Three reasons we're going back. First, the service. Friendly, welcoming, helpful, professional. Our waitress helped us first timers with our meal choices, patiently answering our questions and offering recommendations. On our way out our shared goodbyes affirmed we'd be back. Second, the food was fresh and delicious. The chips and salsas were addictive. That spiciest salsa is NO JOKE. I men we like spicy, but this had us coughing and wiping watery eyes. I got the chicken chilaquiles and my husband got the birria enchiladas. He finished his; I had leftovers that were just as delicious the next day. We learned everything is made from scratch. The freshness attested to that fact. Third, that watermelon agua fresca was amazing!!!! Tried so hard not to gulp it down, even after dipping my chip deep into the spiciest salsa. Very refreshing. There seems to be a lot of buzz about this place. I saw it mentioned on ads on both Instagram and Facebook about this hidden gem for Mexican food. I had to check it out. It's not at all what I thought it might be. Feels like they may do more of a take out business than a sit down one. There are six small tables around a counter. When I came in I said I intended to stay and took a seat and was presented with a menu by the server. Simple and unpretentious Mexican food. Felt very homemade...for me that was both good and bad. Here you will pay for chips and salsa. I did...and it was probably my favorite thing I ate. The chips were fresh, really crispy, perfectly salty. The salsas...I had both the traditional and the hotter one...they were super tasty. I usually can tell what kind of place this is going to be by their chips and salsa and we were already off to a really good start. This place is mostly tacos, but there were chilaquiles, ceviche, and taquitos too. I opted for Mama's Taco. These were three crispy tacos with ground beef, lettuce, and cheese served with rice and beans. I'm not sure why I went for that option, but it was a good choice. Tacos were really crispy. Beef was well-seasoned and, really, tasted like I made them at home. Rice and beans were tasty. I prefer more creamy refried beans but these were more soupy, whole beans. Still tasty. Was it the best I've ever had? Probably not. I did enjoy it. I would go back...especially for the chips and salsa. I might try something not so safe next time. Maybe that's were I went wrong. So I rolled up with my old partner, my brother from another mother. Cool little spot in a strip mall. My partner overshot it and ended up having to do a u turn. Coming from the west traveling east it does come up quickly. When we walked in , after parking of course, it was a feast for the eyes. Lots of cool artwork and trinkets. Freshly cooked and a step above normal counter service Mexican food. Great packaging for Togo orders and good quality ingredients. I had the Papa's Carne and my guests had Mana tacos and Chicken Tinga enchiladas. It was small inside and Togo was the best option for us. Came based off of their video on Instagram claiming to be #1 voted Mexican food in Las Vegas. Based off Yelp Reviews as of June 2026, they are #4 so don't get tricked like we did. We got the Birria tacos dish which had great flavors and the juice was great. We also got the Asada dish which was $24.95 but wasn't worth the price. Rice was bland and beans were bland as well. Asada meat didn't have a lot of seasoning which would have enjoyed more of flavors popped more heavily. We got the chips and salsa and nothing crazy with flavors. Jalapeño that came on the asada dish was spicy ha! Flor was our server and she was amazing. She continued to check in and provided great service and had a great attitude the entire visit. Overall location is good for parking and minimal tables so if you go during lunch/dinner rush, expect to wait for seating. I do like all the artwork on the walls and it gives a great vibe. Was a little odd to see WalMart delivery happening and groceries and milk were put on the floor right in the dining room area but when you need product, you have to make it happen I guess. Might be better options on the menu but even the guy behind our table was on the phone questioning the Camarones à la Diabla to someone and how it should have tasted. I ordered the chicken tinga hard shell tacos -- shredded white meat in a smoky chipotle tomato sauce with beans,, cabbage, salsa, and cotija cheese. Flavorful and satisfying. A few things to know before you go: the space is very small, there are no fountain drinks (only canned sodas for about $3 each), and chips and salsa are an additional $6. Located off the 95/11 and Craig road, this cute little spot definitely has a lot of personality! From the second we walked in we felt welcomed and relaxed. They do have chips & salsa for a charge, but the chips are excellent and the salsa is yummy. We ordered birria egg rolls and our guests got Vegan enchiladas and tacos. We went here on a Thursday afternoon for an early dinner. This place is very clean and we were told we could sit at any table that was open. Utensils and menus are already on the open tables. Their menu isn't too big as far as the amount of food that is listed on them. I settled on the Queso Birria Tacos and my friend had the Taco