Fish Cheeks was founded in 2016 by Thai immigrants--brothers Chef Ohm and Chat Suansilphong, along with Jenn Saesue and Pranwalai Kittirattanawiwat. The restaurant was born from their frustration with the homogenized "one-page" menus that dominated American Thai dining, which often centered on sweeter, standardized dishes such as Pad Thai and Massaman curry. Even the name reflects the restaurant's philosophy. The fish cheek is considered one of the most tender, flavorful, and prized parts of the fish in many Asian culinary traditions.
