Brunch at the Greenbriar is like none other. The grounds and the restaurant are magical. The food and service was over the top. We started out with the basket of breakfast breads, a nice assortment of muffins and croissants which were freshly baked and warm out of the oven. The soup of the day was savory and delicious to the last drop. But, the best part for me was the Seared Skuna Bay salmon. It was served on a puree of celery root and green apple, which I savored for the rest of the day. Kudos to the staff at the Greenbriar for a wonderful experience in every way! My husband and I went to the Greenbriar for Father's Day brunch. We have had brunch at the Greenbriar many times and always enjoyed ourselves. This was the worst experience. We ordered mimosas at the bar (we were a little early for our reservation) and were seated outside shortly thereafter. Lovely day and lovely to sit in the garden. Our waitress Kristen provided waters and then took our order - 45 minutes later, no food. When the food finally arrived, my husband's eggs benedict with a side of sausage were cold and the eggs in my eggs benedict were hard-boiled and cold. I asked for the hollandaise to be served on the side and that did not happen either. I didn't want to return the meal, as I was not sure how long it would take to receive the replacement. Ordered coffee that was served cold as well. Our waitress said the kitchen was backed up because orders were not getting through and guess what, you pay a kitchen staff surcharge! We patronize the Greenbriar two or three times a year. Recently, we enjoyed their lovely menu and setting. I was a bit surprised by their recent addition of a 4% living wage surcharge. My initial reaction was negative as it felt a bit like they were virtue signalling the fact that they want to pay a living wage but were unwilling to do so unless their patrons knew they were doing so. After sharing my view with a friend they opened my eyes to something I've already experienced in my travels. I travel to Europe for a week or two every quarter for business. All restaurant workers in Europe earn a living wage. With that, patrons do not feel compelled to tip the wait staff. It's pretty cool. Now that the Greenbriar Inn is paying a living wage, I'm no longer going to tip their wait staff. It's no longer necessary based on living wage standards around the world. read more

These people absolutely ruined a graduation/birthday celebration. The food took 90 minutes to arrive -- cold. They also neglected to bring one of the entrees, but hey the food was cold anyway so we waited a bit more. Mussels should not be eaten cold, I asked them to take them away and remove it from the bill. Instead, they microwaved it, brought back the same plate (one mussel had already been eaten) and reduced the bill by 50%. Don't waste your money on this place, particularly if you have a larger party. Even though they are charging $40-$60 for an entree, they don't hire enough wait staff to get the food to the table without it being a cold, congealing mess. read more

Last night, New Year's Eve, we braved terrible weather to get to the Inn for a special meal with friends. We are so glad we did. The staff were so friendly, inviting and helpful, always there when we needed, attentive, not pushy. Our waiter became our friend. The six course fixed menu was incredible, providing choices that met all our needs. My wife who is picky enjoyed every course. I did too. They had us from the "amuse" start. The hors d'oerve, the salad, the memorable main course, the incredible desert, all were elegantly conceived, cooked, plated and presented. We were stunned. Many people cancelled late, unwilling to stretch in tough weather to get there. We almost did, but decided to go for it. We were rewarded with one of the best meals in our memory. When leaving we wanted a photo out in the weather and cold to show our friends. A lovely young lady with an elegant braided hair came out in the bitter cold in her shirtsleeves to help us make a memory. We truly did not know what to say, except thank you. We never experience this kindness in California. We will never forget thus New Years Eve dinner We are traveling here from California. We will come back to this lovely restaurant again. read more

We went here for our anniversary and it was an absolute delight! The food was exquisite. I can't even begin to say how incredible it was. Creative, delicious beyond words, and plated in such a beautiful way! The staff were so friendly, and had an incredible depth of knowledge on wines to go with our meal. The ambiance was truly elegant - just walking in, we already felt like the celebration had started! I was touched by the complementary champagne for our anniversary as well. Update: Now after this meal I would have given my original star rating a 3 instead of a 4. Holy moly! We actually got our bread BEFORE the meal, not after we paid like the first time. We went for First Bite Boulder. I had been planning this dinner for weeks now. Did not disappoint. Got the potato and parsnip soup. Yummmmm. The apple cheddar galette was AMAZING. I was so full but still made a valiant effort to finish it all. Our waiter was wonderful and funny and helpful. Seriously top 3 meals of my life. We had our wedding reception here in Sep 2019 and the food was spectacular! We had roughly 100 guests and