I had a really long and fascinating conversation with a server once about how location affects the taste of different oysters. Learned a lot! Prices are not cheap, but it's not cheap getting good fresh seafood either, so there we are. Probably not the greatest for the planet either, but I don't think it's my rate of oyster consumption that's driving global climate change either. So yeah.
