It started with jalapeño cornbread as a base, then pulled pork topped with a homemade bbq sauce that had a little zip to it, next was macaroni and cheese, then brisket and topped with coleslaw. The coleslaw was just a mild slaw. The Brisket was phenomenal, very moist and tender with a nice smoky taste. The Mac and cheese was a baked version made with Velveeta which was very tasty. The star of the show for me was the jalapeño cornbread that was the base. A nice sweet corn flavor and add in some jalapeño bits. OMG!!!! On to the people behind the food. Wade and Kara Nichols. Super nice people. They started the truck in April. They are using a blend of hickory and cherry wood pellets for the Brisket which is smoked for 18 hours. The pork is smoked for 12-14 hours utilizing apple wood. The Bbq sauce is homemade and is available to purchase. Great food and I will definitely be back to check out more.
