This was my second visit and it was a lot better than the first visit mainly because the first time I didn't enjoy the Korean Wings (my family enjoyed them) but they were too spicy for my enjoyment so I decided to give them a second try and this time I wasn't disappointed. I got the fried chicken wings, chicken tenders and shrimp basket with Mac and cheese and fries. Everything tasted great and cooked to perfection the Mac and cheese was my favorite. The food was easily the best Cajun I've had in as long as I can remember and my wife and father agreed (in case my opinion isn't enough to persuade ya). The place has lots of VERY cute outdoor seating with nice sunshine/covers in the back and very vibrant succulents and plants. I would say that for our meal, my friend and I both really enjoyed the crawfish poutine, super flavorful, I'm still thinking about it! For the chicken tender poboy and short ribs, I was expecting more seasoning or more of a kick. It did taste a bit bland which was unexpected for Cajun food. I would recommend more seasoning or ask for a side of some spicy mayo or maybe other sauces on the side. As someone who is a huge fan on southern eats and seafood, this place is good! Don't eat Cajun food in Waco!! My husband and I visited this place due to its high rating.. the food and prices did not live up to it. I ordered the fried crawfish and my husband had the fried gator. My crawfish actually tasted like river water (no joke). The fried gator was okay, nothing special. The biggest impression was it was way overpriced. This is some of the best Cajun food we've had, and we've had some good Cajun food, most of it in New Orleans! We learned the owner is from New Orleans so it's real deal! You can't go wrong with anything here. Our go-to is the shrimp poboy. They don't skimp on the shrimp and it's a good balance of everything. The Cajun Craft is a great place to stop and eat. Everyone there is nice and has a big smile on their face. It had a cozy feeling to the place, and the outdoor sitting looks very nice. Unfortunately I wanted to like place but cannot . I ordered 3 pc chicken meal and paid extra for white meat . Order came out 2 of dark meat. I told server wrong order was told was my order when I went to other side to show order she apologized and said take 15 mins to fix . I waited. Then when food came out was 1 drumstick Dark meat again . They seemed clueless i asked about white meat and they had no idea. So can't tell you what I paid for was any good read more

The food was pretty damn good. We ordered the fried gator, hush puppies, and the fried pickles for an appetizer. The gator and the hush puppies were amazing, but I'm not a pickle fan so I let my family take care of those. The main course was actually my least favorite part of the whole meal. I had the Bayou Étouffée, which while pretty tasty, felt like it was missing just a little something in the flavor department. But any slight miss on the main course was made up for and then some on the dessert. My wife and I shared an order of the beignets, and they were the best beignets I've ever had. I've been to New Orleans, I went to Cafe Du Monde, and these are superior in my opinion. It may have something to do with how they're made. They have a perfectly crisp flaky crust with multiple butter filled layers and just enough grease to give that extra fat, but not so much that you feel gross while you're eating. And to top it off they add a generous layer of powdered sugar (try not to breathe through your mouth when you eat these). The catfish was not cleaned well and smelled extremely fishy. The batter fell off the fried shrimp. Hush puppies were greasy. The beignets were nothing like what you get in NOLA and more like fried biscuits. The staff was very nice. The cashier was quite talkative and monitored the rest of the staff. He said their were sister restaurants in Austin and Dallas but didn't know the names of them. Their were two very large dogs with big barks inside the restaurant's dining area. Well it was no one's fault but my own because I didn't read the menu nor did I ask if it came with nuts. I had lunch here today. I originally asked for a 1/2 Shrimp / 1/2 Oyster Po-Boy. They offer Shrimp Po-Boys and Oyster Po-Boys but could not pull off the " Custom Order"... The lady at the counter suggested that I order extra shrimp or extra oysters (at an extra charge) and make my own, but then suggested that doing so would be "a lot of protein". While that exchange was somewhat disheartening, I decided to stay and ordered the New Orleans Trio. It was delivered very quickly, but when I tasted it, all three of the dishes were luke warm at best. I asked them to reheat everything and they did so. They brought out a new set of dishes (my original order was supposed to be without chives and these did not have bites missing and were served with chives). Honestly .... I've been to Michelin star restaurants, I've been to arguably some of the best restaurants in the world,... I've had dinners in Monaco, Hong Kong, London.... This is one of the best meals I've ever eaten. We are talking top 5 all time. I'm going to be thinking about those soft shell crabs as I close my eyes tonight. The fried chicken is EXCEPTIONAL. We like to hop on I-35W and go south for some of our day trips. Waco is a fun destination as we love the museums, river parks and the ethnically diverse restaurants and food trucks in this university town. Cajun