New look. Same menu! Magaritas where bitter!, friends chicken salad was like have, some chicken with that salad, they charged her for what should have been in salad! Burger was good, halibut was good. Sad they made huge hype about now open to find same menu, great service. You could be number 1 in fairbanks but put chicken in chicken salad, make magaritas that are drinkable.

The staff was very friendly and the inside of the restaurant was spacious and well kept. However, the food was incredibly terrible. Sadly would not come back or recommend.

Surf and turf

Fairbanks might be popular for the beautiful OUTDOORS but their restaurant options are LOUSY. Gave this place a try for dinner. Ordered the "surf and turf combo" for almost $40. It came with a soup or salad (should have picked salad) and got the minestrone soup. Tasted like it came from a can and didn't eat much of it. 8 ounce NY steak was well seasoned and cooked properly. Meat was a low quality cut. Came with sides of veggies, potatoes, and toast. The highlight of the meal was the halibut (fried in batter). Batter was done right and they were delicious. Server was a nice young man and he was attentive and had a nice attitude. The meal was just ok...will keep looking for better places in the area.

Inferno wings and waffle fries

Restaurant was extremely busy when I arrived. We immediately got a table and soon after our waters. Our server was good at keeping them filled and was an awesome server for the restaurant being swamped. 1/2 the food came out hot temperature wise (the wings is what I care more about coming hot) and my fries were room temp but still tasted good. Even better when I got home and heated them up in the oven. The wings were bomb. I'd go back just for them!

Mushroom and Swiss Burger

This was a great meal. I was skeptical because of the great things everyone told me, but Brewsters lived up to the hype. We got a table fast and the service was great. The burger was cooked very well and the bun was soft and fresh! The mushroom and swiss burger tasted so good. It absolutely hit the spot! The fries were everything you would want them to be! Cooked well and salted just right! Great service and great food, thank you Brewsters!

Hotzarrela Sticks!

Great food! Large portions and quick to come out! The hot mozzarella sticks were something I've never had before anywhere and I will look forward to coming back to Fairbanks to have them again! My server was an absolute sweetheart & was on top of it! Great service, great food, and the ambiance is a bar/pub experience. Overall will be back. One of the better restaurants in Fairbanks for lunch!

Halibut Tacos with Waffle Fries

We ended up at another brewery restaurant in Alaska. In the booth of a family friendly restaurant, we ate more fried food, fried fish specifically. $19.99 Halibut Sandwich: looks and tastes like 5 fried fish tacos tucked into a sandwich, a little dry, but the tartar sauce helped $20.99 Halibut Tacos: two fried halibut tacos tucked into those taco stands $17.99 Chicken Fajita Wrap: Not bad. Surprisingly Mr. Joy ordered the chicken fajita wrap, because he said he is tired of fried food, but he ordered it with waffle fries anyway. Refusing fried food is such a departure from his diet when he was younger. We actually all ordered waffle fries, which were delicious.

Mixed feelings here! Our table had a nice server, but she was more attentive and on top of the other tables around us. We actually began to feel like there was something off-putting about us and by the time we left that had only solidified. The atmosphere is cozy, not too loud, with soccer games on the TVs. The menu is varied but beware of a sever lack of options if you are gluten free and if you are soy free know they *only* use a pure soy oil. That said, they accommodated our GF kiddo with a lettuce wrap around a burger Patty, and a side salad with olive oil and balsamic instead of fries. He loved both. The sodas were flat, and the iced tea was very weak. Teen ordered the nachos and said they were good and chips tasted great. Other kiddo with us had the chicken strips and happy fries and the chicken strips were too spicy- the adult with her also ordered them and said they were almost too spicy for her. My wife and I had the halibut tacos and the grilled chicken salad. The salad- the chicken was dry but the salad was huge, very fresh and delicious. The halibut tacos were also dry but had two corn tortillas and the pico was fresh so overall a good option. The steak fries don't have any seasoning but were cooked well and tasted good with a bit of salt added. The other couple with us had the adult size chicken and fries (waffle fries, which were cold when they got to the table), and a taco salad. The taco salad was big and the shell seemed fresh but it was a bit underwhelming although a nice, big portion. Bathrooms were clean but there's a trick to flushing the toilets so beware lol. The food did take longer than expected, and everyone around us was served before us regardless of being seated after us, and we had to flag the server down for refills and the checks, and never did get the to go boxes we asked for. We left without them, although we had plenty of a few meals we could have taken. Overall it wasn't bad, just not great t. The menu does have some lighter items and dinner items buzzed in with all the dried stuff and burgers, so a decent mix.

Came here for dinner on the first night here at Fairbanks, Alaska. Ambiance is like hanging out in a pub. Very inviting place. Staff is friendly and provided good service. The bartender was making cocktails, tending the bar as wells as servicing the tables. Brewsters definitely did not disappoint. That's why we came back gain. Definitely come here for their steaks and chops. My favorite is the batter fried halibut. First time ordered the halibut fish taco. On second visit just ordered the halibut and chips. Place to come for fried halibut. Friend who order the Alaskan Surf and Turf really enjoyed his meal. Burgers not bad.

