My husband and I came here yesterday for happy hour and we were not disappointed! Both of us agreed that the elote was our favorite followed closely by the brussel sprouts. I thought the brisket was a little on the dry side, but I really enjoyed the salad on top. I also enjoyed the shrimp but wasn't a fan of the dipping sauce. Second time in and again it did not disappoint. Alicia at the from was very professional and kind. I asked for a quiet table and she delivered- it happened to be a little too dark for my elderly mother so Alicia moved us outside to a wonderful table (even though they were very full and very very busy). Our waitress Dani was also very professional and kind. She really took great care of us. We were there for my mother's 91st and daughter's 23rd birthdays. The elote dip could've easily been a can of rotel and fire roasted corn. I would've liked to see this be more of a warm, creamy dish with cream cheese. The brisket polenta was the better dish we had. The brisket was tender but just kinda tasted like crock pot roast beef. The polenta was interesting in that it was hardened and shaped into a cube. It wasn't that porridge consistency I was expecting. Lastly, we finished with the bison short ribs. I was expecting these to be way more tender and "fall off the bone." The mashed potatoes were gritty and there just wasn't much of them. They kinda reminded me on instant mashed potatoes. What a wonderful place to dine at! Upscale while still feeling casual. The service was outstanding and our server was super knowledgeable and professional. The food was phenomenal. I've heard the menu rotates seasonally which is always a sign of a great restaurant. Everything we ordered was incredible. Sat at a high top in the bar area; we arrived at a good time as there were still some seats, but be warned it can fill up quickly - for good reason! Heckin' good deals. The selection of HH apps - 2 for 1 - all sounded delicious. We went with 4 and are ranked by our opinions in deliciousness: spinach and artichoke dip, filet mignon shumai, honey and cashew Brie, thyme roasted sweet potatoes. To be clear, each dish was delish, we were just blown away by the dip and the shumai. Amazing flavors and thought the portions were fair for what you paid. They also have 2 for 1 martinis and a very wide selection, many of which I wanted to try but alas... I am pregnant and opted out. Good excuse to come back in a few months . Turns out the zero proof drinks were also a HH deal which was a pleasant surprise. Zero Proof Review: I'm on a quest to check out all the zero proof, mocktail and n/a beverages that Denver and beyond has to offer. Blue River Bistro did not disappoint! They had 5 mocktails plus an NA wine and bubbly (woo!). All the mocktails sounded yummy and well thought out. I had the "Deep Roots" (beet, cucumber, grapefruit, agave, soda) and my husband had the "Berry Nojito" (strawberry, lime, mint, agave, soda). My friend and I made reservations for brunch at the Bistro to enjoy before attending a play at a local playhouse. We were seated on a patio outside of the dining room. I ordered eggs Benedict which were yummy. Their Hollandaise may be the best I've experienced. My friend ordered chilaquiles. I didn't taste her food however she didn't like it much. It looked to be tortilla chips soaked in some liquid which made them very soggy. They were served with 2 eggs to order. We both got their seasoned potatoes which were tasty. Our server was great and took good care of us. Downtown Breckenridge is beautiful in summer with flowers everywhere.