Craft grew out of a popular fried chicken franchise that owner Kim Bui assumed in 2016, launching her Viet-Cajun cuisine in its stead. From the the exterior to go window and tiny first dining area to the second dining area and then the expansive outdoor dining areas, Cajun Craft is doing a bustling business. Closed on Sundays, I wanted to be sure we made it there on a Saturday this visit, before the school's football season starts along with the never ending stream of visitors to Magnolia Market a few blocks away. Parking is at a premium in front for this downtown spot and we lucked out. You order at the counter, immediately as you walk in and I would recommend studying the online menu before you go. There's little room to stand in line and there's a lot of menu to study. Other patrons are waiting in line directly behind you and still others are dining directly left of you. Yes, things are a little tight. From the abbreviated Vietnamese menu we ordered the Summer Roll (2 for $5) rice paper, stuffed with bbq pork, shrimp, cucumbers, pickled carrots and radishes, cilantro and rice noodles, served with peanut sauce and the Fried Spring Roll (3 for $5) rice paper, stuffed with seasoned ground pork and diced vegetables and deep fried, served with a house Vietnamese sauce. Both were typically good - crunchy in all the right places and oh so flavorful - and they came out of the kitchen promptly as appetizers. (We took a number to our table with us.) Almost as promptly, our entrees arrived. The stars of my seafood platter ($16) were the four jumbo fried shrimp. Crisp, tender and sweet. Next was the very large catfish fillet. It, too, was well cooked and battered in corn meal with a light touch. Meaty and hot out of the fryer, it was delicious. My fried oysters were okay. Three were small and without much impact; but one was good sized and lightly battered. I definitely didn't see what all the fuss was about with the Cajun Fries. The reviews had raved about them. Today, barely warm, varying in firmness, all the seasoning lay in the bottom of the tray. They didn't do much for me. The hushpuppies had heat and were soft with a crunchy exterior. I had added coleslaw for $1 to my order. An all red cabbage coleslaw, the texture was decidedly different, but I liked it and the sweet dressing was familiar and so Southern. My spouse had ordered a locally popular favorite, the Fried Short Ribs. These turned out to be more like bites, some bonier than others; but not really what either of us expected, I guess. ($8.25) They came with Cajun Fries and a Roll. No sauce of any kind. He added coleslaw ($1) and two Fried Chicken Tenders ($3.50) and they didn't come with a sauce either. Hmmm. So we explored the difficult to access sauce place and refrigerator next to the beverage dispenser which was on the other side of the kitchen exit and the cash register with everyone paying, getting drinks, avoiding kitchen staff, and finding a place to sit PLUS coming back to the sauces and other stuff in this tiny space, too. Honestly, everyone handled it pretty well. Including us. We were sitting right in front of all of this. Anyway, condiments like ketchup that needed refrigerating - you guessed it - were in the refrigerator. Sriracha, Hoisin, Hot Sauce were outside with sugar, etc. But there was no ranch for the chicken or actual BBQ sauce. Kinda weird. The kitchen folks were hustling, too, so you just had to nab somebody. They were nice about it, however. Every single one. After getting sauced up, my spouse decided he liked some of the meatier Fried Ribs and his Fries just fine. The chicken turned out to be a little dry, though. Now he's usually a dark meat guy, so I had a few bites and he was right. Off day? So had the weather been nicer, we would have been out on that beautiful patio. L-shaped, there's a covered side and a slightly shaded side. Very. Nice. The other dining room has all HIGH chairs. Why is this popular? It's not with me. It's not safe for small children or older people. Maybe they are trying to keep kids out of that room. I don't know. But I can't sit in those chairs either. Then in the original dining room, they have a few weird tables and seats on the walls? Frankly, the seating is the only thing keeping me from coming back in hot or inclement weather. Too bad. They have a wonderful menu worth exploring and lovely staff. read more

The batter on the fried stuff is perfect. It's cornmeal-y, light, crisp, and not too greasy. Soooo good. My toddler's kid's meal was a very generous portion and she enjoyed her shrimp, too. Some of the best food I've had since moving to Texas. From the moment we walked in, every associate welcomed us and was genuinely so hospitable. There's ample seating, and you can even sit outside! Cajun Craft is a top 3 restaurant in Waco in my opinion. That said, the portions have gotten a significantly smaller. my go to there is the red beans and rice with sausage. A year ago, the portions were large enough to have some to take home. Now, the red beans and rice barley covers the bottom of the bowl, even the amount of rice you get has gotten smaller. Then they are starting to be out of ingredient, this time oysters (there is an oyster on the shirts the employees wear, so you would think they would have that). They were also out of their normal cups and were handing out very small styrofoam cups. still great food, still fantastic service, just not the value (portions) it once was.
