I'm always on the look out for matcha lattes, especially when I see Filipino flavors like ube, pandan and banana q on the menu. Sign me up. We were on a little vacation out in the desert and to my pleasant surprise, Varraco came up. It was a must to stop in and support a Filipino owned business. The iced pandan matcha latte was the perfect balance of pandan and matcha. Both flavors were apparent in the drink. The next day we tried the ube matcha latte and strawberry matcha latte. The ube flavor was a little less pronounced than I had wanted, but it was there and still a good offering. The strawberry one was very good, bc that combo is always a winner. The strawberry on the bottom tasted fresh and natural, no artificial flavors. Though I'm not as much of a coffee drinker, I am happy to see them showcasing coffee from the Philippines. Loved all the Filipino touches in the decor and the photo representation on the wall. All things Philippines, down to their pastries like ube and pandan bibingka, as well as adobo pandesal (a childhood favorite, and beef empanadas. Proud to see Varracco feature the culture. Decided just to check out this coffee spot on the way to Palm Springs. I tried the pandan latte but was disappointed as I couldn't taste the pandan flavor at all. Love this adorable little coffee shop where apparently the famous tennis players in town for Indian Wells get coffee. We think we saw a player but are not sure. I had the ube latte which was very good - 4/5 but the real surprise was their homemade empanadas. I had a beef empanada on the recommendation of the cashier and it was an excellent snack 5/5. There were so many other specialty drinks and baked items and other refrigerated concoctions in the back refrigerator (overnight chia seed/oats? something beautifully purple) that I'd like to go back and try. read more

Anniversary weekend, we found a Filipino owned coffee shop called Varraco Coffee + Roasters in Palm Dessert. I had the Iced Ube Latte and my wife had the Iced Brown Sugar Varraco coffee. Varraco comes from the word Barako which is the Liberica coffee that you'll find in the Philippines. The Ube Latte was a dark roast, which was a little too bitter for me, but the Brown Sugar was a perfect blend. My wife tells me that Batangueños love their coffee dark roast and they put it on their rice for breakfast. The service was friendly and fast. The place is a nice size coffee place, and has a nice amount of merchandise. read more

Love the atmosphere inside. Plenty of seating indoors to chill and rest and escape the heat. Employees were super friendly about their products. I ended up with a basic vanilla latte with oat milk. I ordered a banana q latte with secret milk and an adobo pan de sal. My husband ordered the pandan latte with secret milk. He was not too satisfied with his drink. He couldn't really taste the pandan.. I have to agree. On the other hand, my latte was a little thick but good and you can definitely taste the flavor of a banana q. The adobo pan de sal was good too... the filling was bursting with adobo flavor and the dough was light. I was hoping to try the pandan bibingka but unfortunately, they didn't have it. The service was amazing, right from when I entered the roaster welcomed me and they took my order right away, the speed was great I was only there for like 5 minutes but the coffee was very watered down and the color was very milky, I'm not sure if this is how they make they're coffee but it didn't even taste like coffee, it was just milk. Tried their BananaQ Matcha, Cold Brew, and Pandan Bibingka, and all were really good. The cold brew was fresh, clean, and just really good quality coffee. The bananaq matcha was delicious and nostalgic. It tasted just like the classic banana que (caramelized bananas) I grew up eating in the Philippines. They were packed both days I visited (Sat/Sun), but the workers were efficient and friendly. We also met the owner and learned more about their story and the coffee beans' origins in the philippines. The shop itself is small on the inside, but they had plenty of seats and tables right outside. Also, incredibly dog-friendly, which is such a bonus. Definitely a must-try when in the area. read more

