I've been there three times, always with friends. Each time I had high hopes for something that was very flavorful and rich with spices. Each time I've been disappointed. The food (and I've tasted the dishes my friends ordered) was basically bland and lacking flavor. I wish we had a solid Thai restaurant in town (sadly, we don't). Thuy's, I'm sorry to say, definitely does not fill that void. I'd recommend at the least kicking up the spices and flavorings to make the food "pop" as Asian food typically does. We stopped for a late lunch at Thuy's based on a recommendation from a Bisbee local. Great service and awesome food! There were a few people already dining when we arrived and we shared the big table with another couple. We quickly decided and ordered the veggie spring roll and the Bahn mi sandwich. It was a super hot day in Bisbee and this little restaurant was hot inside so we decided to take our food to go. We caught our server before our food came and she was super about our request. We thought the food did take awhile to prepare but greatness does take time. We really enjoyed our roll and the delicious sauce that accompanied it. Our sandwich was seriously tasty and a good amount to share. The food is definitely reasonably priced for the amount and quality! I would love to return when it is chilly in Bisbee and have some Pho! read more

Some of the best Vietnamese food I have ever had. This restaurant is doing a very good job and taking Covid serious. They had one outdoor table that was on the porch and not covered in snow. I had the beef pho and the broth for it was some of the best I've ever had. The Pho was not lacking in noodles or beef. The curry came out bubbling and the amount of flavor it had was beyond amazing. Pretty good yellow chicken curry...there was one piece of potato in it tho. The rest was (a ton of) chicken chunks, carrot and a few chunks of pumpkin - also tasty. Not a lot of broth/curry. The pork and shrimp spring roll was good as well, but not great due to the couple pieces of gristle in the pork and sweaty wrap (it was sticky due to moisture). I'd get all shrimp next time. The girl at the counter tried to give me a spring roll and side of rice in my to-go bag instead of the yellow curry and rice noodles I ordered w the spring roll. Maybe my expectations were too high from the rave reviews I saw here, but I got no friendly owner experience and good - not great -food. Maybe next time will be better though. read more

This was more 4 stars for me and less than 3 stars for my husband. He got the chicken curry dish, and he wasn't that thrilled with it mostly because his chicken was quite chewy. My vegan stir fry was very good though. The noodles were chewy in a good way, and it was chock full of veggies and flavor. Avoid this place! Do not go here if it seems even slightly busy they will forget about the customers coming in and take care of all the take out first. We had to wait over about two hours for our food. We got our drinks but they must have forgotten the outside seating. When we got there it was still light outside and unfortunately it is dark now and everyone is cold waiting for their food... Highly disappointed... That is all I can say. Absolutely delicious & excellent service. Patio is open. (9/16/20) We ordered the vegan crispy spring rolls, vegan pho, beef pho, Thai coffee, & iced jasmine tea. So much food! I've lived in NYC for the last decade so the bar was high for me, but Thuy's got it right. I was very pleased. And the jasmine tea was perfectly refreshing on a hot day. Highly recommend! read more

We sat outside while the sun was still up a bit because there aren't many tables on the inside. A young gentleman told us he'd bring us menus shortly, so we went and sat at a table. Tables all around us kept receiving food and drinks. After about twenty minutes of no one acknowledging us we went back inside to get a menu. Came back to the table and waited. We ordered waters and it took about another ten minutes to get water. The kid that took our order we asked for sodas, which we didn't receive until after we got our food. Which took another twenty minutes, by that point we were frozen, the sun had gone down, and we were looking forward to our soup. When it arrived it wasn't hot hot like soup that took that time to prepare. It was warmer than we were, at that point we no longer cared. All the wait staff seemed nice, but have complete blinders on when going to tables . Unfortunately as much as I love pho, we probably won't be back any time soon. read more

Was so stoked to find Thuy's Noodle Shop at a new location. Of all the charming things to see and places to eat in Bisbee, Thuy's remains a definite--no, a MUST stop for us each time we visit. After a visit over the weekend, we made the promise to come down at least once a month...just for the curry. Seriously, Thuy's brings the best vegan curry in AZ! Not a plant eater? The chicken curry is awesome, too. Not to mention their great selection of pho and other tasty fares. Bring a spoon with you, because you'll want to scoop up every delicious bite. A surprising gem. I didn't expect this quality of Vietnamese food in a small little restaurant in a small little town. I absolutely love their pork and shrimp egg rolls. You can make a meal of these generously sized rolls. The beef pho is tasty and plentiful with beef slices. My wife got an an amazing chicken curry dish served with noodles. Oh, I have to also compliment the friendly owner and staff. I'll definitely be back. Update 3/3/18: Upgrading my rating to 5 stars. This place is great across the board. More than just a pho place. The curry chicken and lemongrass chicken dishes we had today were exceptional. We'll be back again and again. read more

Phenomenal pho! I'm so happy there is at least one Asian food restaurant in Bisbee, and it happens to be amazing!

