The line was long but they were very open about why it was taking a while (they wanted to ensure they only took orders they could fulfill and check their food inventory), once we ordered it was very fast! The food was delicious and so well made! The half chicken was what we got and it's alot of food so be ready to eat! The rice, plantains, and yuca are so yummy, highly recommend any of those sides. Though what I really like about the place changed. When I first went all they offered was Chicken, Cole slaw, and fries. In a world of many option I actually thought this sent a message that we are so good we only offer a limited choice that's you will enjoy. Tbf the fries can't compete w McD or Chikfila Waffle fries but they were good. The service counter is modernized and they are efficient and friendly. The layout if the restaurant is still basic like the limited menu they used to have. No frills no gimmicks just good food. Still the same vibe The chicken was still very good. Other places are fairly close but Apollo Rico is just a touch better. The charred seasoning is evident. What tipped the scales for me in comparison to other places I've been is the green sauce. It liked fresh. It wasnt like other places where that has the consistency of ketchup it looked bright green and freshly made vs other places where it seems as if it was poured out a container.

I'm not sure if the gentleman who greeted us was the manager or the owner, but he immediately made eye contact, welcomed us with a smile, and seated us right away. That first impression set the tone for a wonderful dining experience. Our server, Eduardo, was outstanding professional, personable, and attentive throughout the evening. He took the time to explain the menu and offered excellent recommendations, which made it easy to try a variety of dishes. The ambiance was warm and comfortable, with music playing softly in the background, making it easy to relax and enjoy a conversation without feeling rushed or overwhelmed. We ordered several appetizers and tapas, followed by dessert, and every single dish was absolutely delicious. The quality, presentation, and flavors exceeded our expectations. The food was really really delicious. While the first wave of tapas took a little longer than expected to come out of the kitchen, the rest of our dining experience was smooth as butter. Every dish I tried was wonderful - the steak breakfast bowl, chicken tostada, and beef sliders really stood out in a special way. Each dish was seasoned well and came out hot; some of the tapas came out in fairly large portions (like the beef bowl and papas) and should be shared between a few people. I appreciate how expansive the menu is; we ate like kings and queens and barely got through tasting half the menu. The drinks came out quickly and were well made. They offered all sorts of flavored mimosas and margs (at a small upcharge); I stuck with classic OJ mimosas but friends at the table loved trying the variety of options. Overall, service was great. Our waitress was attentive, quick, and kept great track of all the tapas we ordered. As I mentioned, the flow and timing of receiving our first round of food could've been improved - but it didn't ruin the experience. Looking forward to my next brunch here!
