Their expertise and passion were evident, which made the experience even better. The brisket was excellent--very moist with a great bark, good flavor, and a satisfying pull. But if you only get one thing, make it the brisket burnt ends. They were absolutely awesome and I highly recommend them. The ribs were a bit too hammy for my personal taste, but that's a preference issue, as I prefer baby back ribs over the spare ribs they served. I tried two of their house-made sausages. The standard house sausage was pretty good, but the jalapeño and cheddar version was even better, adding a great kick of cheese and spice to their basic recipe. The sides were just as impressive as the meat. The dirty rice had some spice and was elevated with delicious shredded brisket mixed in. The cheesy tater casserole was fantastic--very cheesy with a nice peppery flavor and a great texture from the potatoes. For dessert, the cornbread bread pudding was an excellent choice. It was a gooey, decadent dessert with a perfect balance of cornbread and chocolate chips. We also grabbed a tallow chocolate chip cookie to go, saving it to savor later. We chose BAR A barbecue after carefully looking for what we hoped would be the BEST in the Houston area. We saw some great options ( Truth, Triple J, Killen's, and Brisket & Rice were all in the running, and we didn't try any of those so can't say on them). This was a thought out choice and I was super excited to try them! Being a family run operation was really awesome to me as well. First the good to great: the staff was super nice and helpful. The brisket was ah-mazing. Not too Smokey but cooked very tender and delicious! The barbecue sauce was on point. Sauces tend to range from too thin to too thick, too sweet to too spicy but Bar A's hit the bulls eye! Not too thin, not too sweet...I really enjoyed the brisket! Walking up, the smells were incredible! A nice outdoor spot to eat (it was a very mild day and just beautiful out..but I digress). Also, the Mac and Cheese...oh my!! Some of the best I've ever had! The downside: We drove an hour and a half especially to eat here...it was our primary reason for heading up to Montgomery! Getting there around 3pm, you would figure is a sweet spot for a restaurant open from like 11-6 on a Friday. When we went to order as we're trying to figure out the plate we want, you know, 2 meats or 3 meats ...sides, yum, as you're drooling, we were going for the TRINITY Plate. Brisket, rib and sausage...a nice cross section. Nope, we can't do a TRINITY. we only have brisket and turkey left. I know a lot of people love turkey. I'm not one of them and my heart was set on Beef. So now we're on a 1 meat and two sides track I guess. Ok, can we do brisket on the one meat? "Sure I can do that" was the cheery reply. So we got two plates brisket, and I asked could you make that moist cut brisket (my favorite, while my wife always prefers the lean). "Nope, sorry, we're all out of moist brisket". Ok, so one plate with cheesy potato casserole (doesn't that just sound amazing?) and Mac & cheese and one plate With cheesy potato casserole and pinto beans, that way we can get more great tastes and share, right? Oh, and bread, pickles, onions and jalapeños. (The bread is Martins and is always amazing if you know what I'm talking about...I think it's potato roll bread?). Got our plates and start to pay...two $20 plates and no drinks, just water. Over $50! Hmmm, well, the one meat tray with brisket has a $4 up charge. Hmmm. Sat down and got to chowing down! Here's where disappointment sets in. As I said, brisket and sauce was on point. The onions are maybe slightly pickled, not sure, but also very good. The meat, was 3 slices of brisket...4 would have been a sweet spot but eh, 3. The sides. Cheesy potato casserole had the texture of rice...I kept thinking it was rice as I ate it. It had some spice to it but very little flavor. Very disappointing. Mac & cheese--ah-mazing! Pinto beans were like a salt-a-holics take on ranch style beans. Not good. Almost not edible. But I was hungry. I put some sauce on the potato casserole and made it taste ok...still couldn't get Over the rice texture (I'm not saying it had rice, but just had the texture of a rice pilaf ). Two pieces of great bread rounded it out! So overall, disappointed that there wasn't more to choose (ribs, moist brisket, sausage) and I get it, They make so much and sell out then that's good business for them. To the customer who drove and hour and a half to eat there, not so good business. The sides were 1 for 3 in the good to great category and worst of all, after spending $50+ on lunch for 2, I was