the Greenbriar Inn made every effort to get everything perfect. The food was delicious but the cake... I still have dreams about the cake! Chocolate cake with a vanilla buttercream. We loved it so much so that we ordered the same cake for my birthday in mini version, a year later. We also celebrated our first wedding anniversary here and the beef wellington is spectacular. What a great night! If you don't know- the Restaurant has made many changes. Big menu change, a chef from Italy who brings Tuscany Into the house- wine pairing that was spot on- and a lovely staff! It was a celebratory night and knowing that they are Covid aware we had a spacious room and an invitation to enjoy abd not feel rushed. The duck was tender and melted in my mouth with hints of chocolate and coffee. The meal in general felt as if autumn was being presented as a dining experience. Sunday, November 28, was one of the worst dining experiences I've had. We arrive as a party of 10 for brunch with reservations. It started out promising being seated immediately and drinks quickly arrived. It was all down hill from there. Food took over an hour to get and it came out Sporadically over a period of ten minutes. The two orders of eggs Benedict and two orders of Monte Cristo and the omelette were cold. What really surprised me was that the order of muscles were served cold. Sea food, cold, really? Yes, the steak and eggs were hot, just out of the oven but they arrived 5 minutes after the other food. The last order, salmon was only warm and showed up 5 minutes after the steak and eggs. How generous of the manager to comp our "second" round of drinks and our waiter still getting a 20% gratuity on the $423.00 bill. Way over priced and way under delivered. The kicker.... I was asked in the bathroom by a total stranger if our food was cold too? Yes! Then he said; "this is the worst place I've ever eaten" Sorry to say we will never go back! read more

I wanted to love it, but was disappointed, and had wanted to try this place for years. Very friendly host, a great server, and good ambiance, but food left a lot to be desired. Best part of the meal was the bread with whipped butter and the sorbet between courses. Went for the First Bite restaurant event and started with the Oysters Rockefeller - two oysters on a bed of arugula and they were very fishy and the topping wasn't at all crispy. I didn't finish it. Main ravioli course was very Fall like and flavorful, though the ravioli seemed overcooked. It had mushrooms, apples, and nuts in the sauce and the flavors blended well. Chocolate cake for dessert was dry and generic and I didn't finish that either. Unfortunately wouldn't rush to go back unless more reviews indicate food improvement. read more

We went to Greenbriar last month on Saturday evening with a 6pm reservation and wasn't impressed. The restaurant is beautiful however everything we ordered was over cooked or they were out of. Our waiter was very friendly and apologetic the manager offered a us a glass of house wine bc our food was taking forever. I ordered beef Wellington it was chewy and cold the sauce was the same sauce they will bring you w the pate tasted like campbells cream of chicken soup gross. My husband steak was okay but not worth $60 our meal for date night was over $200 w two drinks and two entrees and appetizers and salads bc they were out of soup we ordered and then they only had Caesar salad. We didn't order dessert bc all the people around us every dessert they ordered the waiter would come back say they were out of it. Hard to run a restaurant when every item on the menu and specials your out of right when dinner service starts. Sadly hard to be a wait staff at a restaurant when customers are constantly told sorry we don't have that or we just ran out of it. by the way the menu isn't that big to begin with so i question the freshness of food. What a wonderful surprise! I have been going to the Greenbriar for 40 years at least once a year. Went for our anniversary and the new chef as of January is a winner!!! Before the menu and food were good were great but a bit tired and outdated. The new menu is fresh, innovative and simply delicious! We ordered the Poussin (version of chicken cordon bleu) with chanterelles and peas and my husband had the filet. We both had the soup of the day...watermelon gazpacho...very light, elegant and delicious. We have decided to visit more frequently! And please try something besides the Wellington...yes it is great but the new flavors are sooo much more interesting! Had a nice dinner on the outdoor patio area. The patio is very nice, there is a little noise from the cars on the road. I had the Beef Wellington, they claimed it was their specialty. The Wellington was really good, but I have had better. It just was'nt as tender as a Wellington should be. So for the price, I was a little disappointed. We also had the Salmon, which was very good. My partner and I had a great time at Greenbriar. I will say the service was exceptional. I forget the name of our server but he had a beard and a man bun--he was super nice and gave amazing service. The food was a solid 4 stars--we liked it! My partner enjoyed the lamb burger a lot, especially the feta and aoli on the burger. We both thought the honey on the sweet potato fries were overboard on the "sweet" and would rather do without. The