Sam Introduced us to the new steaks and where they were sourced and why. Also informed us that they now have two sides included so you are not required to get family shared sides with the steaks. Sam recommended the NY strip, which I had and it was cooked to a perfect medium rare. Got the au pouivre sauce on the side, absolutely delish. My wife got the filet and the bleu cheese fondutta sauce, she was very happy. Wine 9/10 Amazing list both by the bottle and the glass. I had the chateneuf du pape. This was a top 3 wine list on the cape great offerings by the glass and plenty of unique high end stuff to get as crazy as you want. Cocktail 6.5/10 Old fashioned missed the orange peel for rimming the garnish, aside from the big cube it didn't present as a craft cocktail Oysters 8/10 (Chatham oysters are Chatham oysters) I'm more of a Duxbury or Welfleet but I get Chatham Cut serving Chatham oysters. French onion soup 5/10 Probably the one recipe miss of the night. It is made very thick, almost stew like. A very good meal in a fun environment with great service. You first think it's an old school steakhouse but you get a different vibe on entering and talking with the staff. We (four of us) went to the Chatham Cut on June 26, 2025. Impressed with the menu and also the ambiance of the restaurant. I ordered the Prime Rib end cut and it was not a real end cut, was served medium/rare and was very fatty, Not good. The other dishes at our table were all good, Halibut, medium/rare Prime Rib, and Steak Tips. Would not order the prime rib end cut at this restaurant again. (manager took my Prime Rib back to the kitchen and they cooked it some more, but still not great. For $65 with a large baked potato and cream spinach, it was not good). The service was good (waitress was very nice but busy), restaurant was crowded, and the drinks were okay, nothing special. Price was about $100+ per person. Think we would try the restaurant again, but order something different and maybe stick to wine rather than a mixed drink. read more

WOW -- my favorite meal in cape cod. Highly recommend ! This place is upscale but the service was so friendly it didn't feel super stuffy. The highlight of our meal was definitely the short rib agnolotti -- the flavors were insanely good. I also loved the lobster ravioli and the octopus. We felt the tuna tartare was fresh but the dish overall didn't have a ton of flavor. A surprise favorite was the blood orange sorbet we tried in the spur of the moment. Best meal of this year's vacation for us so far. Been to squire, blue fin, captain parkers but this was great in some aspects not all. Kids got the kids steak and mashed potatoes. The menu and waiter neglected to say it's a teriyaki steak....well kids didn't eat it. Mashed potatoes, fantastic. Prime rib excellent everyone felt. Linguini and clams - do not get this. Totally lacking flavor and a very thin sauce. I know this was probably made in a traditional style but two of us got it and would never get it again. My clams were also sandy. Wedge salad was superb but a special. Baked potato and mashed were excellent. Jumbo lump crab hard to mess up was excellent. Had dinner here on Saturday 12/30/23, sat at the bar with my date. When I say that this place Surprised the hell out of me I mean it. I had very low expectations because it's a steak place In the off season on Cape Cod....i couldnt have been more wrong. Both bartenders were great, knew the menu cold and made outstanding drink food and wine recommendations. I was pleased with the peach salad and halibut special and that would have received a 4 or 5 rating. The place is not large and therefore in maximizing tables it sacrifices any opportunities for any unique motif. One large room with dark tables and interior, but the room not dark due to brighter lighting. We started with drinks. My manhatten was good but lacked the high end vermouth, such as Antica, that I've gotten at other high end steak places. The lemon drop martini and gin & tonics just fine. Appetizers were a garden salad and seafood chowder. The chowder, award winningly good. The salad will win no award but was a lovely display of leafy greens and assorted salad ingredients with minimal oil and vinegar dressing. The dinners were mostly perfection but a resistance by the chef to having prime cuts of steak, being cooked medium or more. A filet was sent back and returned the same medium rare (which I sampled and found delish, but my friend wanted it medium and the kitchen apparently could not bring themselves to such a crime). They ended up removing from the bill. My rib eye, my wifes steak tips and a friends pork chop special were outstanding. The tips and pork came with mashed and vegetables that were delicious, however most steaks had only a little carrot mixture with garlic bulbs. I had to purchase a starch