still hungry. I wouldn't have expected that for sure. I couldn't decide between 3 or 4 star but my missing stars shake out like this: 1 went because of availability and then ultimately being up charged for what was left. This was code for "you did not buy sausage for me the last time you visited SouthernQ". Another Montgomery restaurant my friend told me about that I must visit. This one was listed as one of the top new BBQ restaurants in Texas by Texas Monthly, quite a feat of its own. They are located in a converted house about 2 blocks west of downtown and offer free beer in a cooler. There was no wait surprisingly when I arrived just as they opened. I tried their 2 meat plate which comes with 2 sides and a drink for $24. I chose mac n cheese and cheesy tater casserole. Mac n cheese - a little on the peppery side but good. When you bite into this, you taste the real cheese instead of processed like many Mac n cheeses. Cheesy potato casserole - like a cross between Mac n cheese and a loaded baked potato. It's good but I should have tried the beans to compliment the mac n cheese instead. Too many cheesy starchy items. Beef and garlic sausage - homemade, beefy, garlicky and peppery. This is a thick diameter sausage and I liked it. Brisket - I chose fatty and they ask every customer so you get exactly what you want evey time. It's smoky, tender and peppery. This is obviously prime brisket. Another very good example of prime brisket. Pickles, Onions, jalapeños and bread - they seem to pickle their own onions and pickles. They serve fresh sliced jalapeños and use Martin's potato bread for their complimentarybread slices. Each plate comes with 2 slices. Banana pudding- this one is not your traditional pudding, but in a good way. It comes with a unique topping that seems like pecan meal with mini chocolate chips...the pudding itself is silky smooth and tastes homemade. read more

We came at lunchtime for their Thursday special, a brisket smash burger. The service was friendly, helpful, and efficient. We ordered the combo which includes a brisket smash burger, a side, and a drink. The brisket smash burger is 2 smashed patties with a slice of American cheese on each patty served on a fresh bun. The pickles and pickled onions are on the side and thinly sliced. I enjoyed the pickles and onions with my burger. One of our sides was the dirty rice dressing and the other side was a tallow cookie, both options were delicious. The soft drink options are made with cane sugar and have a diet selection available. The brisket was juicy and flavorful, the rib meat was perfection, and the cheesy sausage was literally dripping with ooey gooey cheese. The meat overall was to die for. Driving around Texas trying BBQ on the Texas Monthly Top 50 list. And Bar-A-BBQ was our 1st stop on a Saturday morning. We arrived at 10:45am just late enough to miss Saturday breakfast but early enough to be the first to get our choice of proteins yet too early for any of the sides. So, we got brisket which looked good and was moist to the bite. We also got both of the sausages which were dripping with delicious flavor on the tray and filled us with deliciousness. Although the cheese & jalapeño sausage was our favorite. We also got to taste the chicken which is the pit master's favorite protein and we can see why. The smoke was definitely on the skin, while the color was singing of deliciousness but the bite of chicken was the best bbq chicken I have tasted on this journey yet. Barbacoa tacos and brisket klobasnek combo straight up baptized my tastebuds. That green sauce? Bright, smooth, with a little slap of heat. The pit crew? Grade A Texas gentlemen. A smoky sunrise well spent in Montgomery. This weekend's BBQ quest took me to Bar-A BBQ in Montgomery, Texas, deep in the heart of smoked-meat country. I wasn't rolling with the Side Dish Queen this time, this was a lone wolf operation. Just me, the truck, and a fire in my belly for brisket. I arrived at 7:45 AM sharp, gunning to be first in line. Mission accomplished. The crew was still setting up, prepping the pits and stacking that legendary cooler full of free beer for the lunch crowd. By 8:00 AM, the doors swung open and the meat gods welcomed me inside. My targets were clear: Barbacoa tacos and a brisket klobasnek! Both came out piping hot, full of flavor, and perfectly portioned to kick off the day with a barbecue blessing. The brisket in that klobasnek was smoky, rich, and wrapped in soft, golden dough that held like a promise. Then came the tortillas. These were pillowy, thick-cut, golden-edged disks of handmade glory. Whoever was back there making those; you're a