fries were crispy though! Maybe I can get them next time without the honey? I had the crab mac n' cheese. The sauce and the crab meat were delicious, but there were only two shrimps in the entire dish... it was pretty pitiful. I've been up here for weddings (beautiful), holiday parties (cozy & fun), and countless brunches and dinners (delicious). The Venue: There is a beautiful garden for small-medium weddings or receptions. Should it rain, you'll get married inside under a moose head, so pray it doesn't rain if you pick it as your wedding spot. The inside has a German influence and is dark and intimate with a low, heavy wooden beamed ceiling and glowing chandeliers. The upstairs is more airy and light. The Food: Really good! The Greenbriar is highly reviewed by Zagat, Wine Spectator, and CitySearch, as if you need anything more than my word of honor! I think the chefs really enjoy making appetizers because they have a huge and varied selection. Entrees focus on meat, game and seafood, though I have ordered some spectacular vegetarian meals. Here's a sampling of what's currently on the menu (it changes seasonally): Baked Stuffed Globe Artichoke Almond Crusted Soft Shell Crab Bacon Wrapped Rabbit Roulade Molasses Brown Sugar Glazed Pork Chop Steak Diane and Seared Sea Scallops Morel Stuffed Semolina Raviolis Warm Blueberry - Bartlett Pear Crumble Tahitian Vanilla Coconut Creme Brulee (with caramelized bananas, mango tuile, and fresh berries... I am sad to have to write this review, but I must. On Sunday May 21, I took my daughter for a late mothers day brunch. Though my daughter enjoyed her omelet, I was appalled at the food I ordered. Don't ever buy the Crab Cakes. They are as small as a quarter with no thickness and the crab they used must have been artificial as it was the most fishy tasting and smelling crab cakes I have ever had. They were cold, too. I also ordered a side of Rosemary breakfast potatoes that had to have been 2 days old, had no flavor at all and they were served also cold. Granted, they did remove the cost of both items, since I did not, could not eat them, but for the cost of $16.00 for those awful crab cakes, be warned. Plus, the service was awful, we ordered sparkling wine, and after 30 minutes or so, I had to remind the wait staff that we had yet to get our drinks, though the Beignets had been delivered to the table 15 minutes earlier. Easy to spot right off the highway, the Greenbriar Inn is cozy, full of color and has a great happy hour. Atmosphere? Super cozy! Staff? Awesome (Shout out to Cliff for the many entertaining conversations.) Beer selection? Ok, something for everyone though and keeping it local. Food? Superb! The food was killer! We only hit the bar menu and it rocked. Self admitted cheap skate that I am, the dining room menu may be a little steep for me. Can I Uber there from Thornton??? We had our wedding two weeks ago at the Greenbriar and it was nothing short of amazing!!! We had the wedding ceremony and cocktail hour outdoors and the reception was indoors in the main dining room. The cabin lawn for the ceremony was so perfect, with the fall colors and then the foothills behind. It was a destination wedding for the majority of our guests and it truly was the perfect Colorado setting! THE FOOD - I have never been to a wedding previously that had good food so I was beyond happy to have had such fantastic food at our own wedding! Our guests are still talking about the property and the food! The banquet coordinator, Kathi Jo, as well as Valerie, Cliff, and the rest of the staff were professional, helpful, and made sure we were not worried about anything throughout the planning as well as the day of the wedding. We had literally no worries the day of which is unheard of! We could not have asked for a better or more accommodating venue. They gave us freedom with our vendors and even suggested and helped with "the little things". My favorite was to use the fall leaves from the grounds during our recessional! So fun and BEAUTIFUL. We had visited some other venues in the area while we were planning last year and this was the only one that made us feel like we weren't just another tab on their sales column for the year. We have been anxious to try this old Colorado fine dining spot. I had heard rumors that their Sunday brunch was delish so today on a very snowy day, we decided to venture up there. We unknowingly arrived a bit late 1:30pm, last seating is typically at 1:00pm, but the manager welcomed us in anyway. We enjoyed fresh seafood, oysters and shrimp, salads, and cheeses. The hot offerings were also classic and amazing. Lots of yummy desserts to choose from too! The bloody Mary's were delicious. This brunch is comparable to the St. Julien Sunday brunch but with a more cozy Colorado mountain ambiance. Also, this is a wedding venue and it's gorgeous! Took my family of 5 and my Mom and Dad to the Greenbriar to celebrate a belated Father's Day on July 15th. To say that it was disappointing would be a complete understatement. We waited for at least 15 minutes after being seated before we saw our waiter (or anybody for that matter). Food: ordered ceviche, lettuce wraps and the strawberry salad. There was zero recognizable seafood in the ceviche (maybe small remains of some white fish, no shrimp or crab unless it was out of a blender or something like that, quite terrible). The lettuce wraps were decent but nothing to rant about, same with the salad. 