with the steak and a $12 loaded baked potato was quite large but just a touch under cooked preventing a fully soft potato. The service was impeccable. The impression leaving was the overwhelming quality of the meat and it's perfectly cooked presentation in 3 of 4 cases, while failing badly on #4, this yelper can sympathize with the chef. From the walk in the door we were warmly welcomed. Had a reservation but opted instead for the bar. The bartenders were excellent attentive and friendly. Ordered a couple off menu black manhattans that were outstanding. Dinner was the NY strip and the bison. My strip was a beautiful cut of meat. However it was closer to blue than medium rare but not enough for me to send back. It was also woefully under seasoned took several passes with the salt shaker to get it to taste like something. Could also maybe used some butter on it or rosemary when resting? The bison was cooked perfectly but also a bit under seasoned. Sides for the steak were minimal but tasty I did order the fingerling potatoes in addition and it was a generous portion. Tiramisu for dessert and expresso martinis both very good! Matt who I believe was the owner or at very least the front end manager was engaging and addressed by concerns about ordering fish. he was correct. I wasn't disappointed. the fish was firm and flaky. the preparation was delicious. my husband had prime rib it was perfect. one of our friends ordered the pork chop and was wowed. our daughters had the linguine and white clam. both said it was almost as good as my husband's. this is quite the compliment. After our first yummy experience a year ago, we were excited to return! We brought our son & his girlfriend as a celebration of sorts. Unfortunately, one year after our first visit, we did not have the same experience. The hostess & wait staff were courteous and friendly; however, they appeared frazzled & rushed from the moment we entered. Which made for a less relaxed welcoming. No big deal on its own- plus the restaurant was full, so we just accepted it as is. Based on our first experience, we thought the meal was going to top everything, so it didn't matter. We would just create our own ambiance. Our waitress friendly, knowledgeable and attentive , but also appeared rushed- and although polite, we found she was creatively rushing us to put in app orders and entrees at same time. She asked twice. We assume because our reservation was at 8:15 (and according to website they close at 9) that the kitchen probably closes at 9 so they want all orders in asap. Note- no one said that to us, but that's how it felt. Regardless, because we were given an 8:15 reservation , we ignored the repeated prompting and ordered when we were ready. We ordered lots of apps: Ceaser salad (fine) Calamari (good not great) Meatballs (great-delicious!!) Burrata board tomatoes & arugula good, but the toasted sliced baguette it was served with was sooo salty (and we're not afraid of salt) and not edible. Again - we thought whatever, because the main event, our entrees, were why we were there ! We ordered 3 NY Strips requested medium (I had a delicious NY strip last time so went for it again! ) and my husband ordered the end cut of the prime rib (like last time & loved). All three NY strips (cooked more rare/red than medium) had no real flavor - any flavor we tasted came from the chosen side sauce. I had both the bernaise (which was too vinegary) and the steak sauce (good) . Others chose bernaise (too vinegary for them as well) and blue cheese(good). My husband's end cut prime rib looked like a prime rib the Flintstones (I know I'm dating myself) might eat. We laughed at it and were like who cares, if it tastes good- but unfortunately it was just okay. No real flavor? Not sure why? A la Carte sides were plentiful and tasty!! Was more than we could eat for our table of 4- mashed potatoes, truffle fries & creamed spinach. Desserts- 1 carrot cake & 1 key lime cheese cake shared. Also more than enough for us to share and both good. Sooooo in short (haha yeah right?!) because of our first experience was top notch from start to finish(ambience, food, waitstaff) we didn't mind the price. However, THIS VISIT we did not feel the price matched the quality of our steaks/prime rib or overall experience. Perhaps we'll try it again , because others that have gone recently and are saying differently? So maybe it was an off night ? Just not sure due to the pricing if it's worth it to us? I had been looking forward to trying this restaurant for 2 years. Unfortunately was very disappointed for many reasons. The restaurant was packed (6:45 pm reservation on a Friday night). It was so LOUD and not in a good way. The acoustics were terrible. My husband and I could not even have a conversation without talking extremely loud so we could hear each other. Service