Noodles so good that I forgot to take a picture of the food!! This stand is in the Chelsea Market and had a line every time I walked by (on a weekday!!). They seem to be known for their hand-pulled noodles and spicy flavors. I did see chefs making noodles when I went. We ordered: -Cleaved cucumbers (5/10- these were good but average) -Fried sticky eggplant (8/10- these were fried but you could still taste the flavors and was a good size) -Very spicy pork dan dan (8/10- delicious but more reliant on the sichaun spice over flavors; not too spicy if you are used to it but can pack a punch if you aren't a spicy food eater; the noodles were great). This was actually my favorite meal in the market and I want to try their other noodles next time I come back to NY.
Love this place and go here every time I'm in Chelsea Market! The service is quick, price is decent, and their dishes are pretty simple. There was one time I got the dry spicy beef noodles and the beef came kind of uncooked. We sent it back and they were able to quickly remake it for us. Hasn't ever happened again though. Not too much seating available here, but if you walk around the market, there are other places you could probably find seats.
Beef is tender and thickly sliced. Very generous quantity in a bowl. Soup is full of flavors. I'm not a big fan of knife cut long noodles. It is too wide and thick for my liking - so nothing against this place. It's just my preference.

It's one of the larger stalls in the market and has some seating, but not enough, and the market seating is very limited as well. I ordered the hibiscus lemonade and the very spicy Dan Dan Mian. I loved watching the staff prepare the noodles while waiting. My bowl was huge and absolutely delicious. It was very spicy as promised, but not too spicy that it was rendered not enjoyable. I looked at other orders and everything looked delicious, leading to only semi-regret of my choice. My lemonade was very good. I'm very much looking forward to returning.
very unassuming, but the noodles are amazing. The service is average since it's just a counter. There's not a lot of seating areas because of how crowded it is so you just have to find your way to a table.

Very Fresh Noodles specializes in biangbiang (hand pulled) noodles. We got the Tingly & Spicy Cumin Lamb (Dry). It featured their signature biangbiang noodles seasoned with cumin, peppercorn, and their housemade chili oil. It's served with celery, cabbage, and tonsss of cilantro. SO GOOD! It was slurped up in minutes. The spice is mala spice, so it's a little numbing, tingly, and hurts just a bit in the best way. It definitely grows, so have a beverage on hand. The chewy noodles, spicy seasonings, and tender lamb made this dish unforgettable. Pro-tip: You can get it either dry (tossed in the sauce) or soupy!
Considering this place is inside of a food hall, I wasn't sure how it would taste but I was happily surprised!! The noodles are freshly hand made and the beef was super tender. The broth was too salty for me but I just didn't drink it and it made all the other ingredients taste good. Pretty good portion for the price too. My bf got the lamb version and they didn't give him much lamb so I'd go with the beef. If you're looking for a quick tasty bite this place is it!

It's good for tourists in New York, but if I lived in the area I wouldn't revisit. Maybe I just got a bad batch :(
Visually beautiful but lacking my flavor. Plenty hot temperature wise, but it lacked that spice. Al's not enough noodles! Those were delicious. Also hated the plastic spoon they gave us. Super splashy dish and the little tools they give you somehow were so difficult for me.

I had been craving spicy, hand-pulled noodles, so I got the dry tingly lamb noodles (dry = no broth). My order was prepared in under ten minutes, and I was even able to find a seat at the bar to enjoy my noodles. Each plate of noodles is made-to-order, and I enjoyed watching the cooks hand-stretch the noodles behind the bar. The tingly cumin noodles were just what I needed after a long day of travel. The lamb was tender and flavorful, and the sauce was pleasantly tingly without being too spicy. The noodles were the perfect texture and held their own against the sauce and pieces of lamb. Since the restaurant was closing for the night, the cooks even offered me extra chicken wings, on the house! While I'm not usually a huge fan of wings, these were the exception. Fresh out of the fryer, the wings were perfectly crispy on the outside, juicy on the inside, and coated with a piquant spice blend that tasted like 5-spice. The staff was very friendly, and the highlights of my evening were experiencing the warm hospitality and getting to watch the cooks work their magic while I slurped my noodles.