Food is alright, service is bad. Our waitress forgot are drinks on multiple occasions. After finally getting our drinks we waited a very long time for food even though the restaurant wasn't even busy. In total, we spent around an hour waiting for food. Overall, the wait is not worth it. read more

Not only have I been continuously enjoying this food since I moved back 5 years ago, the beef pho literally kept me alive throughout my rough pregnancy a year ago. The food? Please, I beg you, don't waste your time and money here. It bewilders me how many good reviews there are. My friend and I love Vietnamese food and are regulars at one of the places where we live. We went to Thuys per the recommendations of several close friends and decided to finally give it a try. We got the vegan spring rolls, vegan soup, and beef pho. The spring rolls were the only edible thing we ordered. The beef pho was nearly tasteless, with a sweet almost cinnamon flavor in the beef. I had to add a bunch of chilis and siracha to try to save it, but it didn't work. I've tasted wet socks better than this. My friend ordered the vegan soup, and he said the flavor was like water with a hint of old onions and oil. He tried to add a bunch of sauce to try and save it as well, but with no success. We both agreed our pho tasted like dog water. As we sat their with our nearly untouched bowls, our kind waiter came to check up on us. We stated we didn't like our pho and wanted the check (we were trying to be as kind as possible). He then brings who I presume to be Thuy to our table and she proceeds to be very defensive about her food. We simply stated it wasn't to our liking and wanted to leave. We will never come back to this place, and I advise whoever reads this review to do the same. read more

The food here is always amazing and Thuy is a lovely person as well as an excellent chef! My husband and I eat here often and our go to meals are the noodle bowls, filled with fresh veggie salad, soft rice noodles and your choice of rolls or grilled pork. Top it all with their fish sauce and you have a most enjoyable flavorful meal. Bisbee is fortunate to have this restaurant to add to the town's appeal! read more

Where to start....nothing about our takeout order reflected what they confirmed. I ordered pho with shrimp, which they assured us they would do, I got nasty tofu. We were assured they could accommodate spicy, they did not deliver. Let's talk about the pho, itself, I can truthfully say that the worst pho I have ever had came from this establishment, the broth was so gross and nothing like authentic pho. Not to mention that they provided NONE of the accoutrements that go along with it, i.e. fresh cilantro, basil, bean sprouts and jalapeño. They have a ton of good reviews and some bad reviews, I knew I should have trusted my gut with the bad reviews but I wanted to at least try. There were just a few restaurants opened in Bisbee while we were there and this one was a gem. It's located about mile or so from downtown but is so worth the walk. I ordered the Vegan curry and it was loaded with veggies. My Boo got the Beef Pho. WE shared an order of the Spring Rolls. It was all really good and I love the Curry the best. It was very flavorful! This is a very casual place and we liked the outdoor dining. The service was a bit slow but I think it's due to Covid complications w/ staff, etc. It seems like a lot of places have shut down in Bisbee due to lack of workers, etc. Thank goodness Thuy's Noodle Shop is still open and serving such yummy food. read more

It was our first time visiting Bisbee on a Thursday (1.4.18) and decided to have lunch here. It is a tiny, tiny restaurant, good for a couple or individual person only. The menu selection is pretty decent, but beware they can run out of things. We wanted a Vietnamese sandwich but they ran out of bread. There are three tables total, a long table that sits about 8 individual, a chance to get to know strangers. One table with 4 chairs and one table with 2 chairs. Just thought you might want to know if you decided to take your group of friends or family. I guess the set up is to order your food, eat quickly and leave (fast food style). We ordered two Vietnamese ice tea, one chicken pho, and one vermicelli noodles. Our ice tea was extremely sweet like drinking sugar and couldn't even drink half of it. Our pho broth was not bad but tasted oily and lastly, the vermicelli noodles was tasty with a lot of flavors, but way too salty. Overall, decent food and service. You can see the frustrated looks on the owner's face. I hope that the restaurant will expand in the future with more servers, cook assistance, and tables since they are the only asian restaurant in this town. If you are in the area and craves for asian food, give it a try but be fast or order to go! read more

The owner of this little place is a hard working culinary wizard originally from Vietnam (I think). Since I've written so many one star reviews, I decided it was time to give credit where credit is deserved, rather than focus on the times I've been served like I was a half-wit and then fleeced for the insult (I'm tough and demanding). All the food is wonderful and the menu is spare, the mark of a good restaurant that focuses on a handful of great dishes rather than trying to cover more bases than is humanly possible. Only negative: too small! I hope she expands, and rather than slave away herself at the hot stove, relegate that job to others under her supervision. It's hard to watch her and imagine the strain of that kitchen, but it's a sure bet in a great city needing more of what she offers. read more
