    We came here for the nostalgia of the TLC show we used to watch, but let me tell you, the pastries and desserts here are quite literally terrible. We arrived at 8:30am shortly after they opened and the case was full. We ordered a classic cannoli and glazed donut. The cannolis were pre filled, I'm assuming from the night before, so it was soggy and the marscapone filling was actually sour. Any true Italian bakery will normally fill the cannolis once you order them so that the shell stays crispy. The glazed donut was way too sweet, dense, and a bit dry and stale. Which leads me to believe it was old? It was really cool to experience being inside the restaurant and taking cool pictures, but I really wasn't expecting the desserts we tried to be so bad.

    What a disappointment. The cake slices are packaged in advance and taste so stale and bland. The confetti cake had no flavor and the icing tasted like a canned frosting. The black and white cookie has a weird soft icing on top, not the traditional cookie and arrived melted and again packaged and sealed like you bought it at a 7/11. The black and white slice was not a black and white slice (?) but some other chocolate slice equally bad.

    Always wanted to walk in to see it for myself. All the pastries and desserts looked amazing. The staff was very friendly and took the time to explain the items I was interested in purchasing. I ended up buying a 5-pack of cannolis and three crewnecks. It's definitely a must-visit spot when you're in Hoboken!

    Thought the bakery could be overrated and I heard it's too sweet. That wasn't the case. I was pleasantly surprised by this bakery. Went on Saturday afternoon. No line and wasn't crowded. The pastries all look good and they weren't too sweet. I ordered the classic lobster tail and cannoli. The lobster tail was amazing!! The pastry was flaky and not sweet. The pastry cream was a bit runny but tasted amazing! And it was filled to the brim. I would definitely get it again. The cannoli was a bit too sweet for my taste, but I've never really been a cannoli fan. This was probably one of the better cannolis I've had though. Service was really nice. Would definitely get the lobster tail if in the area.

    I understand the nosralgia; however, for someone that did not watch Cake Boss, I would never go back here. Whatever made this bakery popular has clearly been lost. The only this place got 2 stars instead of 1 is because the cannoli was good paired with coffee. Apparently, one of the sisters came in and couldn't be bothered with interacting with a tourist that was clearly visiting because of the show.

    We had the cannoli with cream puff and chocolate cupcake. I didn't share with my sister who brought it for me and I couldn't stop eating it. It was too funny. But the cupcake was so delicious!!!!

    Food (4/5): We got the cannoli and tres leches. Both were quite good although the cannoli could have been a bit more flavorful. Overall still solid though! Service (4/5): No issues with the service and they got the food out fast. Ambience (5/5): Nice bakery shop interior with fun decorations based on the famous baker. The food is displayed well and the pick up nature is nice.

    Carlos Bakery was honestly a let down. The whole shop is basically a fast paced cash machine. They move you through really quick and you do feel rushed. There was almost no one in the store. I asked for a cannoli - this was not good. Too thick and flavor was only peanut butter. I was excited to try the cake as it is what they're known for. It came prepackaged and was not fresh tasting at all. Big let down. I wouldn't recommend this at all sadly :(

    Ordered a classic 6" Carlo's Bakery Chocolate Fudge Cake for a loved one's birthday. Oh my god I was so disappointed. I don't normally complain and always keep my reviews honest, but I really can't recommend this. First of all, I chose expedited shipping and paid extra for this. It still arrived late and contacting customer service all I got was that it was in transit. Thanks. I should've just gone with getting another chocolate fudge cake locally and just dashed my dreams of trying Cake Boss cakes. When it arrived, it was packaged well in dry ice. The instructions are very clear with how to defrost the cake and serve it. Let me tell ya it really was a block of ice. Left it at room temperature for 3 hours just like it said. Sliced into it and it was still sorta frozen so we took a first bite just to see. It was so dry and the frosting was disgustingly sweet, huge mass produced and store bought vibes. God, I was dissatisfied. Then I was like why don't I try warming it up and see if that's better. It was a tiny better, but the cake layers are just dry and lacking a rich chocolate flavor. But also the frosting got semi-slimy so I ended up scraping it off to be able to actually taste the cake again. Such a let down. I have no other words. Almost all of it ended up in the trash. No one liked it and it was so embarrassing. Please don't buy a cake from here. Grew up watching Cake Boss and I'm sorry boss, but this wasn't it.

    For those of us who have lived in town 10+ years we just don't go here? At least I never do unless I'm with someone visiting or looking to bring a cookie platter somewhere. That said, I stopped by for a sweet treat on Friday evening afternoon dinner and stumbled upon their incredible Tres leches "milk and cookies" cake. SO good and perfect to share (although I didn't really want too lol) would absolutely recommend!! Maybe the locals should start to stop back in... seems they have alot of other items and I even saw breakfast sandwiches? Didn't even know they had those!

    Years ago this bakery used to make a mini tiramisu cake with ladyfingers around, but I no longer see it on the menu. Any chance it'll make a comeback?

    They're big-time now. That means that everything that got them famous has most likely been cast aside in the interest of mass appeal. I was there recently and it had all of the Italian neighborhood bakery feel of an overpriced Shop Rite.

They offer different flavors and sizes too, from mini versions to larger cakes that are perfect for sharing. One of the coolest parts of visiting is that the kitchen is completely open. You can watch the pastry chefs assembling these beautiful creations right in front of you. It's mesmerizing and makes the whole experience feel special. The bakery has roots in Northern France and Belgium, where the Merveilleux originated, but pastry chef Frédéric Vaucamps reinvented the classic recipe to make it lighter and more modern. Whatever he did worked because these pastries are unforgettable. A quick tip: cash only, so come prepared. Honestly, if you're anywhere nearby, I think you need to run there. Between the amazing desserts, the friendly staff, and the chance to watch everything being made fresh, it's one of the most enjoyable bakery experiences I've had in a long time. Aux Merveilleux de Fred is a tiny, beautifully fragrant shop on 8th Ave. I ordered the cold brew black and it was one of the smoothest, most satisfying first cups of the day I've had in a long time. Finding genuinely good black cold brew in this city is harder than it should be, and this one hit the spot so perfectly I made a second solo trip before sundown. The chocolate and almond croissant was delicate, flaky, and exactly what a croissant should be. The shop itself is small, no indoor seating, but two benches out front! The staff was warm and the whole place smells incredible the moment you walk in. I've already earmarked the Cramique for my next visit, because if it's anywhere near as good as everything else, I'm in trouble. Do yourself a favor and stop in!

The real shock came when we received the bill; it cost more than our dinner earlier. We later realized that the two items recommended to us were among the most expensive. Overall, the experience felt disappointing and left us with the impression that upselling was prioritized over transparency. Clear pricing and more straightforward recommendations would have made for a much better customer experience.
