Tonkotsu

Had a great experienced here, I spilled my tsukemen soup and they replaced it with a new one and cleaned our table. Didn't expect a full bowl of soup. Everything tasted amazing the tsukemen was very rich and tasty! We went late afternoon so there wasn't any wait.

Drinks menu (alcoholic offerings). The Yuzu Beer is amazing.

Been wanting to come back since its rebranding from Tsujita. Arrived full of excitement and anticipation, and left with so happy and full! Expectations exceeded indeed! We went early to avoid the dinner crowd, and were seated promptly even though we were waiting for two more to join us. The super nice young man working there brought us water while we waited without us asking, and embodied the nicest, most friendly, patient and attentive service throughout the rest of our evening even though he was the only server working. My favorites from before were the Deluxe Tonkotsu Ramen, Takoyaki, and the Spicy Gyoza (I ask for spicy on the side), and all three tasted just as scrumptious as I had remembered, if not better. Of note, I actually was not a fan of takoyaki until this establishment made me a fan, with that crispy outer shell and just such savorily creaminess on the inside. The gyoza was lightly fried, perfectly, with.one of the best fresh meat filling ever! The ramen here became my new favorite in the SGV area from before, and remains deservedly so with that dreamily richly flavorful broth, fresh noodles, thinly sliced chaushu, and perfectly cooked eggs. The new menu also boasts some new specialties, so we also ordered their Jiro Style Ramen. In a word, WOW! The rich broth was gloriously garlicky in all the best ways, and the crunch from the cabbage and bean sprouts accompanied the thicker ramen noodles just slurp-fully perfect. To note, my bf, who really does not like bean sprouts (not even in Pho), lovingly scarfed it all down this ramen with gusto. And, now I have two favorite ramen dishes at this establishment! We were curious, even though we were already full, so we got a small Raspberry Kakigori to share for dessert. As someone who grew up loving Taiwanese shaved ice, this completely blew all my childhood memories out of the water. The shaved ice was this most pillowy snow with an insanely perfect sweetness and creaminess, and I don't even like milk, until now, especially with that raspberry jammy goodness. My bf is actually not a fan at all of shaved ice ever, but this Kakigori made him a believer! The location remains clean and welcoming, as is the impeccable service. Parking is terrible above ground in this plaza, but amply available underground. Each parking spot is also super spacious, which is immensely appreciated. Highly, highly recommend!

This was Killer Noodle, then Tsujita, and now Tsuke! I'll always miss the extremely numbing and spicy noodles from Killer Noodle, but alas, it's not palatable to weak non spice eaters. But I digress. Set up and the way you eat the tsukemen. Dip the noodles, enjoy it with the slice of lime juice added in. Very rich strong broth, a bit salty but if you space it out with the noodles (chewy and delicious texture), making sure you get it to cover the noodles as much as you can, it events out. Can never go wrong with ramen soft gooey yolk eggs and the nori adds a bit of crunch so long as you keep it dry. Generous portion, a little bit more than halfway through I was getting full. Ambiance is a bit fancier and nicer looking with a bit more modern decor (similar to when they were Tsujita). I came on a weekday for a later lunch and there was no line or wait. Seated immediately, though there were a couple other customers. Staff were friendly and welcoming and food came out quickly too.

Came during lunch and got seated really quickly. Food was a bit on the pricier side, but it comes with toppings that you'd usually have to pay extra for at other ramen spots so it ends up being about the same overall. Deluxe Tsukemen: This is a dipping-style ramen. The broth was rich and creamy, the noodles had a great bouncy texture, and the chashu was really well-cooked and tender. Deluxe Tonkotsu: Everything was well-balanced here; the broth, toppings, and chashu all came together nicely. Karaage: Super juicy and not dry at all, but the portion is pretty small. Still, it's a great appetizer to start with. Parking can get pretty busy since the plaza has a lot of shops, but if the main lot is full, there's an underground garage with plenty of free parking.

Came here right when it opened and was seated immediately. Got the egg tsukemen and it was delicious. They are pretty understaffed so there's only one server. As the restaurant got busier, service got slower. To no fault of the server though, there's just too many people to serve. Food is good but patience is key!

