    You know it's good when the line is out the door. Bagels are super soft and squishy, I prefer a harder crust. I didn't love my onion bagel, basically tasteless onion strands on only one side of my bagel. Veggie cream cheese was also disappointing. The cranberry bagel with honey almond spread was spot on. Next time I'm going for an everything bagel instead.

    I do love their Bagel's very soft and delicious especially their cream cheese. I do love there vegetarian sandwiches it's my top favorite.

    I stopped in to grab a bagel and some chicken noodle soup recently. The owner is super sweet and the staff is fast and efficient.

Having bagels in grad school in Nashville and toasting Lenders Bagels from the grocery most of my life, I never understood what a great bagel should taste like. I tried Shug's bagel but the price point, long lines and crowed interior made me give up on bagels from Dallas until today. The person at the window recommended the Millennial Falcon, an open faced, Sesame Bagel with a Basil Schmear, pickled onions and chili flakes. It was wonderful and the chili flakes gave it a nice extra flavor. My girlfriend chose the Supernova Lox, which was also good but lacked the heat which I love. Doesn't matter. These guys know what they are doing and now I understand the fuss about real bagels. The experience also gives me another data point that supports my theory about great restaurants operating only out of a window. Any restaurant in business for more than a year that only operates out of a window , must have awesomely delicious food. They must because they are only competing on taste and potentially price, while bad weather acts as a natural deterrent. Any Dallas restaurant serving bagels, should take lessons from these guys. We decided to get the Millennial Falcon bagel with Italian Bagel, Garlic & Herb Schmear + Scallion Smear. She let us know that she can split the bagel in half and each half can have its own cream cheese spread, and that was really nice since we get to try different flavors at once. The bagel was warm, airy, and crispy. The smears were delicious! We love the scallion smear since it paired so well with the toppings, but the garlic smear was a bit too strong. They stuffed our bagel with so much toppings that we were full by the time we finished each half. I would love to come back to try more!

Got the millennial falcon ($10.25) which is basically avocado toast on a bagel. you choose the bagel type and the schmear you want. You can choose 2 different schmears. Both the basil and jalapeno were good. I liked it.. pricing is what you would expect. They don't have all the sandwich options like Shug's. But I don't think they're trying to do that. They have a lox bagel sandwich ($14), regular lox and bagel ($12). A regular bagel + schmear will run $5. Personally I'm not crazy about bagels. So it did the trick for me.

The bagel itself was fine. My bigger issue was the service and the missed opportunity. The place was not crowded at all, maybe seven people inside. After we sat down waiting for our order, I noticed a guy in the back literally baking bagels and moving fresh, hot bagels into bins. HOT BAGELS, people. Would it have killed someone to walk 30 feet and offer me one fresh off the line? I had already mentioned it was my first time there and how much I love a warm bagel. I totally understand they cannot do this for every single customer all day long, but when it is quiet and someone is clearly excited about your product, that little extra effort can make a huge difference in customer retention. I worked in customer service my entire life, and I always believed in going the extra mile when you can - "accomodating when you can be" is a great customer service motto! I really wanted to love this place, and I appreciate what they are doing, but at this point my bagel loyalty may be heading toward PopUp Bagels. (And I have love for Dan's too.)
