Oyster bars are a must when we're in casino areas and we have been to plenty. I have to say, for not being the original Palace Station, this lives up to that standard and I would come back. They have Lunch Specials but we got shrimp cocktail and Santa Fe Pan Roast. The shrimp was too rubbery for me but the Pan Roast hit the spot. Had shrimp, crab, chicken, andouille with a scoop of rice in a creamy tomato base. We asked for medium spice and it was perfect. Some places make the base too runny or too thick but the consistency here was on point. This place has about 12 seats at the bar and 10 tables. I ordered a dozen gulf oysters and the combo pan roast. If you're curious about the seasonal oysters, they had two varieties and the price was $41.99 for a dozen (as of today). They give you a basket with around 5 different hot sauces so it was fun trying them all :) The first oyster I had was a 10/10! I made the mistake of thinking I could finish 10 medium oysters by myself. I got tired of them after my 5th or 6th oyster, so try not to over order The combo pan roast was great. As someone from the east coast that lived really close to the water, my expectations were initially not good for the place. I was happily mistaken. The warm bread and butter is a must. The fish and chips are abundant, flaky and well seasoned. The dipping sauces elevated it and the fries were definitely cravable. I guess the only difference to justify the $5 upcharge is the extra fish and 1 small lobster leg... you won't find the fennel and saffron in the classic French bouillabaisse. Next time I will just get the cioppino and save $5. All the seafood tasted very fresh. A large bowl like this in L.A. would easily cost $50. They also have étouffée, gumbo, pan roast but those are thick stews with heavy flour and butter -- not for me. Santa Fe Station is mostly unknown to tourists, so their Oyster Bar is rarely crowded like the more famous Palace Station. This is one of Vegas' best kept foodie secrets. read more

Both decent size servings of pasta, mine had four little cherry stones as a garnish and a decent amount of chopped clams. My grandmother , who is a huge gumbo fan stated they had the best in the city. When I tried it, I was not impressed. It actually tasted more like curry than gumbo. The Clam Linguine we ordered on the otherhand was very good and loaded with clam pieces. So far I've been to the Oyster Bar inside the Palace Station (2.5 hr wait), Red Rock, Durango and now Sante Fe. Ambience wise-Durango, and Red Rock hands-down. Classier, newer and cleaner looking casinos. As far as the service and quality of the food, ALL of the locations have really great customer service. Just super friendly people. If you've been to a Station casino (ex: Palace Station, Durango, Santa Fe) you know each one has an Oyster Bar that's usually quite crowded with a wait. We stopped by on a Monday after 7pm and this Oyster Bar in Santa Fe was fairly empty. There was a sign to seat ourselves so we sat at the bar with a view of the open kitchen. A server came to take our order. For a quick starter we ordered the warm sourdough bread basket and butter. We also got a cioppino ($30) and bouillabaisse ($35), both spice level 5 out of 10. I would probably get a 6 or 7 next time since a 5 was still on the milder side. I preferred the cioppino since it was a creamier, chunkier consistency whereas the bouillabaisse is a soup. Both had plenty of seafood - giant scallops and shrimp, plus crab legs, clams, mussels, fish. Both came with a bowl of steamed white rice. While dining at the bar we also saw some oysters being shucked and I was pretty impressed by how fresh and big the oysters looked, comparable to the ones I've seen in New Orleans. For context it was mid February during our visit. We probably had a more atypical dining experience as it was so slow, but nonetheless was very happy to not have to wait, and we enjoyed the seafood on our casual, splurge date night. read more

Decided to come here as we had a big party and since they have regular tables, it would be the best move. Plus, none of us have been to this spot yet. Park or enter through the North Garage entrance as this is closest to the restaurant. Before walking in, you will get hit with all the smoke coming from inside the Casino. Not a big fan of that, but just be warned that there's a lot of smoke smell here. The staff here are very nice and accommodating. The restaurant wasn't completely full, but since we were a party of 14, we had to wait almost 1.5 hours. Ayesha did her best to try to accommodate our party and was on top of it. Keep in mind that with a party over 8, they will automatically charge an 18% gratuity. Plus, they are not able to split the bill, but can accept up to 4-5 different credit cards if needed. The pan roast was really good and I noticed that both the chowder and pan roast tasted better at this location than any other ones I've been to (Palace Station, Sunset Station & Durango). The pan roast had a hint of sweetness to it and the acidity was just right. The pan roast was thick and creamy. It was so good, that I ended up ordering another one to go. Everyone in my party agreed that you do get more here than at the other locations. What others have said about the staff here are true.
