I dream of this place and plan trips solely to go here. This place is the motherload for boudin, if anyone else tells you otherwise, they have no idea what they are talking about. I love boudin and since I don't live in LA, I will try it anywhere I go just to see if I can get a taste of Billy's closer to home, but let's be honest nothing compares. Everything from Billy's is on another level amazing. I have searched far and wide but this is the place. The boudin balls, the boudin, the roll ups, the cracklins, omg the cracklins. I have had a lot of cracklins in this life and this sets the bar for all others. All others never even compare to Billy's I could eat a whole bag of it, but for my health probably shouldn't, however I still do anyways from time to time to make up for the time away from Billy's. Do yourself a favor and just get it all! Buy enough to eat in the car on the way home, buy enough to cook that night, and buy a little extra to freeze and eat later. I'm just sad that I can't take the cracklins home with me and eat it for days. Nothing in this life compares to a fresh scoop of cracklins from Billy's, nothing! Great boudin. I heard about the place and decided to try it. The place was very crowded on the day I stopped by. However, the staff handled the crowd with ease and kept the line moving. Nice little shopping area with many seasonings, sweets, and frozen meats. I ordered both the regular boudin and the smoked boudin. I liked both! I also ordered the fried corn, pepper jack boudin balls, crawfish balls, cracklin, and chicken cracklin. The fried corn was cold and a waste of my time and money! The pepper jack boudin balls were okay. The crawfish balls were a bit bland and mot tastey at all when they cooled down. The cracklin was crispy, fresh, and seasoned. My boyfriend and I have been road tripping from San Francisco to the Atlantic. We stopped in at a different Boudin spot and were trying it in the parking lot, when a man in a truck motioned to roll down my window. Now, no lie, given the times and our California license plate, what he said left me a bit unsure of what to expect. "Y'all aren't from around here are you?" "No sir" "Well how'd you find this place??" "Oh well, I'm from Houston so I've been through here a few times." "Ohhhh that makes sense!" When we pulled up, there was (no joke) a 30+ minute line, both inside and out for the drive through. But after tasting it, I can see why. We tried 4 different spots within a few mile radius. Everyone here was very nice! They let us order small samples of things since we've never had boudin before and I'd never had real cracklin before. I've only ever had pork rinds from the grocery store which it turns out are very different! Now, I think you may have to be a little accustomed to this food as it is heavily fried, but it was very flavorful and it takes good. I couldn't believe how good the cracklin was! This is one of those shady looking places most would overlook based on looks alone but this place was bumpin when we got here. A long line both in the drive thru and indoors. Luckily it moved efficiently. There's a convenience store section and a counter by the register where you can order your hot, cooked food aka the boudin and cracklins. We got one order of cracklins, super hot, crunchy, and oily and an order of the original fried Billy's boudin balls, and fried crawfish boudin balls. They both had a slight spicy kick to them but I loved the original one the best. I could've eaten two whole ones myself. They're pretty big, maybe tennis ball sized and we shared them. Super flavorful and the insides are stuffed completely so you're definitely getting your bang for your buck. read more

You must stop here!! Best place ever! Anytime we go through the area we always stop. Everything is so good and there's not anything you could go wrong with. Coming from SETX, I'm a lover all all things boudain. So, after passing by this place the past several years, I finally made a pit stop here on the way to Florida. While waiting in line (it moves fast), I grabbed a packet of crawfish and regular boudain to go. When I got up to the cashier, I got one boudain ball and 2 pieces (exactly 2 pieces) of crackilin (I mean, if you need more than that, you're going to have a heart attack). The boudain balls here have an interesting batter -- it's more akin to a fried chicken batter. I'm used to a dry batter, not a wet batter. While I wasn't used to it, I still really liked it. The ball is also the size of a softball! The boudain ball was perfectly steaming in the middle and crunchy on the outside. The cracklins were spicy and crunchy! The boudain links itself were TOO SALTY. They would benefit from cutting down on the sodium. I have to eat the boudain with a salad to cut the saltiness. I'll stick with my DJ's and Zummos' boudain. It is said that Scott in Lafayette, LA is the boudin (boo-dan) capital of the world. They were very busy this morn. Famous for their boudin balls. This one guy said that his wife told him to stop there on his way home. The fried boudin ball was good, a little spicy, fried, so very greasy. Then I had a boudin smoked link (like sausage) that was too spicy for me, but they have regular (non spicy) links. There's also the famous "cracklings" like fried pork skin bites. You can get this stuff frozen, vacuum wrapped, & ready to eat. Even w/ all registers open they still had a long line, but if you've never tried it, you should, just for the experience. read more

Stopped by on my way from New Orleans to Houston because of the rave reviews. I ordered pepper jack cheese boudin balls, crawfish pies, and fried corn. The boudin had a nice crispy exterior and a soft, hearty filling of meat and rice. It was well seasoned with a small kick in every bite and it was the perfect option to eat while driving. The crawfish pie reminded me of a samosa on the outside with a sort of crawfish version of chicken pot pie on the inside. I wasn't able to get a picture of it because I ate it before I could, but I may have liked it even more than the boudin. Lastly, the fried corn was a standard corn on the cob with fried breading around it. It was solid as well. Very rarely does a place earn a five star rating from me;however, Billy's really earned a 10 from me! Customers were from all over the south filling of the iced bags for road trips home with stuffed seasoned pork roast, stuffed seasoning chicken, and of course boudin. Here's a disclaimer, there was a long line in drive-thru and indoors, but the flow was pretty quick. We went inside and our cashier was very personable and patient with this first timer. I ordered the gargantuan Pepper Jack stuffed fried boudin balls, seasoned cracklins, and a couple of crawfish pies for our road trip back home. The cracklins were mouthwatering oh so delectable with just the right of seasoning for this Texan. As for the boudin ball....OMG! It was the best darn boudin that I have ever had!!!! It was nicely crunchy on the exterior and satisfyingly moist with seasoning and bursting with warm Pepper Jack cheese on the inside. The first bite had me regretting that I only bought four of them. I haven't tried the crawfish pie yet, but it has a beautiful golden crust and I'm certain it won't disappoint. I also purchased some of their chilled crawfish boudin and green onion sausage to try later in the week. This was my first time ever having Boudin and cracklin. My favorite, by far, was the fried Boudin ball with the melted pepper jack cheese in the middle. It was the perfect blend of textures, crispy on the outside, soft and gooey on the inside. The traditional Boudin encased within the lining without being fried had a good taste, but I was not a fan of the texture. I do recommend at least trying one. The cracklin was also amazing. I've been to other locations in Krotz Springs and Opelousas, but I must say that this one is my favorite, and is the most convenient (because I usually come in right off I-10 headed to BR or NOLA). Favorite items (in order): pepperjack boudin balls, regular and smoked boudin, cracklins Pros: I really like this place, because it is convenient, clean, and the food is consistently good. The boudin is always consistent in flavor, meat to rice ratio, and seasoning. If you like boudin that tastes homemade, this is definitely where you should go. There's a drive through, so that helps if you don't want to get out of your car and stand in line. Cons: It's always busy on the weekends--doesn't matter the time of day. The parking is sufficient, but because it's always packed, it may seem like there's not enough parking. The restrooms could be sooooooo much better. (If you want a good restroom, you're better off going to Don's, which is like 10 seconds away on the same exit.) I think they can sometimes do a better job of picking the fat and gristle out of the mix, too. The crawfish roll up is terrible; don't waste your time or money. Hands down, if you want some good PORK boudin that tastes like somebody from the country made it, you must go to Billy's. read more
