We celebrated my birthday at The Committee Chophouse, and let me just say, this place knows how to make an evening feel special. I made a reservation for five of us, and we were counting down the days like it was a holiday. When we arrived, we valet parked and made our way inside. The restaurant is a little tucked away. Head downstairs past the hotel lounge and you will find it. It kind of gives the place a secret, speakeasy vibe, which I loved. We were greeted warmly and led to a private dining room that was beyond charming. It featured a renovated poker table that now serves as a dining table. It was unique, intimate, and perfect for our group. We were offered still or sparkling water right away, and the service was attentive from start to finish. Joe, our server, was fantastic. He knew we were celebrating and made the experience feel personalized from the moment we sat down. He also knew I was there for the Beef Wellington. I had noted it in the reservation, which I highly recommend, because they only prepare a limited number each day. They saved one for me, and I am still dreaming about it. Since it was our first time, we went all out. We shared Caesar salads, a small chilled seafood tower, bourbon-glazed pork belly, and an artisanal cheese board. Everything was top-notch. I do not even eat seafood, but the tarragon sauce on the tower was absolutely incredible. I would put that on toast, fries, maybe even a shoe. It was that good. For mains, most of us ordered the New York strip steaks. My husband chose the Summer of Steak flight, and I finally got my hands on the Wellington. Every entrée was cooked perfectly and packed with flavor. These were easily some of the best steaks we have had in Omaha. We also ordered four sides to share, which was just right for our group of five. The truffle fries were hot and crispy with a lemon aioli that I wanted to take home in a bottle. The asparagus was fresh and perfectly done. The mashed potatoes were whipped and fluffy. The aged cheddar mac and cheese was everything it should be--gooey, rich, and ridiculously satisfying. Naturally, we did not stop there. We sampled a few desserts: Baked Alaska, Coconut Torte, and the Blackstone Butterbrickle. All three were excellent. There was not a single bite left behind. The cocktails were also a standout. Some of the best margaritas we have had in a while. The bartender deserves his own round of applause. Yes, it was a splurge. With tip, the bill came to around $1,200. But it was a birthday, and as my dad always says, if the food and the experience were good, it was money well spent. And this absolutely was. I took my wife out for our birthdays that were this week. Everything was outstanding. The restaurant is on the lower level of the Kimpton Hotel in midtown in an art deco setting. The feel was like an old but very upscale speakeasy. The service from Sayde and the staff was very attentive. The drinks and the food were all excellent. I had the tomato bisque and wifey had the wedge salad. We both had filets, mine had the black truffle butter and my wife added shrimp to hers. The mashed potatoes and creamed corn were over the top excellence! I need to figure out how to make creamed corn like that! Oh my goodness. There aren't enough words to describe the meal we had at the Committee on Sunday. The service was IMPECCABLE--probably some of the best service in Omaha. From the front of house who sat us and talked restaurants in Omaha and chefs and his history with us to our server Destiny who had such insightful recommendations & was so personable it was like we were having dinner with a trusted friend! I was happy to see the restaurant had a bit brighter lighting than the moodier vibe of the cottonwood room, and it had plenty of different types of seating options. I am obsessed with the chairs we had at our table, my back has never felt better which is a weird note but is a major plus for me. As for our food, we started with the pork belly & the bread board (the breads that evening were a herb/rosemary focaccia and garlic and cheddar bread both were scrumptious). I do rate a lot of "5" stars but I think it is because I get to eat at really great places! However, if I could rate higher for this restaurant, I 100% would do it! When you walk down the stairs from the hotel lobby (I say this because there is another entrance which is street side), everything seems so enchanting. There is a circle var surrounding a glowing tree and you have taken a step back in time. Upon entering the restaurant, there is just a vibe. The courteous and sincere greeting from the host/ess makes you feel like you are incredibly special even in your first visit. The service is immaculate and everyone spends time explaining the menu in detail and exploring what really is the best option for the evening! Now my favorite part, this is the BEST steak I have ever eaten!!! I ordered the scallops and they were excellent with the perfectly cooked creamy polenta but when I took a piece (okay half) of my friends steak, I wanted more! There is ZERO flavor. I ordered the medium rare and it's cooked ok, but it's soooo dry. How is a medium rare filet DRY?? So disappointing. Run, don't walk, to the Committee Chophouse! One of the best meals I've had out in a long time. It definitely wasn't a budget dinner, but they hit everything out of the park in terms of food, service, and ambience. I haven't had such a pleasant dining experience in a long time. I'll start with the ambience because it's the most noticeably different. It was a beautiful aesthetic. I felt like I was on a madman set. They did a really nice job of taking classic aesthetics and then elevating them. The food was also phenomenal! When you're spending upwards of $170 for a large steak, you expect it to be cooked perfectly. And it was. A perfect, medium rare, and extremely tender and juicy. We also enjoyed the sides and the focaccia bread with the beef tallow broth. I feel like it's a bold choice to serve bread with beef tallow, but it was extremely