3 of us ordered the filet of beef for our entree with varying degrees of disappointment. My daughter's plate was completely cold and she had to send back for a warm up and when returned was overcooked (a risk you take I suppose), My son's was also cold, but he opted to eat it cold rather than run the risk of over cooking it. My filet wasn't even a filet. It was like an 1.5 inch pressed hamburger patty. It was overcooked, tough with no flavor or seasoning whatsoever. I sampled my daughter's and it was like chewy cardboard. My mom had the salmon and she said it was good. My wife and other daughter had the halibut, they said it was "okay." My Father had the duck breast and said it would have been a "good appetizer", terribly small portion. Dessert consisted of tiramisu, or should I say tirami-pudding. It was served in a small glass dish like pudding that had been sitting in a fridge for a week. It was the furthest thing from tiramisu we've ever had. Drinks: my Mother had a tiny little margarita that didn't even taste like a margarita. Beer and wine were fine but it's hard to screw those things up. However, $21 for a house Cab seems a bit high to me. Service: eh, very slow, we found ourselves looking for our server several times. The bussers seemed willing to clear plates before the group was done eating which was somewhat irritating. I believe they were very understaffed. However, they went ahead and slapped a $22 kitchen fee and 20% gratuity onto the tab just to make sure the bad service didn't get hurt. Ambience, we've always enjoyed the dining room at the Greenbriar, but something had to be with wrong with the AC because the thermostat on the wall was reading 81 degrees and it felt like it. Everyone at our table was uncomfortable from the heat. Just kind of the straw that broke the camels back! At the end of the day and $725 later, there are many, many other great options in the restaurant business for this kind of money. Don't waste yours! I love the Greenbriar. My dad worked there before I was born, so I grew up hearing about it and his experiences there. My parents took me to dinner at the Greenbriar to celebrate my graduation, and I have been in love with it ever since. Another review said that the Greenbriar is for old people. I completely agree. Yet despite being (relatively) not-old, I love it. It feels classy, classic, and traditional. If you are looking for a noisy, trendy eatery, this is not and will hopefully never be the place to go. If you want a cozy, romantic evening, from the twinkling lights outside and the mountain setting to the warm wood and reflected candlelight inside, try this. The German concept of gemütlichkeit (coziness, friendship, good cheer, etc.) describes the ambiance of the Greenbriar. Apparently they are currently offering Lobster Thermador and Baked Alaska as a throwback to their original menu from the late '60s, so again, it's not trendy. There is, however, a focus on fresh, natural/organic, and healthful ingredients, many of which they grow or produce on the property. We ate here for restaurant week, as we do most years. As usual, there was an amuse-bouche of pâté - in this case luscious chicken pâté topped with a port reduction, with crispy crackers. My partner had the Caesar salad, tossed tableside, which was perfect. I had roasted cauliflower soup with pine nuts and fried leeks. The soup had a very mild flavor, elevated by the sprinkling of ground black pepper that our waiter, Adam, applied. The pine nuts added substance and their subtle flavor paired well with that of the cauliflower. I had pan-roasted trout with golden raisin/caper butter, broccolini, and pureed cauliflower (can you tell I love cauliflower??). The trout was cooked perfectly, with a light, crispy skin, and well-seasoned. The cauliflower was really more of a condiment than a side, as it was just a bit spread across the plate under the fish. The broccolini had a surprising peppery, spicy kick, which I loved, but may have been a bit overwhelming to the milder flavor of the fish. My partner had the beef tenderloin topped with blue cheese shallot butter, with confit potatoes and "greens" (something like chard or baby kale, it was hard to tell, but delicious). Everything was topped with a savory, possibly wine-based dark sauce. There were only 3 tiny fingerling potatoes that were soft and delicious, but weren't really necessary to the dish. And then the steak - OMG!! If you told me this was filet of unicorn I would believe it! It was so meltingly tender, juicy and flavorful. As much as I enjoyed the trout, if I went back I would order the steak. Or possibly two steaks, for myself. Or ten steaks. The steak was good. I had olive oil cake with raspberries and lemon sauce for dessert. The olive oil provided a very mild flavor and I would guess it was responsible for the dense, moist texture of the cake. The raspberries and lemon sauce were perfectly bright and fresh. My partner had espresso creme brulee. While the crust wasn't quite as crunchy as I would prefer, the strongly espresso-flavored creme was delicious. When leaving the Greenbriar, you can grab a packet of very thin, fine toothpicks. Fancy toothpicks. I love them. Overall the experience was delightful and very much worth the Restaurant Week price. read more
