The food was great. A group of three of us ordered a few dishes to share. The ceviche wasn't our favorite- a bit fishy. The lobster and bursts tostados were great! The scallops were cooked to perfection and had a great presentation - they came in a "smoke chamber". The baby eggplant dish was also very flavorful. The salad was also great, but wished it was chopped. We also had the Esfera De Chocolate - the fondant cake was a bit dry, but the mole sauce and strawberries were a perfect balance. I hate to take a star off. The staff was amazing. The setting is surprisingly inside a hotel, but reminded me of a few restaurants in Lima like Amaz. The food was delicious. My pisco sour was very sad. I've never sent a drink back but I felt like I was drinking straight lime juice. The remake took forever and we were done with dinner by the time it arrived. It was still lacking the bitters on top. I felt quasi rushed for this reason. I would definitely recommend a reservation as it quickly became packed. So basically my review is missing a star because of the bad pisco sour and the robot server. The robot server was completely out of place. I know some guest were amused by it, but this foodie cringed every time it rolled by. It killed the ambience. For a restaurant catering to higher end clientele, there should be personalized service at all times. I wish they followed the custom of roasted salted Inca corn or root vegetable chips like most Peruvian restaurants in Peru serve at the table while you are reviewing the menu. The mural that was explained as Pachamama was stunning and the story truly fit Pachamama, but that mural did not invoke any feelings of Peruvian or South American art especially about Pachamama. Wow!! This place was really top notch. We had a party of six and started with the rolls, steak tartare and lobster burrata tostada. The beef chiccarones with the tartare were the best I've ever had. The lobster burrata tostada was excellent - very generous portions of succulent lobster and fresh burrata. Then we did a family style meal with the truffle chicken two ways, the flash fried snapper and the skirt steak. We complimented with the fingerling potatoes, grilled veggies and wild mushrooms. Amazing addition to the Lake Nona area. We dined here about 2 weeks ago, we had a reservation so we waited only about 5 minutes. The grounds are BEAUTIFUL, inside and out. There's a free parking garage directly in front, or you can valet. Our server Brad was very helpful. I had the Branzino (cooked perfectly, my husband had the wagyu burger-delicious. We also had the pork belly appetizer (very good) and the scallops. The scallops were very good, but they were placed over some sort of beet mixture, which didn't really go with it. Very convenient to get to from any location since it is literally just off 417 lake Nona (university campus for UCF medical). Located at the @lnwavehotel which is a chique boutique hotel. Very beautiful! Our server was amazing and very attentive (from Venezuela but parent from Haiti) we took all her advice as far as food selection and did not disappoint! My son, who has always traveled with us around the world and has already experienced Michelin star restaurants said food was good, service was amazing and prompt! The last time we had a delightful culinary experience was at the Hôtel Plaza Athénée @lerelaisplaza (we still remember this as one of our memorable dinning experience of 2022). We had octopus which was great! Pork belly phenomenal Lobster burrata tostada was delicious and superb! And finally had the Branzino which I was skeptical to get but it was truly amazing to eat! Bacán is restaurant located inside Wave Hotel. Modern design but still gives off cozy vibes. The servers were incredibly polite and helpful. I went to this restaurant to celebrate my birthday. I told the server that I don't drink alcohol and they brought me a cute pink drink that was pretty good. They have a cute little server robot too that sometimes deliver food to other tables. Charred Pulpo - Huge portion! Has really good charred flavor while still being tender. Grilled Street Corn Ribs - This was amazing! It's basically elote but you eat it like a rib which was a new experience to me. Can't go wrong with cotija cheese! Duck Breast - The flavor of the duck was good but I did find the cut of it was a little bit too thick. I wish they made the cut thinner. Duck is quite dense so when its too thick, its harder to enjoy. I also didn't really enjoy the preserved rainbow swiss chard. I do love preserved vegetables but this one just didn't hit the spot. Esfera De Chocolate - If you love the flavor of rich creamy chocolate, this is for you. This came out as a little too rich for me. Banana Cream Tart - This dessert was really good. The banana didn't taste artificial. And the fruit salsa and guanabana pearls really paired well with the cream!! Highly recommend this to try as a dessert! read more

Our server took time to explain the menu and chefs inspirations. We ordered the lobster tacos to start, the short rib and branzino for the entrees and always make room for dessert. Do not underestimate the tres leches! I've heard a lot about Bacan from many people and had the pleasure of dining there recently. Let me preface this by saying that Bacan went above my expectations when it came to flavors. Bacan has the absolute best steak I have ever eaten, far exceeding a lot of other steakhouses I have eaten at which was shocking. I fully expected the steak to be at a 7-8 out of ten but it's definitely an 11. Everything else was delicious and the atmosphere was great. The Service was warm and prompt. I thoroughly enjoyed the outdoor setting as it was more intimate than inside and was quiet enough to listen to the palm trees adding to the ambiance. Bacan is a definite must return to for me and my only gripe would be that the location is a slightly longer drive than I'm used to since it's in Lake Nona but the food is 100% worth it. read more

Everything from the service to the atmosphere to the food was top notch and I genuinely wish I could rate more than five stars, this place deserves it. Our waitress was so welcoming and explained the highlights of the menu as this was our first visit. We were seated on their outdoor terrace which has a nice relaxed and intimate vibe with the palm trees of the sculpture garden you have views of rustling in the breeze. The food was so good! I started with the Ceviche Hamachi and loved the freshness of everything combined. For the main I had the Short Rib which is atop a sweet potato purée and topped with braised root vegetables and tempura rice. It was flavorful and the perfect portion. I also snuck a bite of my partners NY Strip over salsa roja and it is hands down the best NY Strip I have ever had. The seasoning of the steak was perfect, the cook of it perfect and that creamy acidic salsa roja just added the perfect compliment. I ended my evening with the Spirit of Chocolate, where they pour hot ganache atop of a sparkling chocolate dome to reveal strawberry ice cream. Beautiful, rich and delicious. I was drinking the Volcán Old Fashion, which has traditional old fashion ingredients tweaked to highlight the flavor of mezcal. I highly recommend if you're a mezcal fan! Husband and I came for my birthday. Jay was our server and he truly made our night absolutely perfect. The food was excellent but his personality and attention to detail truly made the night that much better. The hotel itself is so cool, I'd definitely recommend getting there a little early to explore. There was live music (on a Wednesday) that was excellent- in the lobby bar. I've added a few pics from the hotel itself, but the food and service at Bacan was amazing. We started with lobster burrata tostado, my personal favorite of the night. Along with scallops and pork belly- both delicious. For an entree we shared the braised short rib, truffle potatoes and broccoli. For dessert we did the flanchoco and it was phenomenal- best flan I've ever had. Jay made me his version of cafe con leche and it was absolutely perfect. The entire evening was magic.
