Noodles so good that I forgot to take a picture of the food!! This stand is in the Chelsea Market and had a line every time I walked by (on a weekday!!). They seem to be known for their hand-pulled noodles and spicy flavors. I did see chefs making noodles when I went. We ordered: -Cleaved cucumbers (5/10- these were good but average) -Fried sticky eggplant (8/10- these were fried but you could still taste the flavors and was a good size) -Very spicy pork dan dan (8/10- delicious but more reliant on the sichaun spice over flavors; not too spicy if you are used to it but can pack a punch if you aren't a spicy food eater; the noodles were great). This was actually my favorite meal in the market and I want to try their other noodles next time I come back to NY.

Love this place and go here every time I'm in Chelsea Market! The service is quick, price is decent, and their dishes are pretty simple. There was one time I got the dry spicy beef noodles and the beef came kind of uncooked. We sent it back and they were able to quickly remake it for us. Hasn't ever happened again though. Not too much seating available here, but if you walk around the market, there are other places you could probably find seats.

Beef is tender and thickly sliced. Very generous quantity in a bowl. Soup is full of flavors. I'm not a big fan of knife cut long noodles. It is too wide and thick for my liking - so nothing against this place. It's just my preference.

One of the main reasons I went to Chelsea Market was to try Very Fresh Noodles, which is very good. The line was long but moved very quickly and despite the number of orders, the wait for food was not super long. It's one of the larger stalls in the market and has some seating, but not enough, and the market seating is very limited as well. I ordered the hibiscus lemonade and the very spicy Dan Dan Mian. I loved watching the staff prepare the noodles while waiting. My bowl was huge and absolutely delicious. It was very spicy as promised, but not too spicy that it was rendered not enjoyable. I looked at other orders and everything looked delicious, leading to only semi-regret of my choice. My lemonade was very good. I'm very much looking forward to returning.

very unassuming, but the noodles are amazing. The service is average since it's just a counter. There's not a lot of seating areas because of how crowded it is so you just have to find your way to a table.

A Chelsea Market staple! I came to NYC in 2021 and tried this place for the first time all those years ago. I'm happy to report that it was even better than I remembered! Very Fresh Noodles specializes in biangbiang (hand pulled) noodles. We got the Tingly & Spicy Cumin Lamb (Dry). It featured their signature biangbiang noodles seasoned with cumin, peppercorn, and their housemade chili oil. It's served with celery, cabbage, and tonsss of cilantro. SO GOOD! It was slurped up in minutes. The spice is mala spice, so it's a little numbing, tingly, and hurts just a bit in the best way. It definitely grows, so have a beverage on hand. The chewy noodles, spicy seasonings, and tender lamb made this dish unforgettable. Pro-tip: You can get it either dry (tossed in the sauce) or soupy!

Considering this place is inside of a food hall, I wasn't sure how it would taste but I was happily surprised!! The noodles are freshly hand made and the beef was super tender. The broth was too salty for me but I just didn't drink it and it made all the other ingredients taste good. Pretty good portion for the price too. My bf got the lamb version and they didn't give him much lamb so I'd go with the beef. If you're looking for a quick tasty bite this place is it!

The wait time was pretty fast so no complaints there, it was also nice to watch them make the noodles through the window. There's limited seating though so we got our food and sat at the general seating that the market had. As for the food, I heard raving reviews about this specific noodle place and was really excited to try it out! The noodles themselves were a nice texture and chewy. I was a bit disappointed overall because it was sooo salty. I usually like salty food, but the beef was way over salty to the point where I couldn't finish the dish. It's good for tourists in New York, but if I lived in the area I wouldn't revisit. Maybe I just got a bad batch :(

Visually beautiful but lacking my flavor. Plenty hot temperature wise, but it lacked that spice. Al's not enough noodles! Those were delicious. Also hated the plastic spoon they gave us. Super splashy dish and the little tools they give you somehow were so difficult for me.

Some of the best noodles I've ever eaten! And probably the best bubble tea I've ever had, too! Very fast service. Cool ambiance.

All the yes for Very Fresh Noodles. Arguably, the best noodles in Chelsea. These people ways have a line and it's well worth it! These people taste of spice level of the noodles is just perfect. I also appreciate the thoughtfully created vegan options which is sometimes hard to find in noodle houses. I'll say the only thing that did not blow my mind was the tofu pudding drink. Just wasn't for me with the heavy tofu consistency. A great spot nestled in Chelsea market it's a great place for a group of friends to come and hang out even when not everyone can agree on where to eat.

