This was our first time at Bacán and we had a fantastic dinner. We were celebrating a birthday and made our reservation online. We would absolutely eat here again. Atmosphere: From the moment you enter The Wave hotel the feeling of luxury abounds, with high fashion and modern design throughout. Bacán is a beautiful restaurant eloquently set with leather seating and the soft tone lighting that oozes class. Perfect place to impress that special someone. Food: We started with the Lobster & Burrata Tostada and the Charred Pulpo, per our waitress' recommendation and we're blown away by these dishes. The Pulpo was cooked just right and the chimichurri had the exact level of spice to match. My wife absolutely loved the tostados and though I typically shy away from lobster, thought they were delicious as well. Note, lobster is not heated. For our meals I debated between the Duck Breast, Burger, or Ribeye and decided on the 12oz Ribeye, ordered medium. It came out cooked to a perfect medium with gridiron marks so perfect, you'd think they were drawn on. The sauce accompanying really complimented the steak. My wife ordered the Market Fish. It was cooked well and flaked beautifully, the fish itself lacked a ton of flavor but when paired with the quinoa and foam, the different elements really all came together. We finished our meal with the Esfera De Chocolate. It was served with chocolate mole drizzled table side revealing the strawberry ice cream inside. Get the camera ready for the social media story for this part. They added 'Happy Birthday' drizzle to the serving plate which was a nice touch. Service: The service was fantastic, our waitress really made an effort to connect with us and build the relationship. She made great recommendations throughout the evening. I noticed the entire staff prioritizing cleanliness, from the glasses being spotless to regular hand washing in the kitchen. The service met the standards you would expect for a restaurant like this. Overall, we had a great night at Bacán and would absolutely recommend for dinner when you're feeling like elevating both your environment and tastebuds. read more

I can say the food was good and seasoned perfectly! I went with a group of friends for a date night and I had the Branzino recommended by our waiter. Thankfully I listened to his recommendation and it was my first time having branzino so I was nervous but it was so good! Scallops for the appetizer was probably the best tasting scallops I've ever had. Oh & the decor was classy! Made for great photos/videos! Friendly staff and cool decor. Nice but didn't feel stuffy or overdone. Service was good and attentive. Food was excellent. Two of us ordered the Don Juan cocktail and it was tasty. We then shared 3 tapas style apps between 4 of us and it worked. Pork Belly, Lobster tostadas, and the octopus were all excellent. For entrees, our table had: red snapper, branzino, chicken and the short ribs. Everyone was pleased with their orders and while we thought the portions were going to be small, that was not the case. This place is a great restaurant to visit without a doubt. The only bad thing is the prices but the food is amazing. The service is great as well and the ambiance is very relaxing. All the flavors combine in just one dish. The salads, vegetables and meats are incredible to have. I have no words to explain how is the food, because the flavors are just amazing. Very impressed by the chef's 5-course tasting menu at Bacán last night! This place is so gorgeous and dramatic, and the Wave Hotel it is in is so eye-catching I wish I had gotten more photos! But on to the food! I just can't get over how perfectly balanced each dish was in flavor and presentation. From the cobia maki with lemongrass gel, compressed squash, and citrus ice, to the poussin and foie with foie snow, preserved cranberry, and autumn-spiced foie mousse in a phyllo cylinder, every dish was simply incredible! Our first Bacan experience 6 months ago was very satisfying. Unfortunately, our recent visit was not equal to the first: while the food and cocktails/mocktails were delicious (but why did they change the hammachi recipe for the worse by adding sesame seeds?--totally unnecessary imo), the portion sizes were disappointingly small making the experience feel overpriced (almost $200/pp). read more

On the Michelin guide for a reason! Phenomenal! Atmosphere: one word, beautiful. First off, it's in the wave hotel, it's definitely worth just visiting if you haven't, they have a beautiful back area to relax with family or friends. Inside is amazing, everywhere you walk, it just has art in your face, and a bar as well! Also, it's moderate volume and not as busy as I thought for a weekend. Service: We reserved ahead of time on a Saturday but it was not as busy as I thought, we were sat right away. The service was fantastic, gave recommendations, explained the menu and made sure we were accommodated every time we needed something. Drink: I had a Parcha Sour and it was delicious, one of my favorite cocktails ever. You can taste every flavor it describes and it all blends well and works. Food: For apps, we kept it simple and ordered a House Parker Rolls, and it was delicious with the chipotle-agave butter, sweet and savory, the perfect blend. For entrees, my wife and I shared a Whole Truffle Chicken Two Ways and it was sublime, from the protein to the potatoes and the brava sauce definitely brought the whole entree together, very well done! Dessert: We ordered the Tres Leches Cake and honestly, it looked like a piece of art, I didn't even want to eat it. Nonetheless I did and it was amazing, creamy, smooth, not too sweet or too bland, it was on point. Verdict: Looking for high class Spanish food and cocktails? This is it! Given the price and prior events I've attended at The Wave, I had really high expectations of Bacan. Value was 3/5, ambience was 5/5, and service was 4/5. I was really let down by the menu not allowing you to add any proteins to a salad, and there were zero chicken options unless you wanted an entire chicken. If you're not into seafood or red meats, you might have a difficult time here. I settled for the branzino and my husband got the burger. The kale on the branzino was so charred it was inedible, but perhaps some people like that. The branzino itself tasted great, but for $42 it was way overpriced. Our servers were kind, but not very accommodating. When there are really great restaurants in Orlando, and many in this price range, you expect a certain level of professionalism and accommodation. We might give it another try sometime next year, but I have a feeling this is more designed for the passing hotel guests verses the locals. read more

