Top round

I can't say enough about this little shop. They never disappoint. We order 10.5lbs on Top Round to make some beef jerky. We are locals and have also order other meat from here. We love supporting local businesses and their meat is top notch.

The Meat Market is fabulous. Ronnie and her staff are very friendly and their focus on providing the best service and products. My husband loves all the cuts of steak. I pick up sausages, chorizo and occasionally Ronnie's prepared items. The egg are fabulous. The bones for our dogs are wonderful! Thank you Ronnie and staff see you soon!!

Simply the best. We drive over 90 minutes each way to get our meats from them. They are amazing people, with even better steaks. Prime bone in Ribeyes, "butcher cut" is the best in the valley. Promise! From hand carving to the best cuts of steak and great humans make this THE spot to get your meats!

Ask the Community - The Meat Market

Do they sell goat or ox tail?

Hi! We do not sell goat but we do sell oxtail. It’s very popular this time of year, so I’d recommend calling and reserving one. Thank you!

We stopped in the other day for meat for stew, Roni helped out and we left with the fixings for beef bourguigon.

They've got everything from barbecuing essentials and specialty seasonings to bold hot sauces and even a cold beer to enjoy while you shop. And then you make your way to that beautiful deli counter. That's when you truly appreciate the value of a real butcher. The quality, expertise, and personal service, it's a completely different experience compared to your typical grocery store. They also have 'cuts' of bone for your furry friends. We grabbed a bone for our dog and can't wait for him to enjoy it! Von Hanson's isn't just a deli... it's a place for anyone (new to grilling or professionals) who wants to enjoy quality meat and find whatever they need to cook it!

I haven't experienced this issue before, which is why I was surprised by my visit today. I…read morerequested five center-cut filet mignons, all cut to the same size, and trusted that they would be prepared as requested. Unfortunately, when I got home, the steaks varied significantly in size, and one was clearly not a center-cut filet. It was disappointing, especially since I was preparing a special meal on short notice. Update to my original review: After reflecting on my experience, I realized my original review didn't fully represent the business. From the moment I walked in, everyone was as friendly and welcoming as they have been during my previous visits. The staff was also very helpful in recommending some of their prepared side dishes, including the mac and cheese, twice-baked potatoes, and potato skins. They even provided cooking suggestions for both the air fryer and grill, which were appreciated. Although I was frustrated with how the filets were cut, I have to say the quality of the meat itself was excellent. The filets were incredibly tender, full of flavor, and everyone enjoyed them. The sides were also a big hit with our guests, especially the potato skins. I also want to recognize their outstanding customer service. The owner responded to my review promptly, and the store manager called me first thing the following morning to discuss my experience and make things right. That level of responsiveness and genuine care for their customers is becoming increasingly rare and deserves recognition. While my initial experience with the butcher counter was disappointing, I appreciate how seriously they took my feedback and their commitment to customer satisfaction. Because of that, I'll gladly continue shopping here and look forward to seeing the same high standards reflected in future visits.

We recently asked our friendly butchers to introduce us to something we hadn't previously tried…read morehere. I grew up rurally and had never eaten pork chops bought from a store until moving away. Same with ribs. My father, a Journeyman electrician had friends who farmed and sold their own pork. None better! Rusty Nail's pork chops, especially their porterhouse cuts, are even better than the ones I recall so fondly from my youth. Tender, perfectly marbled and flavorful like none other. They're not "grocery store" cuts. We also bought a rack of baby back ribs. My least favorite step in smoking them is removing their membrane. Not only was this (attention to detail!) step already completed, they were fall-off-the-bone highest quality. So good! Unlike when I was young these chops can be grilled to medium or medium-well if preferred, preserving their juices and maximizing flavor. These too are now on our dinner favorites rotation. Simple seasoning with salt and pepper is all that's needed, although next time we're trying their seasonings. We will continue shopping here regularly. We've referred every friend who enjoys value and great meals too--in other words we have suggested to everyone we know to give these great people (and local ownership!) a try. Without fail our friends are truly grateful.

We are really lucky to have this butcher in the area…read more Pros 1. Prime beef 2. Wide variety; everything from chicken to alligator (yep, you read that right) 3. Very helpful and friendly employees 4. The loaded and twice baked potatoes when they don't have much pepper (just a personal preference). Just reheat slowly in foil until soft and melty. Trust me. They are delicious. If you want one with less pepper just choose one with less black specks. 4. Amazing price when they have a sale. For their anniversary they had 10 pounds of prime beef (their choice) for $110! Phenomenal price and great cuts were in my mystery box. Cons 1. Save your receipts just in case you need to return something. I bought two whole chickens that ended up smelling off/bad (rare instance that this happened here). I was able to return them because I luckily still had the receipt. Wouldn't have been able to return nor exchange without the receipt.

Since my favorite local beef supplier recently closed down indefinitely, I've been on the lookout…read morefor another alternative option. I saw the grass fed beef banner at the Uptown Farmer's Market and headed over to see what they had available. Unfortunately there wasn't anyone at the booth so I had a wait for a bit but it did allow me to look at their meat options. According to the price list and information flyer, JH Grass Fed Beef is raised as naturally as possible. The cows are fed "as close as possible to their native diets. No corn, feed grains, animal or industrial by-products are used to finish the beef." While a few of the cuts of beef I wanted were sold out, I did get some good second choice options. I took home some sweetbreads, a hanger steak (Labeled as hanging tender on the package), and some oxtails. Prices were reasonable for what I got, and were similar to prices at the previous place I used to get beef from. Since I have never cooked sweetbreads at home, I was excited to try them out. They are hard to find so I jumped at the chance to experiment in the kitchen. To be honest, it was a very time intensive process trying to prep them and the result was just OK but I'm glad they offer them here for anyone that is more skilled in offal prep! I was also a little bummed that I had to do some prep for the hanger steaks as they come with the tough membrane attached so I had to do some trimming but it wasn't too bad overall. I marinated then placed them in the sous vide for maximum tenderness with rave reviews from the family. I made a delectable Taiwanese beef noodle soup with the oxtails. I will definitely buy oxtails from them again to make this soup! Service at the counter wasn't the friendliest nor the most helpful but hey, as long as you know what you need you're good. There are discounts if you pay in cash but you won't get a receipt. Details: - Animals are raised on pasture - Local, family owned operation - Grass fed, grass finished - Beef is locally processed, dry-aged and inspected under AZ Dept of Agricultural regulations - 3% off when you pay in cash - Chickens and pork also available - Available Wednesdays at the Uptown Farmer's Market

I requested fatty ground beef and it's exceptionally lean. The steaks are horribly cut with no consistency. An example is New York Strip loins cut 3/4 inch at one end of the steak down to nothing at the other. which doesn't make it easy to cook. Then I got all rib roasts with no ribeyes. The tenderloins were barely a 1/2 inch thick. I actually got a brisket with zero fat on it but they had no problem leaving all the tendonous tissue attached so if you like gristle, this is your place. Lastly even though I could go on and on, I asked for all the extra fat and organs and got none of it. I don't even think I got the bones now that I think of it. When you go to the website to order you'll see why. They charge an outrageous price for all the other stuff that you'll find other ranches giving a deal on. Liver at $12/lb. Fat doesn't seem to be on there now but when I bought my cow it was $10/lb. Are you kidding me? I'll find another rancher to support and I recommend you do too.