Amazing coffee shop stayed in town at a hotel close to this shop and when we saw ube and pandan on the yelp menu we quickly decided to visit. Best decision ever for an afternoon pick me up. I ordered the pandan latte comes with two shots of espresso and hubby order ube matcha and they both wowed! Decided to try the bibingka couldn't decide which flavor so got one of each also yummy treat to go along with the afternoon coffee it was perfection! Ube is a purple yam popular in the Philippines, which gives it that striking purple color. It also features coconut milk, giving it a richer taste and feel. It's sweet, but a subdued sweetness. I also had a beef empanada and an adobo pandesal. Both were flavorful and enjoyable. This place is cool. I don't drink much caffeine, but my husband is quite the coffee drinker and always enjoys trying new places. He said the pour over was really good. I had an Ube Matcha and a hot chocolate for our daughter. For little bites we got a sugar waffle and fruit danish. Both tasty! My husband loved overhearing they don't serve decaf coffee. Ha! I loved seeing they have a few grab and go options to make things easy. Staff was friendly, place is clean and well kept. I was excited to find a Filipino coffee shop in the desert! They have a mix of classic and Filipino-inspired coffee drinks. I opted to get the Ube iced coffee and it was just okay. I had no idea it included coconut milk, but I felt that it washed out the flavor of the ube/was not as sweet as I wanted it to be. Same thing with the Pandan iced coffee. Next time I'll try their Varraco iced coffee instead... Also, their interior is really nice but I would not recommend for studying as there are limited seats indoors. read more

Varraco Coffee might just be my favorite spot in the area. What really stood out was seeing the owner roasting the beans right there on the coffee roaster machine--everything's done in-house, and you can actually watch the process. That alone sets the vibe. I ended up buying a bag of their coffee to take home, that's how good it was. The coffee itself was solid, 5 out of 5. I forced my mother to drive me here. ( ﾟﾟ；) We got the Banana Q, Ube, Pandan lattes, and the Ube matcha. Coconut gives me a headache, but I will sacrifice my comfort for the Pandan latte, normally made with CO. The baristas are able to make substitutions, but I wanted to try the latte as is before making changes. The Banana Q latte with almond milk though was the best out of all of them. Drink was excellent. Tried the iced strawberry matcha latte and you can taste the quality of the matcha. Not extremely high grade but very good. The service was efficient. The ambience in the location was stale. Very quiet which is nice but nothing from the baristas. No good mornings or even smiles. Not rude but not welcoming. Maybe I caught them on an off day or maybe that's the setting. Either way drink is good so I'm not opposed to coming back. read more

This is not your average coffee shop, the employees and owners that work here are coffee artisans. Every latte, coffee, and creation that comes out of Varraco is delicious and unique. Everyone that I've met that works there is very nice, attentive, and welcoming. I was surprised that I got old fashioned style over heated cappuccino there, since it's marketed as a specialty coffee. I start finding this disrespectful to the coffee culture which is thriving right now in California and United States in general. I do understand the confusion coming because of the flat white integration to the market, but I think all specialty places must be adjusted towards WBC standards. They have a roasting machine inside an actual shop which is cool. It smells like coffee roasting, and thats the vibe obviously for coffee geeks like me. I also tried ube and it was good. I spotted this on Yelp and we thought we give it a try. We walked in to this small coffee shop it smelled of roasted coffee and baked goods. The line was long and it was a little crowded. They have their roasting machine near the front door and a few chairs and tables inside as well. The line moved quickly and staff were great and quick to get orders out. Varraco was the 2nd coffee shop we visited while on vacation in Palm Desert. The shop is located in a small strip plaza facing the main street, Hwy 111. We popped in as the morning heat was kicking up and were greeted with crisp AC and a warm welcome from Austin. There is parking parallel to the street as well as a larger parking lot behind the businesses. We received 5 star service from Austin. He gave us the history of shop, told us the home made pastries and cookies are from a Filipina currently doing pop ups in LA where we are from. We discussed other local coffee shops in the area that were some of his favorites as well. Love a good local recommendation. He explained that while the Filipino items are fresh, homemade, the muffins and non-Filipino items are purchased locally. Some of the things I appreciated about Varraco, aside from the great service: -dog friendly -fresh roasting happens there -clean, modern, minimal design and decor. -a table available for local businesses/vendors to display their business cards -bagged coffee, cups, and shirts are available for purchase -they also offer gift cards We also enjoyed the coffee and pastries we ordered: -Ube Latte (not too sweet, just the way I like it) -Adobo Pan De Sal (my favorite, I could eat that every day) -Ham and Cheese Ensaymada The owner and his son walked in as we were eating. We didn't want to stop and bother him, but it was nice to see management coming in treating their staff with respect and being a part of the daily operations. What a fabulous place. Fantastic vibes. The service here is phenomenal - like beyond. A team member saw me waiting outside with my dog and invited me in, gave me a pup cup and dog cookies and was just the kindest human. Coffee was DELICIOUS. I then watched the same staff member make sure a delivery person who was loading up the store room left with coffee and a drink. Kindness is everything and Varraco is just so full of it.
