This proves largely why I call most Mexican food (here in Denver) bucket food. By that I mean that there is very little to no actual cooking going on. SYSCO delivers pretty much everything pre-shredded, diced and things like green chili and refried beans in BUCKETS. Actually, I think Chubby's might do a little to the bucket chili. But not much more than add some heat (spice.) Its consistency, however, is more like a Velveeta enhanced green sauce rather than a green chili. There are no chunks of pork shoulder or any recognizable pieces of jalapenos. No, it's not terrible, but come on, just opening up a bucket is not cooking. It's assembling processed ingredients. For a place that is ONLY take out, it is really not all that cheap. My Chorizo and egg smothered, deluxe burrito was $6.25. For that I can sit down at a diner and get it on a real plate... rather than on a paper plate, STAPLED onto another paper plate. Good luck taking that somewhere without oozing all over. OK. So. I've been hearing about this place for, like, forever. I decided to try it one Sunday night. When you walk in, the place smells absolutely horrifying, but you already knew that. I got a half dozen tamales and a pint of green chile. The tamales, I have to say, were really good. Nobody likes dry tamales, and these were very moist and well spiced. That was the only saving grace for me. I have eaten so much green chile in this city that I think it has permanently changed my insides. Not all green chiles are equal, as you well know. This is the first time I was actually unable to eat it. I took one bite of Chubby's green chile and it tasted like....fish or something. My husband was craving breakfast tacos and my first pick didn't have what he wanted. So I called Chubby's to make sure they could make a plain sausage, egg, and cheese burrito (or taco because I didn't know what they had). The man who answered wasn't the friendliest and seemed in a hurry to get me off the phone. I ordered my husband's burrito and my potato, egg, and bean for pick up. I showed up and it was pretty busy in that tiny little room (on a Wednesday at 10am) and hard to tell where to go since there didn't seem to be distinguishable lines. I went to the order window and said I was picking up a to go order. No greeting, he just walked to the kitchen window, got my order, and put it on the counter. Did not speak to me during this entire process. I waited behind one other person to pay and the woman just gave me a total and took my money. No thank you or anything. I got home and gave my husband his burrito and started to eat mine and they had smothered hot sauce all in it. If I had wanted sauce in it, I would have told you. Put it on your menu (which it wasn't- I went back and looked) or explain to someone who obviously hasn't been to your establishment that when they are ordering a plain burrito that it includes this sauce. Rude, thuggish people working the orders and register. Dirty waiting room (to go only). No parking since construction going on. No rest room, and a big sign saying so. I had a breakfast burrito, smothered with chorizo, eggs, potatoes. It was tasty and very spicy, but later my stomach felt a bit off. And I eat a lot of spicy Mexican food, all the time and never have stomach issues. So i don't know what I ate, but something was off. There is a lot of great Mexican food in Denver. I know people whine about the gentrification of the north side, but this place could learn a few things about service and cleanliness from the gentrified restaurants. What can it hurt to clean up (the people and the waiting area) and be a little polite to your customers if you're serving people food? Bummer. It finally happened. My beloved Chubby's changed. When I saw the new vessels that the chili fries come in, I thought "I'll miss the paper plates stapled together but onward and upward". Beyond disappointed and dissatisfied. I truly can't believe how downhill this place has gone! Literally every time I go they mess up my order! And I always tell them and they don't do shit to fix it. Hands down the best mexican food ever! I absolutely crave the green chile and the chili cheese fries all the time. I travel for work and live in CA - I cannot fly home without a visit to Chubby's!!! (In fact, it's usually my first stop when I land in Denver.) I bring special containers to be able to bring home a ton of the green chile. The BEST green chile in Colorado, hands down. HOWEVER, try not to get it after 9 P.M. or so, because they simmer it all day, and it is extremely hot later on in the evening. Even in the daytime the chile can take paint off of your shed, but it has an excellent flavor. Don't be fooled by the nuclear orange color; this is the best tasting green chile around. I recommend the smothered fries with steak, but I have loved everything I've had there. The only reason I give them four stars instead of five is because this place is NOT for the weak of stomach, and as with any Mexican restaurant, sometimes the food can cause... complications. That's about as politely as I can put it. In the interest of full disclosure, if you have never been to this location (the only REAL Chubby's - the rest are inferior imitators), you should know beforehand that it's in a somewhat sketchy neighborhood, but it's carryout only, so you won't have any reason to stick around anyway. Pro-tip: you can pick up counterfeit FUBU shirts, Oakley sunglasses, and pirated DVDs outside of Chubby's during the warmer months if you're into that kind of thing or if you want to do some early Christmas shopping for someone you only like about $10 worth. read more

