I can home to 9 rolls and I can happily confirm they were all still within their sell by date (Too Good to Go's initiative is to reduce food waste by allowing business to sell their slow moving goods at a discount). The breakdown of rolls were: 2x spicy shrimp rolls 2x haiwaiin rolls 1x crunchy tempura shrimp roll 1x Philadelphia roll 1x spicy salmon rolls 1x tuna roll 1x rainbow roll As these are slower moving goods they're selling at a discount it was expected that the rice was a little more firm having been refrigerated for longer, but still had decent taste, and really can't complain for getting each roll for about $1.55 each.