In a word: Wow! Brought my in-laws here when they were in town. Have had a few friends tell us this place is good, and it's been getting buzz. That typically leaves me a little concerned, because hype is often not a great thing. In this case, it is well deserved. First, we were welcomed by our amazing server Ibrahim. He was so kind and fun, just the right balance of attentive and not over-bearing. Amazing recommendations. What we had. Appetizers: Octopus - wow wow wow. Best grilled octopus I've ever had. Perfectly charred, the sauces and toppings were amazing, and all around perfection. Squash Blossoms - different, but a good flavor. Combo of sweet and savory. It's not much food for the cost, definitely not great value, but very delicious and completely unique. Beef Tartare - I generally like beef Tartare. This is the only thing we had that didn't really blow me away. The consistency gave me the feeling of a spicy tuna, with a lot of mayo mixed in. It was fine, but I'd prefer my beef Tartare with just beef. Mains: Bacan Burger - absolute perfection. Juicy, flavorful, the toppings were awesome. *Chef's kiss* Also, don't sleep on the yuca fries on the side with whatever that green sauce was. Yum. That was my order, so the other mains I tried bites of. Short Rib - different. Was more a pot roast consistency than what I'm used to (and Ibrahim told us it wasn't the typical 8 hour braised you would expect). The flavor was excellent though. Little BBQ tang to it that I enjoyed, but wifey it wasn't her favorite (she really doesn't like BBQ). Florida Whole Snapper - winner of the meal. Flavor, texture, presentation were wonderful. I don't even have words for this one. My mother-in-law took a spoon and ate up the sauce at the end. Dessert: Banana Tart - presentation on point, taste on point, fruit on the side was fresh, gold flake was a nice touch. Phenomenal. Chocolate Cake (it's called something more fancy) - definitely not as good as the banana tart, but the melting chocolate ball was pretty neat. The sorbet and fruit were good, it was just the cake itself that I didn't love. Anyways, highly, highly recommend. Make sure you ask for Ibrahim, get the snapper, live your life in the octopus, and you will be happy for the rest of your days. read more

Came here for my girlfriend's birthday for dinner. This restaurant is inside the Wave Hotel. I love the atmosphere. It's decorated eclectically. They have a valet service which is nice. The food were delicious. Everything tasted right, except for the spare ribs. It was not tender and it came late to the table. Giving them less stars because service was slow, but out server was very nice. If you're looking for something to do after dinner, there's Haven Lounge upstairs. They had a guy playing saxophone and a DJ that plays fun dance music. Would come back again! read more

Bacan is a Latin-inspired, high-end, and glitzy restaurant. I did not know what to expect but what I got was an experience! I love being able to say that. Meaning that I love that a restaurant is willing to go the extra mile to entertain and to please their patrons. Think Cirque du Soleil vs your hometowns fair. The service was not quite as on point as Papa Llama but damn close! It was a fun night with each course building anticipation for the next. Good wine, amazing food and great company, what more could you ask for? Heaven on Earth...... Everything here is expertly plated and executed. Each dish a piece of art. I started with the Foie Gras Cachapa which was great with a fabulous sear, but it was a huge amount of foie and I could not finish it. Next I went for the 10oz Westholme Wagyu Striploin. It was well seared but cooked to the proper temperature. The smokey merken spice was nice. Another huge portion. The potato pillows were fun and inventive. Dessert was the Cream Puff Praline and it was just the right amount of sweetness to finish off the meal. My daughter's and wife's plates will be uploaded with the review. Bacan is worth the extra dollars without a doubt or reservation (no pun intended). I would go back again, and soon. We had a great time visiting. The restaurant is very nice with a huge open kitchen and they also have a nice outdoor area overlooking the sculpture garden. We had a reservation and didn't have to wait to be seated outside. My only complaint is that it was very cool that night and heat lamps would have been nice. Our waitress was friendly and super helpful. In fact, she was getting run around pretty hard by a table next to us and she didn't loose her cool at all. The menu is different and eclectic. I am a huge foodie and this place was not like any place I've visited, but the vibe of the hotel and open bar reminded me a lot of the types of places we have in Tampa. I liked the charred octopus and would highly recommend it on visiting, its gluten free. My husband was impressed with the lobster blue corn tacos as a starter. We would definitely return, I got lots of help on the options that were gluten free. The menu isn't large, but they worked with me to find what was safe to eat. The noise level was moderate and price wise the meal for 2 including 2 drinks was around 150 to 185.00 which is about on par with what I would expect. I am unsure about the parking situation, but there is a huge parking garage that you can park in and there is valet parking. The hotel is absolutely gorgeous by the way, Lake Nona is going to be very very nice when everything is finished. read more

