I'd been looking for someone to sharpen my knives for some time and I have some handmade Japanese knives as well as some more commercial Japanese knives. I had looked locally but wasn't sure what to expect since there aren't many options locally. Well as far as options are concerned it's not a big deal if you have a craftsman like Justin. With the exception of one knife, all of the knives that he sharpened for me are are SHARPER than when NEW!! The one that isn't is a handmade knife that could split hairs when new, that knife is as sharp as when it was new!!! If you have good knives, Justin can probably make them better than new and if you have great knives, he'll make them as good as new!!!
