This is one of the most disappointing reviews I've had to give... We used to live in Rexburg, and Blister's was our go-to spot. The brisket was amazing, the fry sauce was the greatest thing on earth and was reason enough alone to go there, the BBQ sauce was so tangy and delicious, and it was great value for the price. I've since been back twice, once last year and then just barely. Last year, I was hoping it was a fluke because the food was just nowhere near the level it used to be, but this second time around sealed the deal for me. The only explanation is that management has changed. I can't fathom any other reason as to why everything would be so different. Let me start with the sandwiches. They use different bread now days, and it seems that the ratio is way off. Way more bread than meat or sauce, and the bread on the squealers is unbelievably dry. The brisket is still pretty good, but the tri-tip is very gummy. I felt like I was eating a Laffy-Taffy. Not to mention that the squealers are now a fraction of the size they once were. In my opinion, what really set Blister's apart initially was their BBQ sauce. It was such a unique, very tangy sauce that made a guy just want to bathe in it. They even had another sauce which was a Carolina sauce, but their original was just unparalleled. Today, their sauce tastes no different than every other generic BBQ sauce, and it's depressing. Every time you went there, you had to get fries because the fry sauce was soooo good. It was kind of a thinner, lighter colored sauce with pepper, and I don't know what else but almost vinegary and tang and you almost wished you could make your fries into a soup that swam in the fry sauce. Today, it's a regular old, generic fry sauce that you would find anywhere else. I can only hope that the old owner does their own place, because this is not the Blister's it once was. They should really consider handing out anti-depression meds to all the people that knew the old Blister's. read more

"Best bbq in Idaho" is the biggest lie ever. Food tasted bad. Customer service was completely HORRIBLE. I was told to wait a minute by the guy at the grill, some blonde hair guy came up. No one ever said anything to me. About 10 minutes go by, so I ask if I could order now because the guys had just ignored me. I was told they were waiting on me. After being told to wait, how was I supposed to know what to do? I got the vinegar and sweet pork with fries. The bbq tasted disgusting. I specifically asked the cashier if the vinegar bbq was like Carolina. I'm from the south, we don't call it sweet and vinegar. We have names for it. He said it was the same. It wasn't at all. This shouldn't even be considered bbq. It's sad. And the customer service is the worst I've seen. Not welcoming or helpful at all. Won't spend my money here again. This incredible hole in the wall restaurant, uniquely hidden in a gas station, is incredible. The pulled pork sandwich is the BEST I've ever had! This is the only place I actually like homemade fries. As a picky eater, I usually don't love BBQ places because there's too much fat in the meat or the fries aren't fully cooked... But not here. Everyone was raving about this place and how good the food is, I order a 3 meat plate and a Buffalo chicken sandwich. The meet plate and frys were good, but can't make up for the rancid chemical taste of the chicken sandwich, they put blue cheese on it and my wife who has had it before said that's not what it's supposed to taste like. We normally got the cowboy( your pick of 3 meat portions), and grabbed 2 orders of the deep-fried green beans. I got the pulled pork sandwich and fries with a drink. Everything was delicious, cost wasn't bad at all, and the staff was friendly. My only complaint is that you get your drinks at the same drink fountain that the gas station offers, but it costs twice as much to buy a drink from Blisters as it does to buy one from the gas station! I love BBQ so when I heard about this place I thought why not? It's in a gas station but we went on a Friday night and it wasn't too crowded. The staff was friendly. My boyfriend had the pulled pork sandwich and I had the burger with a side of fries. It was a great burger! Super juicy and the sauces were tasty as well. The only thing I didn't like were the fries. I recently stopped into Blister's BBQ and boy was I impressed! They made a few changes to the burgers that really made a huge difference. First up, they now use a different kind of bun. Overall, there is even more flavor than before. I recommend stopping in and giving them a try. The only negative things I have to say is that you will probably have to wait a while for the food. During my most recent visit, they were preparing a lot of meat for catering, which led to a 30 minute wait. Also, the cooks were not paying very close attention to what they were doing and forgot the toppings for which I paid extra. Lastly, there were tons of flies all around the chairs and tables, making the experience not as good as it could have been. I wish I had taken a fly swatter. read more

So the food here is good....when they have it. Repeatedly I've gone there to eat and tried to order fried pickles but they either never have them or when I do order and pay, they tell me after that they are out. I've even called to see if they have pickles, they say yes, and when I go to pick up the pickles, they are out. Rexburg has cornered the market on weirdly delicious foods found/sold in improbable places. From the same town that brought you delicious Korean BBQ from a random grocery store kiosk, comes delicious American BBQ from a gas station. No, really. Blisters is one of the few things I miss about Rexburg when I'm not there. I try to come here as often as I can, and I think about it more than I care to admit. I always get their hamburger topped with bacon (REAL bacon, not that sissy precooked microwave stuff) and lettuce, with a side of waffle fries. The burger has just the right amount of juice and grease, the fries have just the right amount of salt and crunch, everything is just. Right. If you find yourself in Rexburg and craving BBQ, ignore those people who tell you to go to The Hickory. You don't need people like that in your life. Go to Blisters instead; or better yet, take those Hickory devotees with you and show them what actually-good food tastes like. read more

