Then when we went to pick up the food, we had to go to the salsa bar to fill all of the cups up on our own. I would love if they could have some pre-filled for to-go orders. Despite all that, the food was fresh and delicious with generous portions. Our group got tacos, bowls, and even the loaded fries. We were all extremely satisfied and the food was ready quickly. I also appreciate that when we ordered one of the bowls for our vegan counterpart that had no meat on it, they waited to confirm with us that we did not want any meat. It is a cool concept and they brand themselves as a restaurant co-op. I have tried a couple, but the one I order most frequently is Los Sabrosos Cocina Mexicana. They aren't fancy, but if you got the late night munchies for some greasy Mexican they come in clutch. Their quesadillas and birrias are pretty bomb and they have a really good hot salsa that brings the heat. I've only recently been made aware that they offer a beef birria pizza and now I am very intrigued. I will need to try soon and report back. If you're out late one night and looking for a quick delivery check them out!

It appears to be a converted fast-food building with its own parking lot, outdoor patio, and a casual, family-friendly atmosphere. Despite the Charlotte heat pushing triple digits, the dining room was comfortable and bustling. Service was friendly from the start, and I was quickly seated with ice water, lemon, fresh chips, and three house-made salsas. The chips were excellent--fresh, crisp, and clearly made in-house. The standout salsa for me was the red salsa, which packed plenty of heat and flavor. There was also a tomatillo salsa and a creamy green avocado-style salsa. Both were good, although the tomatillo leaned a little too tart for my taste. The menu is extensive, with everything from seafood dishes and quesadillas to tacos and larger combination plates. As someone who loves sampling a little of everything, I was hoping for more traditional combo options, but this menu takes a different approach. I ordered the crispy taco plate with rice and beans.