Upon arriving in NYC, Very Fresh Noodles was the first stop on my agenda. I made it to Chelsea Market just before closing on a Sunday evening (6 PM); while there were about half a dozen customers in line ahead of me, the line moved quickly, and I knew exactly what I wanted to order. I had been craving spicy, hand-pulled noodles, so I got the dry tingly lamb noodles (dry = no broth). My order was prepared in under ten minutes, and I was even able to find a seat at the bar to enjoy my noodles. Each plate of noodles is made-to-order, and I enjoyed watching the cooks hand-stretch the noodles behind the bar. The tingly cumin noodles were just what I needed after a long day of travel. The lamb was tender and flavorful, and the sauce was pleasantly tingly without being too spicy. The noodles were the perfect texture and held their own against the sauce and pieces of lamb. Since the restaurant was closing for the night, the cooks even offered me extra chicken wings, on the house! While I'm not usually a huge fan of wings, these were the exception. Fresh out of the fryer, the wings were perfectly crispy on the outside, juicy on the inside, and coated with a piquant spice blend that tasted like 5-spice. The staff was very friendly, and the highlights of my evening were experiencing the warm hospitality and getting to watch the cooks work their magic while I slurped my noodles.

This was our second visit with family, and it's clear this spot consistently delivers excellent food. Tucked into a small nook inside Chelsea Market, this vendor always seems to draw a line before opening -- especially compared to many other stalls in the market -- which speaks to how many regulars it has. Watching the chef knead and hand-pull the noodles right in front of you is both impressive and genuinely fun, adding to the overall experience. We ordered the tingly and spicy noodles with beef, opting for the soup version because the broth is so flavorful (though you can also order it "dry" if you want to focus purely on the noodles). The broth is consistently savory with a deep umami richness, and the noodles are delicate yet pleasantly chewy -- soft, fresh, and incredibly satisfying. Combined, it's the ultimate comfort food, especially on a cold day. Portions are generous, particularly with the beef, and service moves fairly quickly given the popularity. This easily ranks as one of the best dishes we've had at Chelsea Market, and it's a place we'll happily return to again.

Ask the Community - Very Fresh Noodles

Is the soup/broth they use made from vegetarian ingredients or do they use meat based broth?

They use both beef based broth for regular items and also vegan mushroom broth for vegan dishes.…

Is there any off street parking?

Street parking in that area is very challenging, but there is a garage parking a couple minutes walk from the market at the 422 W 15th St Garage.

Is there any peanut free options?

Yes! My son is allergic to peanuts and we eat here safely. He is not allergic to sesame seeds but there is a lot of sesame, so head up depending on how far your nut allergy extends.

To-go meal kits available? i see cooking instructions on the website but not a kit item on the menu.

Yes, they’re available at the shop upon request. It’s not something we like to advertise as we want our customers to have our noodles freshly made at the shop!

    Are they open Christmas Eve?

Yes! We are here now, it's open, and today is Christmas Eve

    Does this place offer delivery?

ChowNow deliveries have stopped for now.

Honest opinion, how are the vegan duck noodles? I'm not seeing a chicken option here, so that might be my only option and want to make sure it's just as yummy as the rest!

Excellent; we don’t sell anything that we can’t stand behind. If you are going with vegan, we are more than comfortable recommending our Vegan Noodles w/ Mock Duck served “Dry”.

Do you use customers' reusable containers for takeout?

Paul, No, that’s unsanitary. For those dining with us (outdoors), we have disposable paper and pulp…

Where the heck is this now? It's not where I remember it and I can't find it :(

They expanded and moved closer to 9th Avenue, south of the chocolate stand across from the Cappone's Italian sandwich shop.

Are any of your noodle dishes available with NO chilies, chili oil, black pepper, or Szechuan pepper? I am not allergic to these spices so I will not have any extreme reaction but have a sensitivity due to an intestinal disorder and cannot eat them.

I SERIOUSLY DOUBT IT. Their soup broth is all premade in advance and they just pour it on your noodles... sorry...

Excited to try but I do not see any options with chicken. Can I substitue Chicken for pork or any other meat?

Yes. They have vegetarian option, one of those meatless meat. Very good.

Does this place have a sit in area or just to go?

There are random seats through out the market area where you can sit, but mainly to go.

How spicy are the soups? I want to take my son but he's 9 and not much into spicy food.

I ordered the beef noodle soup spicy and it was quite mild. The other soups have cumin and I'm not a huge fan. I think you would be fine with a regular order of the beef and noodle soup.

You answer kind of confused me, so are the noodles gluten free?

    No, they're not gluten free

    I am handicap...are seating by?