Chicken raspberry sandwich

The menu is all over the place from tacos to cheesesteak to chicken on rye. And what we sampled they did it all well. Local beers on tap - Alaskan Ale and Hoodoo Getman Kolsh - both cold and delicious. Tried the Alaskan Halibut Sandwich - the batter was crisp, not greasy and light. So delicious. The bun had 4 pieces. I had to take 2 off just to be able to close the bun. So delicious and then snacked on the other two pieces with the crispy waffle fries. We also had the chicken raspberry on rye. The bread was toasted perfectly and the flavors built on each other to be something special. We sat by the bar and our bartender was friendly, sociable and provided great service. Thanks Fred - you're amazing.

Sirloin steak with loaded mashed potatoes

Great service and they were quick. Clean restaurant and friendly staff. My only reason for the 4 stars is that the steak was tough, I was really hoping a "medium" would be juicier.

Halibut tacos with steak fries

Whether this is genuine or my wife and I were tired, happy, and hungry....I am giving my first four star review in Alaska. We walked in and I thought this may be solely bar food....something my wife is not fond of. Upon walking inside, there were plenty of families eating here, so a good sign. Our hostess seemed confused at times, but she was friendly and attentive. I ordered the halibut tacos with steak fries. Don't judge a book by its cover! My halibut was fried perfect....crunchy, yet juicy. The steak fries were crunchy on the outside and hot on the inside. Other options were burgers, sandwiches, and ribs. Nothing "special," but if their "regular food" is as good, then you will have a tasty meal

I ended up getting some tacos and my husband got a sandwich. Both of them had really good flavor. Could tell that a lot of ingredients are made in house. Though I didn't end up buying any I did see that they had an entire Bakery case with a bunch of gluten-free baked goods like cheesecake, custard cake, and some other stuff. We really enjoyed the glass roof as the snow was just starting to melt. It was kind of cool like we were in a half melted igloo. I would definitely put it on my list if you are gluten-free.

Landed on the BLT with salmon. The BLT actually came with a croissant as the bread, so it made it very easy to eat. Lots of bacon and the salmon went really well with the sandwich. Fries here are great too! Staff here are great! Since we came here near closing time, they actually offered us some of their leftover soup since it would have been tossed out. Definitely hate wasting food, so that offer was accepted very quickly. I didn't realize until after leaving why Blue Roof Bistro has its name. It's because...the roof is blue heh. Either way, worth the visit.

With that said; Waffles and pancakes were amazing. I do like a light waffle, crispy on the outside but these were different. full of flavor, thick and fluffy and didn't taste like batter or flour. Everything was made to order and perfect. Helpings are a little bigger than I'm used to but that will be good warmed for later. The restaurant is a little outdated - but clean. The lighting is soft. At first they were not busy but as it got closer to an hour opened, they started getting busier which still was not very loud. We were seated, drinks and menu given quickly. Order taken and food provided as it was made hot - which took less than 15 minutes to get all of it. The waitress was nice and had a lovely smile. She made sure we were taken care of and we didn't feel forgotten. She did seem to be the only server, yet she seemed to be good at her job. We would definitely come back here. This may be why our service was impacted. Our bartender, while super friendly and trying to do his best, was overwhelmed and had just started. Lots to learn. The dishes were all really well presented - that takes skill, in and of itself. While these weren't dishes I would come back for, it was a nice, quiet dinner to end a full day. And, don't overlook location - this is in Alaska, so you will pay more. That aside, nothing was spectacular but nothing was terrible enough to leave on the table as well. More on point seasoning would have breathed life into my jambalaya. My dinner mates had similar comments about the chicken pasta and taquitos. The French Dip went over well with my dad. What would I change to up the service and experience? Direct guests to the main dining room if service cannot be duplicated in the larger bar area. Maybe add another bartender to help out in the evenings, when it tended to be busier. Offer a limited drink menu and nothing more. This might increase the speed and also play to the strengths of the staff. For us, it took a long while to get our total drink order and mine never came, so I ended up ordering a local cider. Bring a chilled glass with the cider, friend. Our check took a while as well. The food came timely. So, again, the patterns looked to be with the staff manning the bar area. When we arrived, we found out that you'd need a reservation to dine in the main dining hall, so we ended up going to the Saloon side where we had to find our own seats. We sat near the pool table, and the chairs were super unstable. The staff were fine but clearly seemed busy and understaffed. It took a long time for them to bring us water and take our order. I tried flagging the waitress 2-3 times when she was passing by and felt very ignored especially as I've made eye contact with her a few times. We ended up ordering the fried seafood combo and the seafood chowder, and it ended up taking at least 20min to come out (even the soup). The dishes were all very salty and definitely needed a lot of water to go with the food. Overall, definitely not a place to go before a flight since you might not be able to get in and out very quickly, and the food was really just alright for the price. Perhaps the main dining room experience would be better but I still wouldn't recommend it given the food quality and service.
