They had run out of Chicken, Beef, and Tofu (so basically like everything lol) but I decided to give this spot a try courtesy of Kimberly our wonderful Community Manager during a Yelp event and I'm so glad I took her recommendation! Also the protein shortage was totally a blessing in disguise because that pork was GOOD. Biting into it, I was reminded of juicy pork belly baos - fatty and flavorful - and actually after consuming what was probably 70% meat 30% fat, and 100% nomsworthiness, I decided that pairing this decadent pork bao with a mushroom bao was actually a great idea. The mushrooms were creamy yet light, and almost a bit truffle-like in flavor....not crispy like Momofuku's style but very good in their own way. Mayo and sauces drizzled ontop with clovers, scallions, cilantro, and seasonings make these little baos quite a contender in both taste and visual appeal. As you can see by the pic they are quite aesthetic and SO tasty. The best part is the baos are moist, soft, and a little sweet! Yes!!!! ....I have had a fair number of baos and these are legit. (Well maybe not like superbly authentic Chinese baos since this whole concept is Asian fusion but like the baos by themselves are.) These make for perfect snacks, a quick lunch while you're shopping around the USDA Farmer's Market, or just because you want to splurge (each bao is $4.33 since it costs $13 for 3). Some damn fine buns. After having eaten so many poorly executed buns at other "hip" asian places, I was pleasantly surprised by how good these ones were. The meats were perfectly seasoned, and their respective toppings (pineapple and cilantro mayo for the pork, cucumber and hot sauce for the bbq) provided balanced, refreshing contrasts to the rich fillings. Just as importantly, the bun held up and remained intact as I was eating it. Oh, and the women behind the counter were extremely nice. They even offered to remake my to-go order when I belatedly remembered that my BF dislikes mayo. Everything at Union Market is pretty cool but so far this place is my favorite. Fun and tasty buns inside the market! Came in about a week ago and tried two different types of buns. The first I got was the beef bbq buns and wow I loved them! The flavor of the beef was just right, and I loved the spicy sauce that was paired up inside. The veggies were fresh, the pickles delicious, and the bun texture was just right. I also go the mushroom bun which I also loved (but not as much). I think it was more of a personal preference than flavor, so if you like mushrooms please try ! The terrible service at this place is the reason I will never go back. I've interacted with one particular employee, who seems to be the manager, twice and it was horrible both times. I also have spoken to two other people who said they've interacted with him and he was mean. He was rude, had an attitude, and when I approached about said attitude, he was defensive and continued to be nasty. The food was great, I wish the customer service matched it. If you like bao, stop by Bun'd Up in Union Market. It's one of the newest and smallest stands in the market, but it's a great spot for lunch, dinner, or even a snack. They make three kinds of bao and it's $12 for three of them. I recommend the Korean beef bao and the mushroom bao. For a vegetarian option, the mushroom one was excellent (it may be the best on the menu!). The service is fast and before you know it, you'll be enjoying some bao. read more

These buns are delicious! The best part about these are the actual bun. Light, airy and absolutely satisfying. We decided to get one of each, a mushroom, pork belly and something else. As you can tell, we enjoyed two of them and the other one we didn't care for. Presentation of the buns was beautiful and we could tell that they really cared about how it looked as much as it tasted. There was a line for buns but it went pretty fast. These guys know what they're doing. This is a great addition to union market. It's great for a snack or a meal. read more

Sat down and started to eat only to discover they'd given me the wrong food as well. CHICKEN. I haven't eaten meat in eight years. I took it back, told them I'd ordered shrimp and they'd given me chicken and they replied "oh ya. Here's yours..." for this I was charged $18 plus a 15% tip for a bowl of plain rice (of course it was ALL RICE and five shrimp). Never again. That place is mayhem and a complete rip off. One of the better finds in Union Market. I got one of each of their featured bao buns, the Pork Belly, the Korean BBQ, and the Mushroom. The buns were light and pillowy. As for the filling they were all winners but the pork belly stuck out the most for me. With a rich and creamy sauce and hot, tender pork belly, it was very good. The pineapple helps cut through the richness. The KBBQ was well-balanced. It's 3 buns for $12 which is a pretty fair price point. And they don't skimp on the filling. Def check 'em out. read more

I haven't had Bun'd Up at their Union Market location but I hit up their stand at the White House Farmers Market regularly in the fall. The three bun deal is where it's at and will fill you up! Bun'd Up packs a lot of flavor into their buns and they are full of meat, toppings, and sauce. I appreciate the ability to mix and match and usually go for some mix of the bulgogi buns and the pork belly buns. I recently saw a sign outside of Tastemakers food hall in Brookland that they have a stand there now as well so even more places to get your bun fix! read more

Don't order the Pork Belly Rice Bowl. To me, the ideal rice bowl features white rice as a vehicle for soaking up the deliciousness that is the other ingredients -- to that end, Bun'd Up's Pork Belly Rice Bowl sounds fantastic (on paper, anyway). Braised pork belly + picked onions and cucumbers with drizzle of cilantro lime sauce on top should make for a great combination, but Bun'd Up failed in the most basic way when trying to executing this dish; they overcooked the rice. There were a few delectable bites in there, but the majority of the bowl was overshadowed by crunchy, browned, dried-out kernels. The unexpected mouthfeel was like listening to a metal-core cover of a Miley Cyrus song (not that I have anything against either of those). My bowl had numerous flakes of crunchy rice adhered to one another -- something you think the person assembling the bowl would definitely have caught when scooping the rice out of the rice cooker. If this were a $5 street food vendor, one might be able to overlook this error. The actual flavors were fine, but for $14... you can do way better. read more

WOW! First Union Market endeavor and I couldn't have left more satisfied. Pork so tender it crumbles apart, placed upon the fluffiest steamed bun and topped with subtle hints of pineapple and a savory cilantro ranch type sauce. I ordered 1 large bun and with tax & such my total came to $7.15 and it was the perfect snack size! I arrived about 11:30am on a Sunday and the Market wasn't too crowded and there was virtually no line at the Bun'd Up stand! Overall absolutely incredible and a great first trip. They were delicious, very flavorful - strong emphasis on the tasty mushrooms & tangy/creamy sauce! I nibbles on some of the bread from the bun, which tasted delicious individually too! However, I feel that $4 for a small bun is quite expensive - so I'd like to try the large bun at the physical storefront (don't believe they carry large buns at the market). My husband ordered three buns - just the meat-based (pork belly and Korean BBQ) options. I opted for the Korean BBQ (always a solid flavor option) and the mushroom. The mushroom is a great option if you don't eat meat but it wasn't out of this world for me personally. The Korean BBQ however was dynamite. It was the perfect blend of sweet and spicy and the toppings where a perfect compliment. My husband was definitely satisfied with his choices as well. It's also worth noting how fast the service was at Bun'd Up. We thought we might quickly browse the produce market adjacent to the stall but before we knew it our order was ready and we were enjoying our delicious bao! read more

Union Market has a lot of food options. I had the pleasure of trying Bun'd up on my second trip. It is directly across from South Block, thus thrusting then into the limelight. This was when I first noticed the stand. I was hoping for a classic/simple Bun sandwich and Bun'd up delivered. With a smaller menu and tight 2 man crew I think they are able to repeatedly deliver a quality product. Each Bun was well-made, spongy soft and not too sweet, and just firm enough to keep the bao together. My favorite was the Pork Belly Bun. The only reason I did not give Bun'd up 5/5 stars is due to the simple flavor combination within each sandwich. I think with 1 or 2 non-traditional options, it would really take this place over the top. Also I think the hat and shirts available by the register are super cool. read more
