Delicious, fresh Ramen. Yummy al dente noodles and clean flavors. We also got some sushi, which was pretty good considering this is a Ramen spot, a little too heavy handed on the sauces or oils, but the rice was also very delicious. To start I've been to Japan and I live in the PNW where we do seafood and Japanese food pretty well. I had no idea Denver was the place for amazing sushi and ramen. Uncle makes me want to move to Denver! To start the ambiance is really chill and inviting with warm lighting and offers countertop as well as table seating. Our server was amazing and explained the menu well and made some recommendations that did not disappoint. We ordered way to much food but I do not regret that because I got to try so many amazing dishes. Despite ordering so many options they even brought us a chilled tofu dish complimentary (no clue why but not complaining) and it was lovely! We shared the uncle salad (amazing!), thai shrimp, eggplant buns, several different nigiri/aburi nigiri and sashimi and the toro toro and spicy tuna roll. All of the sushi was fresh and had excellent pairing of accompaniments. The only dish that I remember being a miss was the soft shell crab buns. The proportion of bun to interior was off and there was way too much mayo. Everyone got their own ramen which they seemed to love. I ordered the Veggie Khao Soi per our servers recommendation and I am still thinking about it weeks later. It was a curry/ramen mix and had big chunks of trumpet mushrooms in it and the perfect amount of spice that I love. Everything tasted fresh, and the quality of the ingredients really stood out. The only reason I'm giving four stars instead of five is that the wait can be pretty long, and for the price, I was hoping for a slightly bigger portion. They have a happy hour menu Monday thru Saturday 5-7pm that has an extensive food section that is $3 off their normal menu price. I really liked their fried chicken that has an umami sweet fish sauce glaze. Their hamachi crudo and spicy cucumber was solid as well. Pork belly bao bun was fine - I just wish the pork belly was a little more flavorful and tender. If you are getting ramen, I recommend getting the spicy chicken ramen. This broth is most similar to spicy tonkatsu with the creaminess. I was able to sub out the chicken for pork belly instead - pork belly is not melt-in-your-mouth tender but tender enough. The shoyu broth in their chashu and duck ramen is pretty mid, so I wouldn't get this unless you have low spice tolerance. Service was friendly. Only street parking, but there were plenty of spots at 6pm on a Saturday nearby - the closer spots did fill up fast though. read more

I have probably dined at this location 5 times and at their other location multiple times and this is a regular spot for husband and I during winters for Ramen- which is what they're known for. This time around, we tried different things on their menu - the khao soi and the Dan Dan. I am pleasantly surprised at how good the Dan Dan was as was the khao soi! Extremely flavorful! Our absolute regular order is the soft shell crab and char sui buns! Service has always been nice! Be prepared to wait if you want to dine at this location especially on weekends. Uncle is probably the most well-known ramen spot in Denver. It's not unlikely for people to think of Uncle first when finding a ramen spot. For as long as I've been in Denver, Uncle has had that reputation. Unfortunately, when I last visited, I was greatly disappointed. First off, the service was mediocre. We had to wait quite a while to place our orders and once we did, we weren't checked on until we were done with our meals. The seating is also a cool concept with groups of people sharing a long table, but with poor execution. The chairs were so closely spaced that the person next to me and I were constantly bumping elbows and I was barely able to get through with how closely people were spaced from table to table as well. The cocktail was great but when removing all the ice, there was maybe 3-4 sips left. The ramen was tasty but extremely salty and there was maybe 3-4 bites of duck. Overall, not impressed with the food either. I really want to like Uncle but with my last experience, I don't think I will be going back nor can I recommend it for now. read more

Between the two broths, I preferred the Veggie Khao Soi but I also loved the Spicy Chicken Ramen which is saying something because I'm not a fan of ramen. Definitely pricy, but worth it. The ramen is a whole different story. We waited over an hour for the ramen to be served. I got the chashu ramen, and the pork belly was very soft and supple. However, the only other toppings were bean sprouts, scallions, an egg, and ARUGULA? I was already getting nervous. On first impression the broth was very thin and already separating. It tasted even worse than it looked. I've had better instant ramen broth. Either their broth is usually that bad, or I swear they just ran out and had to try to whip something up in an hour. Unfortunately, it was a last minute stop on a Thursday night and we didn't realize it'd be busy. It was actually packed, with a few parties waiting to be seated and another waiting on their to go order. We decided we'd just order for takeout. Pros: ordering was quick, the to go food came out quickly, the ambiance appeared clean and modern looking and the ramen was really good. Great broth, great amount of spicy and when I even ate the leftovers the next day it was still just as good. Cons: while I was ordering, they told me that they couldn't do the dan dan noodles or pad Thai to go and they wouldn't explain why. It seemed weird to me since those are commonly to go made dishes. The dishes were a little on the expensive side. The biggest con of this place was that I was corrected (as a Chinese person) on my pronunciation of certain dishes. That was when I realized I was the only Asian person present at this restaurant. I understand it's Denver, but being corrected on a dish that is from my culture was wild. It was our anniversary trip/ dinner and with the chilly weather and flu-ish feeling we were up for some ramen! The reviews did say they have a wait, 2-3 hours or a line that sometimes runs around the block, so we went to the less popular newer location instead. We did have to wait about 15-20 mins though (not too bad). When asked if we were celebrating anything, we did say our anniversary. They did sent us out a cold tofu appetiser that was delicious that we somehow would not have ordered ourselves reading the description.