delicious! We also got something off menu, crab. It was tasty, and a great complement to beef. Every bite of the Wagyu ribeye was delicious. Usually when you order a steak, there are parts that are more tender and less tender. Parts that have a little more marbling and parts that don't. But this entire steak was delectable. The service was also great. Our server was a little odd, but he was very attentive without being overbearing. He was knowledgeable about the menu and improved our dining experience overall. The only drawback was that the wine menu was pretty pricey. The cheapest bottle you could find was $100, which I understand this is a nicer place they want to promote really good wine. But there are a lot of bottles under $50 that are high-quality. I just felt like the wine wasn't very accessible. We chose a bottle of about $150, which was fine because there were three of us sharing the bill, but I feel like there are a lot of options that are less expensive that are still great wines. The website said they had free valet for people eating at the restaurant. But when we arrived, we realized this was not the case and it was $20 for valet. Not outrageous, but just different from what we were expecting. Like I said earlier, this is definitely one of those places where you pay for things to be right, but we had a great time, enjoyed delicious food, and we will definitely be back. I wasn't familiar with this hidden Chophouse located inside the Cottonwood Hotel, next door to the Channel 6 network building. If you are able, parking is free in front of the Channel 6 building while paying parking meters are across the street. The hotel doesn't have a great visible sign pointing out where the Chophouse is located. Once you enter, when you see the registration desk, turn left and take the narrow stairs down to the lower level, and you will see the bar and host station. Reservations were made in advance, and seating was performed quickly. The server was good except for telling us the specialties until after the fact. I ordered a specialty T bone combo with filet mignon along with the cream corn. Wait time was minimal, and the kitchen staff brought the dishes personally to you. Overall, I had a great time. I have been to so many restaurants with $$$$ next to the name and this is the first restaurant that matched its claim. The Committee Chophouse did NOT disappoint!! We started with their Oysters on the Half Shell, which was incredibly fresh, and Smoked Pork Belly, which tasted amazing and paired well with the salad that came with it. For our main, we split the 56oz Tomahawk Ribeye and the Black Tiger Prawn. The Tomahawk was so tender and absolutely the best steak I have ever had. My husband and I ate dinner here at the Committee Chophouse, located in the lobby of the Kimpton Cottonwood, both nights we spent in Omaha. Even had the same server, Owen, both times! I had the whiskey strip Oscar style, and my husband had their regular strip and a couple of sides. For our appetizer, we went with the large seafood platter since you basically get double the things for... less than double the dollary doos. I believe the cocktails served here come from The Cottonwood Room next door, and after seeing cucumber on the cocktail menu, I wanted to try The Jackie while my husband ordered The Plush Horse (he liked it so much he ordered it again when we came back). I didn't like either drink very much as they were kind of syrupy and tasted almost like a non-alcoholic drink to me. HOWEVER. They make a mean old fashioned here, one of my favorites, and I highly recommend. The seafood platter came with: lobster claw salad (literally whole claws in here, so good), a half chilled lobster tail, smoked clams (quite interesting), six oysters (sadly were very small), JUMBO shrimp, and chef's choice, which happened to be sous vide octopus that night. I didn't care for any of the sauces that came with it but the seafood itself was a real banger, just super fresh and delicious. As for the steaks, they were cooked perfectly though I wouldn't order Oscar again because the crab meat was a little dry. The whiskey strip has a strong flavor of whiskey and was delicious. The sides are huge, two sides is way too much for two people. Okay, the large seafood platter and two steaks is also way too much for two people but we're trying things alright? Unfortunately our second time around, the food wasn't cooked as well. My steak came out quite rare (ordered med rare), the lobster was very salty from the butter I'm guessing, and overcooked compared to the chilled lobster. I really hate sending food back though and rarely will unless it's actually inedible. Lobster salad a la carte with an add-on lobster for steak was $50 and $100 respectively so at that point, ya might as well order the platter. We're still trying things. Great service, beautiful little restaurant, I love the booths and wallpaper. I guess my first disclaimer to this review should be that steakhouses are not really my favorite type of restaurant, but I have been looking forward to trying this one because of the rave reviews. You also want the food to do the same in a big way - at least I do. We tried pork belly, steaks, mushrooms, and potatoes for sides. Oh, and several cocktails (of course!) So at the end of the day... would I rave about it to a friend? To a stranger on the street? Would I come here again and feel good about dumping out all the money in my wallet for a $50 a la carte steak? Even compared to some other comparable steakhouses in town...? Probably not. Sorry to say. And if it had been a $150 dinner, maybe I'd be at a 4-star review. But for almost $250 all in, I wouldn't say I left with the awesome feelings you'd want at that price point. The renovation is great and this hotel is a super cool place to be - even if you live in town, like we do. But I was slightly disappointed in my restaurant experience. The potato soup I could drink in a cup all day long, it was the best potato soup and they make everything in-house for it.