There are some seats nearby about 20 feet by the booth. There's also a ramp to the main hall, where there are more general seats

Do you serve with peanuts? I have a friend who's allergic.

    No peanuts in anything

Are the noodles made with rice? Is it safe for gluten free folks?

    Nope

I hope this plan works out because Four Four South Village is forking amazing. More so, I want a Four Four South Village in my home town. I want a Four Four South Village in my home town right now! * * * Main Point: Four Four South Village is a Taiwanese noodle shop. They have dry noodles, but wet is totally what you want to do. They have one of the most amazing stocks I have ever had in a bowl of Asian noodles. I have never been a super-fussy-about-the-stock pho eater. But Four Four South Village convinced me there is a higher better way. For those who want to climb peaks looking for the ultimate stock at the temple at the top of the mountain, This is a noble calling and the rewards for pure-minded search will be great. Four Four South Village is a serious candidate to be the temple on the highest mountain. * * * Footnotes: 1) Tomatoes are a great thing to put in your soup. 2) Get tripe and tendon to put in your soup. Tendon is particularly amazing. The actual beef called beef is actually on the tough side. It is the only downside to this beautiful place. 3) Spice congregates at the bottom of the bowl. Be aware. You are minding your own business and then you take a spoonful drawn heavily from the bottom of the bowl. That will wake you up. A lot. 4) Side dishes rule here. Get more than just soup. They have an amazing pressed tofu buried in a mound of fresh cilantro. Usually I loathe, execrate, despise and abhor cilantro. I once wrote in another review that I have a court order out on cilantro. Cilantro has to stay at least 200 yards away from my house. Cilantro can only visit my children in the presence of a social worker. I will make an exception to the court order for the pressed tofu and cilantro at Four Four South Village. That dish was so good Cilantro and I may decide to go into couples counseling to see if we can make our relationship work. * * * All in all, Four Four South Village is absolutely amazing. I went to this casual Taiwanese spot a while back with a group. The food here was overall tasty…read morewith the best thing being definitely the spicy beef & tendon noodle soup along with the braised beef with noodles which makes sense as it's a Taiwanese beef noodle spot. The rest of the dishes were still pretty tasty with a notable unique version of dan dan noodles. I didn't have a drink and I don't think anyone else did. Service was fine and the place is very casual. On a side note, I got a Tea Egg and I wouldn't really recommend it much as it lacked the flavor of most tea eggs. The first thing that arrived was one of the appetizers the Assorted Cold Dish with jade cucumber, black fungus in vinegar sauce, and spiced edamame. The portion was fine and they had a mixture of crunch and textures. It would be good to share though my preference of the mixtures was the Assorted Luwei with tofu, kelp knots, and boiled eggs. Referring to dishes braised in soy sauce, I particularly liked the kelp due to it's crunchy yet soft texture with the strips of tofu also being very tasty while the eggs as per the tea egg prior were alright. We also got as an appetizer the Spicy Braised Pig's Ear. A bunch of the other people at the table didn't really like this but I liked the texture mostly because I'm a fan of tendon and cartilage and this has that crunchy but soft texture almost like a crunchy jello. This spice was on the lighter end but it still had a little bit of heat. There was also the Seasonal Greens which were pretty tasty though not as necessary as most of the greens were included in the other dishes such as the pork chops and soups. There was also the Popcorn Chicken which had the usual white pepper and slight sweetness I associate with this version and it was solid and warm (though I wouldn't recommend it to go.) Overall, the appetizers were good but they aren't the star of this place. Best of the main dishes was as noted the Spicy Beef & Tendon Noodle Soup. Both the beef and the tendon in there were super tender. The noodles had the QQ texture I'd expect from a good Taiwanese spot. I have had richer beef noodle soups before but it was still well flavored and the bit of spice in there was a nice extra kick. A bit spicier by comparison was the Dan Dan Noodles which I was a bit surprised to see on the menu. They were prepared differently from the dan dan mein from other spots; more like a soupier noodle. By comparison to the beef/tendon noodle soup, it was more Sichuan peppercorn and spicier by comparison. Both were tasty with a slight preference to the former due to the different types of beef and I liked tasting the soup a bit better. We also got the Braised Beef With Noodles which is offered over rice or with noodles. Due to the great noodle texture, we got it over noodles of course. The beef again was tasty though I preferred it as a noodle soup. It was still good and I would order it on a different day. Our only non noodle dish was the Fried Pork Chops With Rice which was fine. The pork chops have the usual white pepper and light sweetness you find in this style though it was a bit chewy. Outside of the pork and rice, there was also some cucumbers and it came with half a boiled egg. This was as expected alright but I would recommend getting noodles as it's definitely their specialty.