Got the deluxe soup and deluxe dip. Dip was way too salty for my liking. I had like 2 bites then ended up putting the noods in the soup instead. Chicken karage was overly fried. Would not order that again if I ever come back. Service was fairly quick given there was only one waiter. This parking lot can get a bit busy up top since it's shared w other shops but luckily I was able to snag a spot right outside. There's also parking downstairs.

Food is great, pricy but worth it for the quality They have side chili that is pretty spicy, very surprising for a ramen restaurant The karage and gyozas are good for appetizers

Tsuke is an artisan noodle house known for their unique specialty dish tsukemen which we've tried before they rebranded. But for our first visit after the rebrand, we tried the regular tonkotsu, the tantanmen, and some spicy gyoza. All were decent versions of these dishes, service was friendly and helpful, and the vibes were chill. Prices are a tad high for the portions and while our dishes were adequate, the tsukemen is definitely the way to go here.  Tsukemen is a dipping type of ramen where the savory hot broth is served separately and the thicker noodles (typically served cold) are dipped into it instead of immersed. It's a fun way to get some noodles and their tsukemen is excellent here - definitely what we'll return for. For starters we tried their spicy gyoza and these were fantastic - nicely fried gyoza with just the right amount of kick in the sauce - definitely would get these again.  I'm a sucker for any tan tan or dan dan noodle dishes so I couldn't resist trying theirs for my main lunch dish. Their version is more true to the Japanese style - blending an umami broth with slightly sweet peanut sauce for a savory/sweet combo. I think it's a quality dish if you love authentic tantanmen - but I'm personally not a fan of savory and sweet together so this isn't something I'd get again. Also, the ground pork was charred black and almost seemed burnt so I wasn't a fan of that. Hubby got the Ajitama tonkotsu ramen that comes with egg and thinly sliced pork. He said the flavor was good but he was not impressed with the portion size compared to the price. It did seem sort of small - definitely smaller than my tantanmen. So this isn't something we'd order again. We both got our spice level 1 and numbness level zero at the recommendation of the server (thank you!). Our dishes were very mild and next time I'd probably get spice level 2 and numbness 1 as I do like a little more kick to my noodle dishes and our current order was pretty mild (almost no kick at all).  Formerly known as Tsujita - they recently rebranded to Tsuke but under the same owners and mostly the same everything except a few new menu items. Vibes are lively and minimalist with warm colors - it's cozy and inviting. The servers are super nice and helpful.  They're located in a large shopping plaza - and even though there's plenty of parking in the garage below, it gets a little crazy up top with people circling and honking. Once we got down into the garage it was quiet with tons of empty spaces around noon on a weekday. I used to live nearby and this is a popular area that gets insane on the weekends so bring your patience.  All in all we had a decent visit and fondly remember the tsukemen when it was Tsujita so we'll likely return for more of that specialty noodle dish!

Getting tsukemen from here is a must. After all, tsukemen is their signature dish. Every bowl includes artisan noodles, lime, and a sheet of nori. A dipping broth is served on the side and is full of umami flavor. I highly recommend adding the soft boiled seasoned egg, which is delicious and has a wonderful texture. As for the chashu, it is tender and tasty. However, the real star is the delicious broth. The deluxe tsukemen is a great and popular choice to have some of everything. This is what my husband always orders. Each bowl is a decent portion size and is quite a filling dish. Service was excellent during my most recent visit. Our order was taken in a timely manner, while our food was served within 15 minutes and came out hot. It is also great that there is a large parking lot.

Came for dinner and had a great experience! Ordeded the deluxe tsukemen, tonkotsu ramen, takoyaki, and raspberry kakigori. They were all pretty solid with the tsukemen and kakigori being our favorites. The interior was nice and customer service was excellent as well. Highly recommend if you're craving some dipping noodles!

Came in for the Deluxe Tsukemen and it hit the spot. The noodles were bouncy and chewy, and the dipping sauce was rich, flavorful, and packed with bits of pork and veggies. There was a hint of spicy which I liked. You can tell care went into the broth. Service was pretty standard, but the food definitely carried the experience. Would come back for the tsukemen alone.