tortilla deity. I don't know your name, but I'll say grace in it next time I make tacos. The tacos got stacked with juicy barbacoa, onions, cilantro, and that green sauce, cool and zesty with just the right whisper of fire. A bite of that, and suddenly the sunrise hit different. I had a chance to chat with Pitmasters Caleb and Cooper, who were as humble as they were talented. Real-deal folks. You could tell they care about every detail, every tray, and every guest. After a quick thank you and some meat-fueled small talk, I got my 22nd stamp in the Texas Monthly Top 50 passport, grinned like a fool, and rolled on out before most folks even finished breakfast. I am talking full-on heavenly gospel with brisket as the lead soloist. Every bite feels like a spiritual awakening. The ribs fall off the bone like they are repenting for being attached in the first place. The sausage has just the right snap to remind you that joy still exists in this world. And then -- just when you think you have reached your limit -- they hit you with those chocolate chip cookies made with beef tallow. I am not sure what kind of wizardry that is, but they are rich, chewy, and so good they should come with a warning label for emotional attachment. The last couple years around the US, people have been recommending me @bar_a_bbq from PDX, Tampa, LA, and Kansas. It's been on my list, but havent been in Houston for a few yrs. The word on the street was so true. They put the smoke in Smoked Meats. Every meat has a wonderful punch of post oak. From the turkey to the sausages to the brisket. I swear even gnawing on the sparerib bones I could taste it. Maybe that was all in my brain but I'll stand by it. Not just smoke, all the meats had a perfect balance of salt and pepper. Not too salty, not too peppery, baby bear just right. The point felt like it started to melt in my hands (still kept its shape) and the rich buttery fatty flavor just infused into my soul. On the flat side, there was a more intense beefy flavor that balanced out with how fatty the point was. Probably one of my favorite briskets this year. The beef short rib was amazing with a dark bark. Possibly the best smoked beef rib I've had. (Granted I dont get beef ribs often since Im usually solo.) The cook was just perfect. Solidly holding its shape, but tender enough where I was able to pull the meat off with just my fork. Dont forget the cornbread pudding. Such a sweet treat. It was a little sweet for my Japanese taste, but for my raised-in-the-USA tongue, it was perfect. The chocolate with the cornbread melded together. Just bury me in this!!! OH! The pork belly!!! Skin-on pork belly, which I don't see often at TX BBQ joints, felt like I was in a Chinese market that speaks no English. How the pork skin shattered like glass with every bite I took. With every snap, crackle, and snap, I could hear the rice crispy elves getting jealous. Oh lol, I also had breakfast here. The breakfast taco was also a punch in the face with smoke. Perfect way to start the morning. And the brisket kolache was better than kolaches I've had at some specialty shops. The golden exterior with the filling inside. Move over Folgers, this is the best part of waking up. I tell the HOU manager at work that I'll never move out here every time she asks, but who knows. I might have just been swayed. read more

PRO TIP: On Saturdays, only breakfast is available before 10:45am so if you're going for lunch, show up at 10:30am. There was almost no line, and they don't play the "line game" to try and generate higher demand and increase the perceived value of their BBQ. I went for the brisket hoping their cold smoke technique would be a hit. What I had wasn't much smokier than other places and it was kinda salty (and I like extra salt on everything). Brisket also wasn't very tender and failed the 'pull test.' Overall, it was par for the course. I also went on Saturday for the beef rib. I was NOT disappointed - BEST BEEF RIB I'VE EVER HAD. Try all the sides - they're all good. They were out of macaroni & cheese. Weather was good and we sat outside underneath the shady pecan trees. Absolutely the best new barbecue on the northside, maybe anywhere in Houston. Can't wait to see the new Texas Monthly BBQ ratings coming out in a week. In addition to everything being perfect about their food, their service, their little house and their smoke shack, here's why they're at the top of my list: a week ago we took some visitors from New York for their first ever authentic Texas barbecue. On the way down the back steps to the (beautifully shaded) outdoor picnic tables, I tripped and $40 worth of BBQ, sides, and