Delicious noodles spot in the heart of Chelsea market. They have bar seating, and really fun, red lighting ambiance. The very spicy dan dan pork noodles were indeed very spicy! Even for asian standards. But still very delicious, recommend pairing it with one of their boba teas for a balanced experience. The service is good, I got my food in 10 mins even though there were a lot of people. The price was moderate, $28 for a drink and a main (including tax and tip) I would recommend trying this place! read more
Very fresh noodle- Chelsea market NYC gets five stars. Ordered the mei Lai wa Taiwanese beef noodle soup. The noodles were delicious and the perfect texture. The meat was tender. The soup was delicious with a mild spice that was somewhat leaning towards a schesuan style spice. Hearty broth. Delicious. Very spicy pork dan dan mien also so delicious the best flavoring and sauce topped with scallions. Ordered the tofu drink which was okay. With tapioca and tofu chunks with somewhat of a horchata/soy milk base It was takeout style with seating options in front of there food stand where you could watch them pull the noodles in front of you. read more

Personally, this meal was not my cup of tea. I thought the noodles were quite expensive for the size of bowl you get. Having gotten the Taiwanese beef soup noodles, I didn't feel like it tasted authentic, and the quality of the beef did not seem great - it was tough and chewy. Maybe I should have gone with the cumin noodles instead. I did enjoy the lychee lemonade, which was refreshing! read more

I was desperately craving that hand-pulled noodle texture and this place nailed it. Came on a Saturday night. Maybe waited 10-15 total from standing in line to receiving food. The Spicy Pork Dan Dan was spicy indeed--I was so impressed because most places usually downplay their spicy dishes. Be warned! You gotta seriously love spice to take it on. Authentic noodle joint tucked away in Chelsea market! We strolled all around the market and decided to eat here because it had a long line (so we knew it would be good)! Don't worry, the line moves fast. Tried the beef noodles which were the perfect texture of thick chewy noodles with flavorful slices of beef. I felt it was a bit oily/heavy though, so knocking off one star. The only tricky part was seating - there are some countertop stools and a few high tables, but you may need to wait to grab a chair if they're busy. read more

The workers and staff were very nice, and they were funny as well and cracked a few jokes while we visited. Getting to see the noodles being made and pulled by hand added to the experience! The noodles were in fact very fresh. The beef noodle soup was absolute perfection, the noodles were long, thick, and had an amazing texture. The seasonings and flavors in the broth were delicious, with a perfect balance of spice and cilantro. The dan dan mian had amazing flavor and a perfect spice level. The beans and cucumber were the perfect complimenting ingredients to the dish, however the overall oiliness did dry out the mouth a bit, and sometimes took away from the flavor a tad. The vibe of the place was very modern and hype, it kind of had a street-food stall feel, but in a market type of way. The menu was very simple and easy to understand, and the whole ambiance of the place felt very fresh and cool. Would definitely recommend stopping by if you're in Chelsea! read more
This is my hubby's favorite homemade noodle shop! I went to pick up and brought home the lamb cumin dry bowl and hubby went crazy stating these were the best noodles he's ever had! I had a small taste and really liked the flavor too. But it is spicy! Still too spicy for me. The ordering process was quick. No line! I beat the afternoon rush. Will absolutely get again. read more

Visited in April of 2026 and haven't been able to forget this place. It was soooooooooo delicious and I have been on a mission to find a place in So Cal that matches both quality and flavor but we have been unsuccessful! Some have come close but have fallen short compared to Very Fresh Noodles. Promise you will not be disappointed! I got the spicy beef noodle and my husband got the Dan Dan Noodles. Both were FIRE! big fan of this spot in chelsea market! it's fun to see them handful the noodles in front of you. the broth is also very flavorful and they don't shy away from fresh herbs like cilantro that lighten up and brighten the soup noodles. We personally enjoyed the beef noodle soup one much more than the lamb! it will definitely warm you up on a cold day the food comes out very quickly and is very much a takeout - small counter type spot. read more

What a pleasure. Ambiance: Located in the bustling Chelsea Market. You wait in a long line, hiphop blasting, you order and, if you're lucky, sit on a stool and watch blobs of dough be rolled, stretched, pulled, slammed, and turned into magically bouncy, delicious noodles. Food: - Spicy Cumin Lamb (Dry): Absolute banger. Spicy, umami, delicate, but punchy. Generous portion. This is the star. - Taiwanese Beef Noodle Soup: My gf liked it, but I thought the broth was too rich and one dimensional. I prefer mine more balanced. These noodles are amazing! They are hand pulled, soft, and I love the thickness. The cumin lamb pieces were very tender and cooked well. The flavor was amazing, I love the peppercorns, and the portion was perfect for one. Ordering is easy, and since it's inside Chelsea market there was a lot of seating available. read more

