    Our first time into the brick was this afternoon, the service was fast and punctual, the food was phenomenal, the huckleberry burger was unlike anything I've had before, and the passion fruit panacotta was incredible. Will be back soon

The prices were very reasonable! Drafts were $7 and some cocktails were $11. The bartenders were super friendly and polite and talented! I really enjoyed watching them prepare five drinks at once without loosing a beat! The music was also great! They were rocking early 2000s jams. In full transparency it has been 2-3 years since my first and last visit to Water Witch. I noticed this in my drafts and thought I should complete my review. That said, I think I hyped this place up in my head too much before my visit because of the James Beard nod. So when it didn't quite hit the mark for me, I was disappointed. It's quite an intimate bar. By that I mean small space inside. The main bar has seating of course and there are a few seating areas directly behind the barstool area. There is a small walkway that separates the bar and the seating area. So the seating area is looking straight forward at the bartenders and the backs of people on barstools. I felt like the people behind me were staring into my soul lol, but that's a me problem ha. It's a modern design and beautifully decorated. I had two drinks. One from the menu and one that I told the bartender what I liked and disliked. He then made a drink based upon my taste. In my opinion it tasted similar to the one from the menu, which was disappointing because I was hoping for something different. There was one bartender that evening and one bar back, so even with the few people at the bar (I'd say 6-7 including me and a guest) and the 4 people seated behind us. It took some time to get his attention and order a drink. Which is part of the reason I only had two drinks. I would probably give this place another try since it's been some time since I've been there. As I always like to say. Stop in and judge for yourself.

The interior is gorgeous, parking is a breeze, and the service is genuinely exceptional. We went on a Saturday night and, surprisingly, were the only ones there for most of our visit. Aside from one other guest who left early, it felt like we had the whole place to ourselves. Instead of awkward, it made the night feel intimate and relaxed. We ended up chatting with both the bartender and the kitchen staff, who were warm, friendly, and great at what they do. The drinks were a standout. Creative, beautifully made, and delicious. The bartender even whipped up a few off‑menu cocktails for me, and the best of the night was their matcha martini, which he said he created himself. It was incredible. Even my partner, who normally avoids anything matcha, enjoyed it. We weren't planning to eat, but of course we "sport ate" anyway. The deviled eggs were great, and the small Pinsa was fantastic -- especially with the adorable little bowl of hot honey and its tiny honey dispenser (whatever that thing is called). We intended to take most of it home... and then proceeded to eat the entire thing. Overall, we had a wonderful time. Citizens is beautiful, welcoming, and serving food and drinks that deserve a much bigger crowd. Therefore, the note on their website about serving pho from 6 or 6:30 PM until they run out is only accurate one out of seven days a week. Secondly, it's a bar, which in Utah means that no one under 21 is allowed for any reason. Not knowing either one of these things until I arrived here, I brought my ailing 16-year-old daughter here for pho at 9 o'clock at night on a cross country trip, only to be turned away at the door. I wouldn't be posting this review if that was the end of the story, but while we stood outside, trying to figure out what we were going to eat and if we could find soup somewhere, another party of four walked in to get pho and were told in an "you should know this" tone that it's only served on Sunday nights. I hope the food is good. But people, get your VERY basic act together on the information and customer service front.