fixings went in the dirt. My guests were already starting to eat so I went back in, snuck up to the cash register and explained I'd like to cut the line and get the exact same order as I'd just received. They quickly assembled it, while keeping up with all the folks who'd waited in line, handed it to me and just kept working. I handed the young lady my credit card but she just shook her head and smiled, went back to checking out the paying customers. Ive lived a half mile from here for a couple years now and i have just discovered Bar A BBQ. The food is incredible! I got the Texan Trio and loved the ribs the most. My wife got the two plate and two sides with chicken and brisket, i ate almost all of her chicken, its the best BBQ chicken hands down that i have ever had. If for no other reason than to get the chicken i will absolutely be back. Everything was very good. This is my second favorite BBQ i have had in Texas, right behind Corkscrew. Also, the line was long when i went, but it moved pretty fast, i had my food and got back out the door in 15 minutes, and the line was out the door. They were fast, efficient and kind. Im excited to stop by next Friday and try the pork belly burnt ends, i hope they are as good as everything else i tried. read more

Montgomery TX is more then just a small town, it's a town destined for greatness and prosperity. Our visit to Bar A BBQ has been on my mind since their food truck days and with the constant quality they share on the gram, it has constantly enticed me for a taste of what they have to offer. We arrived right before opening time and ordered the two meal plates with fatty brisket, pork ribs, turkey, and pulled pork. Side choices were their cheesy tater casserole, brisket dirty rice, mac & cheese, and the cucumber salad, also ordered all the desserts. We dug straight into the food and started with the casserole, man exactly what i've been picturing. Similar to au gratin potatoes, the flavors were rich and creamy with a flavor packed bite that kept us wanting more! I was worried the potatoes wouldn't be tender enough, but they in fact were! Onto the mac & cheese, super creamy and flavorful, notes of cream of mushroom and chicken with perfectly cooked pasta. Personally the cheese level was perfect, I dislike an overly cheesy mac, this was a solid mac! The brisket dirty rice was a meal of it's own, with pieces of chopped running throughout the rice, it was the perfection side dish to accompany a plate of bbq, my wife's favorite in fact! My only note was that I wish it was more moist the rice itself, it lacked the proper texture for my liking. The cucumber salad was a breath of fresh air, alleviating the palate and readying yourself for the next bite. The perfect dish to mellow out the heaviness of barbecue. Pulled Pork was a solid pulled pork, just like any where! I did enjoy the barky texture and simplicity, if needed the bbq sauce was a beautiful addition giving savory and sweetness notes, mustard based for those against mustard! The turkey breast was almost not ordered until I convinced my wife that we needed to try it since turkey is different everywhere but at times all similar. This was spot on turkey breast that was moist and tender with the slightest bite, and was seasoned perfectly yet simply. A slice of this with the casserole was my favorite bite! And man, the pork ribs were something I had been yearning for. The glaze was phenomenal and the tenderness was perfect leaving the perfect bite. Simply perfection The fatty brisket was of course perfect as well, text book brisket with an amazing fat render and texture. The seasoning level was perfect and blended well with all the sides, I personally ate it with the fresh sliced jalapeños for a bit of heat. The half chicken was glazed with an awesome glaze that I wish I could have a side of just to dip the meats in, quite literally the perfect seasoned chicken. It's a must try when visiting! And to finish, the desserts were all great! The tallow chocolate chip oatmeal cookie was immensely soft and oatey which was such a pleasant twist, similar to a chick fil a cookie for reference! The banana pudding had no bananas thankfully but did have the flavor of banana, with a light pudding and a ginger snap cookie crumble that tied in perfectly! And lastly, my favorite dessert, the chocolate chip corn bread pudding! Served warm, the concept is a winner and provides an equally balanced experience. Man i'm honestly still pondering about every little flavor. Overall, this establishment deserves every award/recognition they receive! Class family and class employees with the home style ambiance!
