We needed a quick bite before heading to Costco to avoid buying too much stuff - if you ever been hungry while shopping, you know what I mean. I headed over to the Costco Food Trucks and found Tabay's Mindful Kitchen. I was greeted by a friendly woman who offered to look at a full menu since the truck only shows a few options on the side of it. The women working there told me they've just started at that location 6 weeks prior. Also that the truck is her son's who is only 19yo! To say I was impressed was an understatement. He apparently followed his mom into the culinary field. I can tell talent by what I ate since it was all YUM! I ordered the Persian wrap which is grilled kabobs, pickles, shredded lettuce, diced onion & tomatoes, some sort of sumac sauce in a tortilla. I also ordered the lavender lemonade with a mix of watermelon & pineapple juice at the suggestion of the women - it was so refreshing and light. After ordering, she offered to bring it to me at the Costco Food Truck sitting area and I was munching away after about 10 minutes. I would love to try some of there other options before I leave Maui and would definitely recommend to try them out if in the area. read more

We drove up from San Diego to San Clemente for my daughter's softball tournament. This truck was the first thing to greet us, and the smell coming out of it was phenomenal. Had much the same effect as the popcorn smell funneled through Disneyland. My wife and daughter got the tacos, and loved them, and I got the Persian fries. You can see how I felt about them with my photo. Super nice people, super cool story about a hard-working young man and his family. Attending a swim is never fun as you're usually stuck there for hours due to limited parking. Luckily, Tabay's Mindful Kitchen was hired to provide food service at Mission Viejo. The cashier made a few recommendations and I went with the Buffalo Chicken wrap and a side of curly fries. Let's just say the wrap is by far better than most sit down restaurant dishes specially with the vegan mayonnaise sauce. When our plane landed in Kahului for our first ever trip to Maui, my husband and I knew our first stop would be lunch. But Tabay's Mindful Kitchen food truck is not just convenient to the airport -- it's seriously awesome food! We both ordered the no-fish filet sandwiches, and got some chik'n nuggets to share with the house-made hunny mustard. The sandwich was so satisfying and flavorful, a great combination of textures from the soft bun, the crispy "fish" filet, and the plentiful tartar sauce. The nuggets were crunchy on the outside and moist on the inside, perfect on their own -- but dipped in the hunny mustard, next level! Our visit was made even better when we were personally greeted by Tabay himself with that big smile and great vibe. The only bad thing about Tabay's Mindful Kitchen is that they're not in Los Angeles so I can go there all the time -- guess I'll have to return to Maui soon so I can dig into more of their expansive menu! read more

This was a top tier food truck! By the time I was able to make it over there during the event, a lot of items were sold out so I was forced to try something new. I was hesitant, because I decided on the Persian burger which is not red meat, but went in with an open mind and gave it a shot. I was definitely not disappointed, and the Persian burger was delicious! I did add a pineapple (because I originally wanted the Maui burger) and it completely satisfied all of my tastebuds. Every single person working there was so nice, and had the best smiles I have seen in a long time-- they were genuinely happy. Most food trucks I have been to, they seem irritated, but not here at all which made paying a little more not that frustrating. The food truck was in immaculate condition and had clear signage to make selections. To address the 'ambiance' I suppose I will say it was pleasant. The event was at a clean and safe location, and this truck in particular represented themselves and the event well. If I see this truck again, I will absolutely be open to purchasing from them with no hesitation.