POSITIVES: Believe me, it was hard to think of positives. The burger and fries were decent at best. NEGATIVES: Everything else sucked. I don't care how big the portions are when the food is that disgusting! I am not exaggerating when I say the pulled pork tasted like vomit. It was extremely sour, as if it had been soaking in a dirty sink, or sitting out for days. Neither my wife nor I could stand to eat another bite. It ruined my appetite. The sauces they had out were watery and also tasted like crap, which ruined the rest of our burger. Their attempt at fry sauce was laughable. I would slap everyone who works there in the face for creating such monstrosities that they pass off as food every day. What a disgrace to BBQ. Now don't get me wrong. I love very delicious, well-prepped BBQ food, but I am also a frequent customer of places like Arby's or Five Guys. I've eaten stuff off the street in Argentina, I frequent food trucks and happily try my friends' attempts at cooking. But this was SO DIGUSTING just thinking about it makes me want to puke the chunks of pork that I ate... if it even was pork. Another gripe I had is the fact that it's located in the flippin gas station (was almost impossible to find) which was also the first clue as to what we were getting ourselves into, in spite of all the raving reviews. The staff was only friendly to the regulars (which surprises me that they even have any). The men's bathroom was hideous. Some have unworthily rated it 5 stars; if I could rate this place negative stars, I would. Few times in my life have I been as disappointed as I was with this poor excuse of a restaurant. Very disappointed! Blisters BBQ used to be a place to get reasonable priced BBQ with huge serving sizes. They have switched the bun out for a cheaper quality smaller size, which is annoying because they up-ed the price a dollar. The side have gone down in size also. Good BBQ for Idaho I love my barbecue, it's been one of my favorite foods growing up as a kid. Coming to Idaho from the South has made finding good foods difficult. Especially when you're coming from Virginia and have not only barbecue but all kinds of various ethnic foods in Washington DC. So what does a Southerner do when they come to a new place? Look for some good barbecue. Found it, and not only did I find a good place but I also found a classic scene for a barbecue place that you would find only in the South. Blisters is located in a gas station, which for many who aren't used to this concept will probably be turned off by the idea of going to a gas station for some good barbecue. Now I didn't give them a Five star and it's not anything wrong with them, I've just have had a slightly better bbq place since being in Idaho. But if I had to choose what is available in Rexburg. I would choose Blisters. The barbecue isn't Texas style, which is okay (I guess). The brisket sandwich is really really good. Every now and then I may get waffle fries with my sandwich if I haven't eaten most of the day. But honestly I'm set with just the sandwich. It's really filling, and very delicious. I haven't been disappointed yet by the food. And the staff are respectable and friendly. Wow, blisters and hickory should switch spots. Blisters is a little hidden gem that should get the attention that hickory gets. Finally a brisket that is juicy, and doesn't feel reheated. Props to this little mom and pop place that has a smoker in the back of a Mobil station. I hate to make this review about a hickory blisters comparison, but if we were to strictly compare the meats and nothing else between hickory and blisters(since the smoked meat is the essence of a barbecue place), the meat at blisters is juicy, flavorful, and tastes like real barbecue. It also actually tastes like it was made that day. Wow. It's also really cheap. The 2 man staffed little hole in the wall gem is a friendly reminder that a good barbecue place doesn't have to take up a huge plot of land. Just some passion, hard work, and a smoker is all that's needed. I got a brisket sandwich, my wife got a pulled pork sandwich. We both got green chili, and I got a deep fried hot dog. We get home and had no barbecue sauce in the bag! No worries! the food was so damn good we didn't even care. I had just had my second lunch an hour before and was only eating at blisters for the sheer joy of it, and also because my wife was in desperate need of a snickers. I can for sure say that the food is so damn good you enjoy it even if you aren't hungry. It was indulgent like a chocolate chip cookie. Is it the best barbecue ever? No. My five star review is being given within the context of the current food scene in Rexburg. Meaning, considering almost all places here are 1 or 2 stars, this place blows them out of the water. First off, there are several types of BBQ, and you can't just lump them all into "Southern BBQ". I happen to prefer Kansas City or Texas style (both tomato-based) while Blister's is Carolina BBQ, which is vinegar based. I ordered the pulled pork, which wasn't pulled quite enough (pieces were huge!). The portions were very generous, though, and the meat was good, but had more fat than I like to eat. The coleslaw, unfortunately, had no flavor at all. The waffle fries were slightly above average. I certainly wouldn't call this "first class", but it's okay, especially for "gas station food". read more