So I did not actually eat here I was to place an order for Postmates and pick it up and deliver it to the customer. I waited 45 minutes for a large smothered chili fry. When I was waiting outside to order there was a customer who was on the phone and the lady told him that he couldn't go in a certain area or something like that anyways the manager decided to speak to the employee In front of all the customers telling her that she didn't handle that well and that she's done it multiple times but his tone of voice is very unprofessional I have been a manager of a fast food place and it doesn't matter who it is if it's her or if their friends or family or whatever you don't speak to your employees that way in front of customers. There is a customer waiting to order he had to wait a few minutes till the manager was talking to this employee the customer was just kind of standing there waiting to place his order nobody said anything to say or will be with you in just a moment. The two ladies That were helping with how many customers are in the lobby and kept going back and helping with orders they would not wear gloves so they are going from right outside to the line. And it was 15 minutes until close but still there is no reason for that. To say I will never eat at Chubby's I have never eaten there before I don't plan to to see the way that the employees are treated. Then the manager is chasing me down and kept kind of raising his voice at me that I was in the wrong to say that but I bit my tongue and I just thought it was very unprofessional I was just letting him know next time you need to take your employees to the back to speak to them you shouldn't do it in front of customers it doesn't matter who it is. read more

I have been eating Chubby's since I was a little girl and always loved this place, however, these past few years it just hasn't been the same. For a while, I kept going back hoping that it was just a fluke but I think the authenticity might be gone forever. The portions are a lot smaller, the food doesn't taste as great, and the preparation is different. I order the same thing everytime (Mexican hamburger w/ chicharrones) so immediately noticed the difference in patty size and it seemed that they were using the beans as more of a filler. OMG This place is the bomb, you can't beat the chili from the original Chubby's everytime I go it is packed, however I don't like their to-go plates (two plates stapled together - -UGH - buy some styrofoam containers the enviroment will forgive you when it tastes your chili, the stapled plates soak up the chili and is not good for the long drive home) Other than that this is the place to eat when you want a real burrito! read more

When I lived in Denver, I ate here once a week and I still return every time I visit relatives here. The green chile smothered burrito with chicharrones (crispy pork cracklings) is a thing of beauty, although not for everyone. This is not health food. In fact, it's not really authentic Mexican food. It's an intense (hot) pool of orange-colored chile with gooey cheese and lard that is unique and delicious. Great hangover food IMHO. It's a fatty carby mess that you gotta love. The green chili is the best in town. The place itself is a bit shady-looking and divey, but it's worth the trip. Don't plan on eating here, it's not that type of place. You come and get your food and you get out. It's really popular and often it's standing room only while you wait for your food. Try to avoid peak times or you'll be waiting for a long time. I've had waits of over an hour. Parking is limited so try to ride together if you bring friends. In town, enjoying the sites, looking for something to fill the void I pulled up this gem within walking distance from my hotel. I walk up to the building and it's packed. I spent a second outside chatting with a local who says he's been coming to this place since he was a kid. I ordered a Carne Asada burrito with the chili sauce, sans tortilla (ask for it in a bowl, they know what to do). The wait was about 15 minutes. While picking up & paying for my order they threw in a breakfast burrito someone didn't pickup. Who am I to turn down free food? The breakfast burrito had nice size chunks of Carne Asada and PERFECT Crispy Bacon. The Carne Asada was delicious, having a splendid kick (from the green chili sauce), and fit my keto/atkins diet. I used to think Chubbys was okay, now I think it is terrible. Seriously, why don't they get a light up counter so people know if they are up or not for food instead of screaming it across the room? Also, their numbering system is so strange. You get a number and you think hey 78 just got called, that means I'm next, but then someone else that ordered after you gets their food before you do. It makes absolutely no sense. The food numbering on what gets called should be done chronologically. We were waiting for 30 minutes before we got our food. It was insane. We only ordered two menu items. One burrito and one burger. Burger was disgusting. It was really not worth ordering. Not to mention the girl at the counter kept trying to get me to add on the "smothered" part to the burger. I wanted to eat the burger like a burger, with my hands. So I asked for the green chili on the inside. She then proceeded to ask me again if I wanted it on the outside. Sorry, not going to pay for the up charge for that. Their kitchen staff is limited. They need to stop being cheap after their renovation and hire more staff in the KITCHEN. Too much staff in the front. Too little staff in the back handling food. The manager/owner is just standing there while his customers are lined up waiting for food. Also, late night they don't allow dine in.