Large Deluxe Tsukemen and Tantanmen With Soup

Came here on Christmas Day, and thankfully there was no wait like some of the other Asian restaurants in the area! The waitress was very helpful even with the many requests I had to make my little one comfortable, so thank you! I got the large deluxe tsukemen and my husband got the tantanmen. The food took a while to come out but looked delicious when it finally arrived. The portion was big and they give a good amount of dipping broth that was very umami. Squeeze the lime juice on the noodles and dip as you eat! My husband's tantanmen had a strong peanut taste to it and despite being level 5 spicy it wasn't too bad. The soup was on the thicker side, in case you're looking for a thinner consistency (maybe go with the other ramen choices instead). And although we didn't order any, they have several beers available. Overall, this was a perfect little Christmas lunch for us without feeling overwhelmed by the crowds.

Went to Tsuke and ordered the Tantanmen--essentially a dan dan noodle with a Japanese twist--and it was outstanding. The flavors were bold yet beautifully balanced, with a rich, thick sauce that clung perfectly to the chewy noodles. Spicy but not overpowering, just the kind of heat that keeps you coming back for the next bite. Thoughtfully executed and deeply satisfying. Another spot that truly delivers on flavor.

I had a weekend dinner at Tsujita LA Artisan Noodle with our group of four back in March 2025. The…read moreother two ordered tsukemen ($26.50 for the spicy deluxe and $23.50 for the spicy chasu) and found it very salty because they chose to consume it not by dipping the noodles in the bowl of broth, but rather by pouring all the broth from the bowl into the noodles, trying to recreate a normal bowl of ramen. I can't speak for them, but I will say, if you order the tsukemen and find that you want more dipping broth, that will be an extra charge. Order a regular bowl of ramen if you do not plan to dip the brothless noodles into the broth for each bite. BF and I both tried the spicy tuna bowl ($7.95), chashu bowl ($8.95), and tonkotsu ramen ($15.95). The bowls are a little smaller than the ramen bowls and are a great option if you want a light meal without feeling super full. The tonkotsu ramen had a slightly rich broth that was flavorful and a decent portion of noodles. We opted not to order the ramen with the egg since we were also trying the rice bowls. The three items were more than enough for the two of us and a good variety of food. Parking here is horrible at the street level, so head downstairs for the two levels of underground parking.

I know they owned Killer Noodle and brought it back for a day or so during some weeks, but still. I feel like I can partly blame those who can't handle spice, numbing or not, and or people with generally normie tastes. Anyways, enough of that diatribe. Parking can get horrible and fisted here, even though there's parking in the pit. The best bet is to just park at the 99 Ranch Market across the street and walk over. This restaurant also gets super busy too and there's limited tables and seating inside for how popular it is. They did collabs too, like the Naruto one. There were instructions on how to properly eat tsukemen and staff was friendly and polite too. I know they tried to make the ambiance a bit nicer and fancier, but with the constant slew of customers and people, you can only do so much. Since it's a tsukemen restaurant, I always just got tsukemen here. I'd get the spicy chashu tsukemen. Comes with a generous portion of chashu pork and is made with their homemade spices. It also comes with a soft boiled egg, a slice of lime to squeeze in for taste, green onions and a sheet nori. After dipping the noodles, you can ask for soup wari to eat the rest of the broth in. It's a delicious and hefty portion and sorta justifies the $30 for a bowl of tsukemen thing. Flavorful broth with a depth of delicious spices. Nice thick noodles that absorb the broth nicely. I like that you get a good amount of chashu. Adding the lime makes the noodles a bit more refreshing if you get a bit tired of the taste. Spicy doesn't make it spicy at all, but at the very least gave a bit of heat to it. There's other Tsujitas out there, just now a bit farther.

We sat down and started looking at the menu - now a digital one with a tablet on every table. You can browse the menu on the tablet and put your order in on it. We ordered Okinawa soba and miso ramen. For $15 each, it seems like a decent price. We like the broths here. It's rich and deep without a layer of fat on top like most of the ramen shops. The noodles are firm with a nice bite to it. I especially like the Okinawa soba because it uses thicker noodles. The meat is tender and has a sweet flavor to it. If I had to nitpick, they don't have the Okinawa chili vinegar to go with the soba. It's a small shop. The walls are sprayed painted to look like a Japanese night time izakaya vibe. We had to approach him and ask where to sit because he didn't even look up. It felt unwelcoming and very different from how this place used to be. On top of that, the food just wasn't the same the flavor was lacking, and the overall experience didn't feel like the restaurant we've supported for years. It's disappointing to say, but this place has lost our business. Great customer service and consistent quality matter, and sadly both were missing today.