I couldn't decide between the dry and soup version. After changing my mind a few times while in line, I decided on the dry. The line was long - which to me is always a good sign - it went by quickly. While watching the preparation of fresh noodles, you can view how the food is prepared with care and efficiency! If you love spicy and the flavor of cumin, order this signature dish. Really solid stall with great fresh noodles and amazing balanced asian sichuan flavors. Ive been here a few times and have remembered enjoying it each time. The stall is pretty small and theres usually a line but you usually are able to get some seating at the booth or table to eat when you get your order. I ordered the lamb dry noodles and the beef noodle soup which were both great. You can watch the noodles being made as you wait. Noodles were cooked perfectly and seasoning was great. If youre in the Chelsea market area this is a great place to stop by for a quick bite to eat. read more

Ambiance is several restaurants with customers fighting for a place to sit and not get mixed up in-between restaurant lines. The service was great as stand-in-line to order can be, so long as you are ready to order by the time it's your turn; which we were ready because we grabbed menus as standing in line. Spicy cumin lamb (dry) - definitely zingy. I was sweating! Taiwanese beef (soup) - beef was really soft; not spicy. It was like eating birria with noodles. This was my first time at a 'noodle' place. The noodles were fresh. Yet, the noodles were sooo long it became more of a chore to chop them with chopsticks to eat them. Next time I'll pass because it's not my thing, yet I appreciated the experience and food was good. read more

Tried the hand-pulled spicy vegan noodles, and they were solid--but not life-changing. The texture of the noodles was great--chewy and satisfying, exactly what you'd expect from fresh hand-pulled noodles. Flavor-wise, it had a decent kick and the mock duck + shiitake mushrooms added a nice umami element, but it lacked that extra depth I was hoping for. It started strong but didn't quite leave a lasting impression. Also got it dry, which made the spice more concentrated--good if you like a punch, but it bordered on a bit one-note. The Black Milk Bubble Tea helped mellow it out though--creamy, sweet, and a nice pairing. Overall: 4.3/5 -- good for a casual meal, but probably wouldn't crave it again. read more
I get the Taiwanese noodle soup when I just need something delicious. Sometimes I need something I know I love- and this is that. I usually get the spicy, but today I was feeling mild and it was just as yummy. The meat in it is delicious and the broth is to die for. Food: They definitely live up to their "Very Fresh" name. I ordered the Dry Spicy Cumin Lamb noodles. With such a satisfying chew, you can immediately tell how fresh and springy the hand-pulled noodles are. The deeply aromatic cumin-based sauce with the bright cilantro crunch and light numbing spice brought so much impactful flavor in each slurp. The lamb was plentiful throughout like little landmines of meaty deliciousness. Such a simple yet well executed dish. Service: There was a long-ish line about 15 people deep but it moved quite fast and orders were flying out like rapid fire. Took less than 5 min once I ordered to get my meal. Minimal interaction overall but everyone in the kitchen was working hard and dedicated to their craft Ambiance: Nestled in the middle of Chelsea Market helps a lot but this stall has great Chinese-inspired decor. I really like the large, welcoming "Hello & Thank You" neon sign, various plants, and shelves of books making it all have an inviting, homey vibe. I also really enjoy being able to peer right into the kitchen where they hand pull the fresh noodles. read more

Is there any off street parking?
Street parking in that area is very challenging, but there is a garage parking a couple minutes walk from the market at the 422 W 15th St Garage.
Is there any peanut free options?
Yes! My son is allergic to peanuts and we eat here safely. He is not allergic to sesame seeds but there is a lot of sesame, so head up depending on how far your nut allergy extends.
To-go meal kits available? i see cooking instructions on the website but not a kit item on the menu.
Yes, they’re available at the shop upon request. It’s not something we like to advertise as we want our customers to have our noodles freshly made at the shop!

Are any of your noodle dishes available with NO chilies, chili oil, black pepper, or Szechuan pepper? I am not allergic to these spices so I will not have any extreme reaction but have a sensitivity due to an intestinal disorder and cannot eat them.
I SERIOUSLY DOUBT IT. Their soup broth is all premade in advance and they just pour it on your noodles... sorry...
Excited to try but I do not see any options with chicken. Can I substitue Chicken for pork or any other meat?
Yes. They have vegetarian option, one of those meatless meat. Very good.
Does this place have a sit in area or just to go?
There are random seats through out the market area where you can sit, but mainly to go.
How spicy are the soups? I want to take my son but he's 9 and not much into spicy food.
I ordered the beef noodle soup spicy and it was quite mild. The other soups have cumin and I'm not a huge fan. I think you would be fine with a regular order of the beef and noodle soup.

No, they're not gluten free

There are some seats nearby about 20 feet by the booth. There's also a ramp to the main hall, where there are more general seats