The restaurant is well decorated and the outside was just beautiful. We had a reservation but we had to wait 15-20 minutes to get our table and we were just fine with it. We ordered a couple drinks, entrees, and dessert. I have to admit the food was 5/5, everything tasted and looked amazing. Service was a 1/5, our server barely checked on us and we had to call her constantly so she can bring us more drinks. She was very cut and dry and really looked like she was bothered by us. We still gave her 20% tip. Overall food was delicious worth to come back, but will suggest to have better servers. read more

As soon as you enter the restaurant you will be marveling at the bright art work and remarkable light fixtures that hang from above. It's the perfect place for a romantic evening. Had the pleasure of eating at Bacan while staying at The Wave Hotel. In fact it was so good I came two nights in a row. Really enjoyed everything about this restaurant. Tavistock knows what it is doing when developing and designing restaurants. The hit it out of the park with the atmosphere, service, food and cocktails. First night I came in I started my meal off with "The Mango". This may have been one of the best things I've eaten all year. It's Foie Gras contained in a chocolate, decorated to look like a mango with 24k gold flakes on top. It comes with a spicy sweet jam and toast points. Something about that combination just blew me away. For my entree, I went with the Wagyu Ribeye and Truffle Potatoes. It's a 10oz ribeye so if you're expecting a fatty thick piece of ribeye this isn't it. While I did enjoy the steak, compared to the app I was by no means blown away. I'd say it was an above average steak but nothing memorable. The next night I came in and decided to just go for it and get the Truffle Chicken for 2(was just me). This is one of their signature dishes for good reason. They brine the a whole chicken in truffle oil, cook the whole think rotisserie style then quarter the legs and thighs and deep fry them in truffle oil. It's then garnished with shaved black truffle. Serving size it's definitely more than one person can eat in a sitting, so it was nice to have some leftovers for later. I really enjoyed every part of this dish. The rotisserie chicken was super tender and juicy. The flavor on the fried parts of the chicken were out of this world. If I hadn't had "the mango"the night before this would easily been my favorite thing I've eaten in a while. I finished that meal with the flancocho which was a great way to end my meal. The hotel lobby, check in area, and hotel bar are completely memorizing. The restaurant decor and menu contain upscale influences of the Americas. 5 Stars for a gorgeous restaurant with a few stand-out dishes and great service. I'd been wanting to try Bacan out for ages, since I saw the Peruvian cuisine-infused dishes on the menu. I finally made it out to Lake Nona and was first blown away by the design of the Wave hotel (Bacan is located just inside) and the restaurant itself. We were seated right away and Miles greeted us as our server for the evening. He was as friendly as you'd hope and helped us make some food decisions. A note on the staff- throughout the dinner we were never left with a water glass half empty. It was all hands on deck to make sure empty plates were cleared and your water was full. Thanks to all! We sat at one of the booths and it was great for a group of 4. With that being said, the table was a bit high for the chairs, so don't be surprised if you feel a bit like a kid at the grown-up's table! Haha! They had recently updated the menu, so I was going in a bit blind (normally choosing right off of Yelp based on reviews!). Things we loved: * Octopus anticuchero- Featuring aji mirasol (Peruvian yellow pepper), charred baby corn, and crispy celery root. I can't handle too much spice and this was perfect for me. The octopus was tender and crispy at the ends and we practically lapped up the sauce! * Smoke pork belly "al pastor"- Featuring gooseberry, salsa verde, and compressed pineapple. This was a small dish, but it was overflowing with flavor and the smoke filled cloche presentation was perfection! The pork belly slice was well-rendered, the smoke scent lingered, and the compressed pineapple really gave you that "al pastor" impression. Very well-executed dish! * Truffle crispy potato- Not much to say here except for YUM. Not on the menu-- truffle fries. Next time we'll get that too! *Banana cream tart- Featuring vanilla curd, tropical fruit salsa, and guanabana pearls. This was a standout!! I haven't stopped thinking about this dessert since we had it and it is the dish I'll remember the most. Honestly, each of the desserts we tried were impressive! * The drinks! All of them were great and worth repeating! One thing I'd definitely skip was the lobster and burrata tostada. The lobster was so tough and chewy that I couldn't finish it. We started off with the smoked scallops. They were amazing. The presentation was fun to watch. We agreed, these were the best scallops we've ever had. My wife had the beef short ribs. I tasted it and I agree with her it was very good. I like the sauce, it was on the sweet side. I had the duck. The duck was cooked just right but it was served with Foie Gras. That's a personal taste so I won't comment on it. The sauce was lacking. It was serve with a pumpkin and verse sauce, IMHO it didn't seem to pair well with the duck. The sauce from the short ribs would have been a better pairing. I'm used to English duck served with plum sauce or Asian Breast of Duck serve with Hoisin sauce.