was very slow. I know everyplace is short-handed and I always try to give the benefit of the doubt. But if you are short-staffed, limit the number of tables you seat so that you can properly handle the number there. No gluten free rolls - only regular rolls. In this day and age and restaurant of that caliber - GF rolls before dinner should be available. I ordered steak tips well done. They arrived red inside. When our waitress finally showed up to check on us I told her and she took them back to the kitchen. My husband finished his steak while I was waiting for mine to come back cooked well done. They did come back and were perfect. Both of us who try to limit sodium noticed there was A LOT of salt on the steak. The side dishes were OK, nothing special. I love the sister restaurant of the Chatham Cut called Pates. My recommendation is - choose Pate's! read more

The Chatham Cut almost made cut. My wife and I decided a few weeks ago to celebrate our 44th wedding anniversary at the Chatham Cut to try something different. We are not, as a rule, steak house people though over the years we have dined variously at famous steakhouses in Chicago, New York (e.g., Keens and Peter Lugar's), LA, and Texas (e.g., the Big Texan in Amarillo). We were seated promptly at our reservation time of 6 pm by a charming hostess and then promptly greeted by our waitperson--Lisa--who took a water order (of course we ordered local Chatham water) and she took a cocktail order from their special cocktail menu. Lisa, I should point out, was wonderfully attentive, without being intrusive, throughout our meal and helped make our dining experience a memorable one. Cocktails arrived in a timely manner and we politely passed on the offer of a bread basket (as we don't really need the extra carbs). Lisa took our meal orders and we enjoyed our conversation. It's a delight to be in a restaurant, when even though it is almost filled with customers, it it still possible to have a conversation without voices needing to be raised. We started by splitting the Caesar salad which honestly was very large. It was delicious, though absent any anchovies it lacked that extra spark of flavor we tend to associate with this salad, though we both appreciated that it was dressed lightly and quite satisfying. My wife ordered the NY Strip Steak which was cooked to a perfect medium, just as she had ordered. It came with grilled garlic, shallots and carrots. The béarnaise sauce which she ordered along with the steak was also delicious. We also order a side of roasted wild mushrooms which was wonderful. I ordered one of the evening specials, a Veal Porterhouse, and ordered it medium rare. Alas, the porterhouse came out closer to medium to well done. Lisa, who checked on us after we had sampled the steaks immediately offered to give me another steak, but I declined since I had already eaten more than a quarter of the steak. Within minutes, the front of the house manager came over to make me the same offer which I also declined, as I hate wasting food. That both the waitperson and the front of the house manager were so quick to address this problem speaks volumes about the customer service ethos of the Chatham Cut. I've made veal porterhouse steaks at home and know how difficult it can be to get it exactly right. The meat, even if somewhat overdone, tasted wonderful and so I was not prepared to go through the trouble of ordering another steak. The sides which came with my porterhouse were also excellent--luscious mashed potatoes infused with Vermont cheddar cheese and perfectly steamed asparagus (with just a little bite to the asparagus). The horseradish sauce I ordered to accompany the steak was also lovely, if somewhat less pungent than some might prefer. Since this was a celebration dinner, we ordered the tirimasu for dessert. It was absolutely marvelous and I am ashamed to concede that while there were wild roasted mushrooms left over, the tirimasu was devoured in its entirely. Kudos to the Cut for having a very well balanced (and affordable) wine list. My wife enjoyed, after her cocktail, a lovely Pinot Noir from the Williamette Valley in Orgeon which was really a perfect accompaniment to her steak. Yes, the Chatham Cut is on the expensive side for the vast majority of Cape restaurants. But (a) it is not as expensive on a steak per steak basis as some other steakhouses currently open on the Cape and (b) is somewhat to much less expensive than a proper steakhouse in NYC (or even Boston or Providence). We would highly recommend the Chatham Cut for a special occasion treat--to our left, a lovely family was celebrating the patriarch's 80th birthday (he didn't look a day over 60), behind us was a couple celebrating their 25th wedding anniversary (ah. to be newlyweds), and to the left of them a couple celebrating a 75th birthday.
