything " and not really knowing how it came answered yes. It comes with the barbecue pork, slaw and baked beans all piled on top of the potato along with cheese and butter and green onions. It was enormous!! I swear it could easily feed three people. I have a before and "after" picture and you can see if barely put a dent in it. Very good. Definitely worth getting away from the tourist area and looking up this food truck! read more

Visiting Hot Springs and trying local Q. This place makes some great BBQ! We got a sampler platter with ribs, pulled pork, brisket & sausage. All meats were excellent and served with 'sauce on the side', which I appreciated! I like to taste my meat, not the sauce. They had a regular BBQ sauce and a spicy, but I did not care for either. The cole slaw had a wonderful apple taste to it. The beans were delish. It fed a party of 4 and there was a ton of food leftover!! The staff was very nice too! Great food! great portions! Roadside trailer with picnic tables. Perfect. Very solid ribs. They must steam or boil them a bit before they smoke em because they fall off the bone without any pull. They're served dry with sauce on the side. The sauce is unlike any I've had before: great heat and sweetness with a bit of chunk texture. Reminded me of sriracha a little. Unique, but I like it. We got the last brisket of the day. It was a tad too pot roasty -- overly moist without any smoke -- but was still pretty good. The greens were excellent. Flavorful liquor with pork chunks. Cole slaw was also excellent. Creamy with the right balance of sweet and sour. Baked beans were solid, yet unremarkable. We'd definitely come back if we make it back down here. DO NOT PASS THIS PLACE UP. I found this listing for The Rib Cage doing random searches for casual restaurants in the Hot Springs, Arkansas area. The prerequisites were someplace that had low-carb options, and would allow a tiny dog in a bag to sit there while I ate (aka "outdoor seating"). Gold star for both. This is definitely one of those blink-and-you'll-miss-it type of establishments. While driving by I totally missed it, and had to call them for directions. They said that they were indeed at 5429 Central Ave., but they are set back further from the road and between Bubba's Catfish and Crazy Samurai. I turned the car around and headed back. It is set back in an unpaved gravel parking area. The Rib Cage is an Arkansas-red food truck with a smoker on one end of it with a wood awning topped with a corrugated metal roof in front. The seating area consists of three round tables with four chairs at each table, and one picnic bench that looks like it with seat about 6 people. I can see how people might pass this place up easily. Do not judge this book by its cover. As shown in the pictures, I ordered a full rack of ribs, half a pound of pulled pork, and have a pound of sliced beef brisket. The food came out quickly and hot. I was given half pint containers of mild sauce and spicy sauce. A lot of sauce. I have to say, this was some seriously delicious stuff. All the meats were juicy, and very flavorful. Thumbs up on the spicy sauce that had a really nice kick to it and added nicely to the meats. This was some excellent barbecue. No sense go to a restaurant and pay a zillion dollars for ambience if you're just looking for good food. Next time I'm in the area, I'll definitely be back. read more

I ordered a 3 meat plate with slaw. Order process was fast and simple and the food was ready quickly. Pulled pork, ribs and sausage. Pulled BBQ was flavorful and not dried out. Pulled pork sandwich!!! Need I say more? Don't be afraid of the cole slaw. Their version adds to the sandwich (unlike some others I've had). For those visiting from outside the US, we know this is a trailer in a parking lot (not a food truck). This is not common everywhere in the states, but it is here. You will love this taste of America and tell your friends about it for the rest of your life. These folks love what they do and it sure tastes like it. Stopped in for lunch today to take back to our RV, my wife got the ribs and brisket plate with greens and slaw. I asked about getting a sausage and brisket plate that was not on the menu and was told yes for $1 more, no problem. I got the bodacious beans and mustard potato salad with mine. When we got home my plate had ribs and brisket, no sausage. The good news is my wife gets extra ribs, bad news no sausage for me. My wife said the ribs were good but we both agreed the brisket was a little dry, we should have asked for a more fatty cut of that. The lady who helped us very friendly. She gave us two ribs to try. The ribs were tasty. We bought two pull pork sandwiches. These are not normal sandwiches. They were huge and tasty. This was my first time trying The Rib Cage BBQ.. it was ABSOLUTELY DELICIOUS! Such a generous portion. The pulled pork was very tender and the buns were nice and big. The bqq sauce was really good especially the spicy it had a nice kick. The Cole slaw was very sweet, I wasn't sure if I liked it but I think I did because I ate a lot of it lol. Fantastic BBQ, with the best sauce in the state (get it spicy, it's the real "Sweet Heat" with great sweet&spicy flavor without being too hot). The prices are right, the cream pie is good, the beans are top-notch delicious, and the sandwiches are HUGE.
