Grilled filet mignon with crisp fries and garlic mushrooms
    Jay B.

Despite being located within a 4 star worthy hotel, this Bistro is not without needing some improvement. Regardless, it still stands a solid fall back eatery if you happen to check in late like I did and need a quick, scrumptious bite to eat. Basically, the food was fine, but the service was....eh....bordering on unprofessional at points. Allow me to carefully explain.. See, the whole thing (which is set up more like a bar) was being managed by a guy who looked to be in his mid to late 70s. Ultimately, he looked like he just wanted to retire and all those young whipper-snappers in the back were driving him nuts. Especially this one chic who was just trying to restock the beer fridge and at one point, I hear him go: "If you need to vacuum, you can just go home". I have no idea what that was all about. I just know NO part of that conversation should have been taking place in front of customers, regardless if I was the only one within earshot due to being the one guy sitting at the bar. I also noticed other anomalies, such as the ostensible mess at the bar which remained literally the entire time I was dining there. Not that I personally gave a crap. It just looks unprofessional and I've never seen anything like that in a hotel such as this. I'm just glad I get to rate this place separately, because the hotel overall was great (which will be covered in its own standalone review). The bulk of the 3 star rating comes mainly from the decorum of the dining area, the fact that it's located inside the hotel lobby, and the food was half way decent. Half way. Sooo.. I got the filet mignon with fries because...carpe diem, I guess. I was originally gonna order the cheddar burger but...I dunno. I was feeling especially eccentric tonight. Who knows? Well, the filet was juicy and cooked to a perfect medium as requested. Unfortunately, it lacked seasoning, despite allegedly having garlic sauteed mushrooms on top (which were microscopic as hell, btw). Yeah...I felt like someone tried to put out a forest fire on my tongue with a screwdriver; because I could barely taste anything. I think I poured salt on my steak like, 3 times. But that's not really even the terrible part. Ya know what the terrible part was? The wait. The wait time for my food was ridiculous...even for a place as fancy as this. It took an hour to get my steak. That would have been all well and good if it was...ya know....GREAT! Alas, this is yet another phoned in attempt at serving contemporary food as fine dining when it's more along the levels of Applebee's. In other words, it's not really *bad*, per se. The whole thing just comes across as harmlessly average and forgettable. Be that as it may, I gave them the benefit of the doubt and granted them 3 seventy-year-old bartenders begging for retirement out of 5; the extra point being for their association with the Marriott company. I mean, they DO try harder than most, anyway.

A good place to grab some appetizers and a drink. A bit late and decided to stay in the hotel. Conveniently located in the main lobby. Ordered fries and quesadillas with bacon. Enjoyed the red dipping for the fries- sweet and tangy. Satisfying meal and the server was attentive and friendly.

Not sure if you can make reservations, but the hubby and I walked-in without one. We chose to sit at the bar. I kid you not, the couple next to us ordered their food and it came out in less than 5 minutes. We were all impressed. The bar tender was our server, he made us delicious mimosas. They have an extensive drink list btw. If I was feeling extra fun, I would've ordered an espresso martini. Now to the main course, I opted for something different, "the K-Mack" which includes a Korean fried buttermilk chicken with a cabbage slaw and green onions. It was so good. My mouth is watering thinking about it again haha. Aside from our delicious brunch, the restaurant vibe screams Denver. Lots of decor, plants, art, different kind of seating. It's fun. It's welcoming. It's so Denver and I'm here for it.

I ordered the pink pony club drink from the specials menu & the ellsworth w/ a side of hash browns for my entree. The sandwich was as good as I remember, however I didn't care for the hash browns. I love that they offer sweet and savory biscuits options and if biscuits aren't your thing they have quite a few other options for food.

You can tell there's real attention to detail in every dish, and nothing felt overly complicated just for the sake of it. We shared the burger (honestly one of the best we've had), the panzanella salad, and deviled eggs - all impressive. Drinks were excellent - the mezcal negroni, stockyard pony, and house spritz. We ended with the pecan tart and espresso martini. It was just the two of us and we were stuffed when we left. They sat us in their outdoor space and it was so, so nice. We LOVED it. Definitely a place we'll keep coming back to.

Cons for this paragraph is the wait for the food is ridiculous. Why 45 min at least for any dishes. If you're ordering multiple. They're not coming out all at once. The appetizer orecchiette we got was tasty in regard to the texture. Nicely al dente. But it was extremely salted and extremely sour. Unsure of what flavor profile they want to have. Our server recommended the roasted chicken to be the most seasoned dish. I'm not sure whatever they marinated actually puncture the meat. It was cook well but virtually no flavor. Not any difference if you just boil chicken breast by itself. Everything was really pricey for no reason. Sure it was a good size? But if you compare it to restaurants located in downtown, a similar dish is at least 8-10$ cheaper. $14 for a basket of shoes string fries, $41 for roasted chicken and $43 for steak? On par with coors field at least. My assumption is that any new coming restaurants at the Stanley market is just a test run with a safety net to see if the restaurant actually performs well if it was a stand alone business.

Having lunch here for the first time in years (used to frequent the Iliff and Abilene location often) and I missed Ruby and the salad buffet. The entree's are a very good portion to make for two meals, especially if you add on the all-you-can-eat salad. The salad buffet was a popular choice during our visit and I was impressed with how tidy the staff kept it. The salad greens were crisp and fresh and the toppings plentiful. My fave being the jalapeño crisps. Lunch was really good too. While I was craving a burger, I ended up ordering the Hickory Bourbon BBQ Chicken. Healthier option and it was a good option at that. The Bourbon BBQ sauce is delish! Sweet and savory, I just had to ask for more. The only downside here is the condition of the dining room. Some of the chairs could use a little TLC and the walls within the booths could use a good wipe down. Ketchup burps happen!

Place was really clean, everyone helped out each other, you see the staff smiling and enjoying life together and I loved being apart of that energy. Thank you all. Definitely will come back and try the rack of ribs!

Reclaimed metal sheet walls, concrete floor, a nice looking bar and good 80s/90s music piping in. The menu offers many taco options, which you purchase a la carte. I took a risk and got the ahi tuna taco, and a steak fajita taco. Both were good - but I was most impressed with the Ahi. It was better than the sushi I have had at a sushi restaurant since moving here to CO. Nice Asian sauce with sesame seeds throughout. Super good. It's light, though. It is in a butter lettuce "taco shell", but honestly I think putting it in a true corn or flour tortilla just would not mesh well. The service was very very pleasant and attentive. We even had to move a couple times because our party number kept changing, and she was as pleasant as can be. I look forward to heading back and trying something else. Co-workers tell me you really can't have a bad taco there, and I think I might challenge that notion and find out for myself! Cheers!