Trio. We also had the Birria Egg Rolls and Chips and Guacamole. The Birria Egg Rolls were delicious, packed full of Birria. It comes with consume which was ok tasting. My Queso Birria Tacos were good, along with the rice and beans. They weren't the best I ever had like I hear other people say but they were good. The tacos were full of meat. It's a good value. Finally tried this place yesterday. Here is my take. 1. Birria egg rolls where great 2. The guacamole was fresh and homemade ( although ours had a huge piece of avocado that wasn't mashed) 3. The carne asada plate was ok. The 3 tiny flour tortillas was a turn off. Would have preferred one large tortilla 4. The Moms crunchy tacos had good flavor BUT the taco shells tasted like those cheap one you buy in the supermarket. Or similar to a Taco Bell crunchy taco shell. Not what I was expecting. Oh my were my wife and I pleasantly surprised with this restaurant! After having seen many positive reviews on the Las Vegas Foodies site, we decided to try this place. It's about 15 minutes from our home in Sun City Summerlin, which is why it took us a couple months to get out this way. First off, the chips & salsa were great! Fresh & crisp chips with a very unusual but amazingly delicious fresh tasting thick green salsa! A little spicy, but what I would call mild. There is a charge for the chips & salsa, but free refills and hey, they are a family business trying to make it in a world of too many chains to compete with. Well worth it. We started our meal with two appetizers mainly just to try something different. First, their "Queso Fundido." 3 cheeses baked/melted in a small iron skillet topped with/onions, jalapeños & a very generous helping of chorizo on top. Served w/ tortillas. Oh my gosh, Amazing! The cheeses were so stretchy and delish. Ask for a knife to cut it or you'll end up stretching most of contents of the skillet onto your plate while just trying for one good bite! Yum! Quality cheeses are obviously used here for sure! Next was a "cup" of Mexican beef stew (Carne En Su Jugo). Very different flavor, but amazing! Note: the cup is truly a bowl! The waitress said the bowl portion is huge! Additionally there was a large roasted pepper cooked in with the stew that was amazing tasting. Not hot, just a ton of roasted flavor. Next was our "Enchiladas Estilo Michoacán." Red sauces enchiladas plate w/rice & beans. I like it, but not as much as my wife. She absolutely loved it! The beans and rice are delicious. Note: I will ask for the cabbage topping on the side next time because the cabbage was so cold it cooled down the enchiladas a bit too much for me. Minor fix. A couple bites in and I thought to just scrape it off and viola! Much better. This meal was so delicious, I can't rave enough! Every ingredient was so fresh and of amazingly high quality! The items are a little more expensive than average, but when you factor in the delicious flavor and wow factor and the cost to serve these top quality ingredients and the personnel costs to have it cooked to perfection, you should be willing to pay a little more! We will certainly be coming back! The only bummer was that they do not have a liquor license, so no Margarita's for us, which we always love with our Mexican food! We do not blame Carolina's family for this issue, knowing how expensive alcohol licenses are and how strenuous the licensing laws are! Great experience! A family friend told us about this place so we had to give it a try. Carolina and Bobby were so welcoming, friendly and attentive. I called ahead to see if there was a booth type seat for our little one's car seat. Bobby had the perfect set up for us when we arrived! I got the QuesoBirria Tacos and they were incredible. You can tell they use high quality ingredients and I love that they don't use seed oils. The women's restroom has a changing table in it which I highly appreciate! We had the 3 Conchitos, Carne En Su Jugo, and the Taco Trio. My order in particular was the Taco Trio. I wanted a variety of the Chicken Tinga, Birria and "Mom's Meat" which is the seasoned and flavorful ground beef. So freaking good! For drinks we got the Horchata and I had the Cafecito de Olla. Vegan options for a few of their dishes with a $3 up charge. The plates come with rice and beans but the rice is not vegan so we just got extra beans. (We were not told this when we ordered) They did not have their normal foods for the vegan substitution but found some vegan cream and cheese. They used beans for us instead of the vegan meats that they were out of so my tacos were mostly beans with a huge side of beans. I could have just gotten a side of beans and ate it with chips and salsa as the vegan cheese is tasteless. I do appreciate that they tried to accommodate us but the upcharge of $3 when you can't make the item is a bit much. My husband got the enchilada (vegan) which they again used beans then a large side f beans. He stated he would not get it again. We didn't actually get the item how they would borne made so it's hard to say. On the positive the Jamaica was not too sweet and my husband really liked it. For lunch, we shared a taco plate (3) and added an extra taco. We were able to get 2 chicken and 2 ground beef. Wow - tacos are amazing! The chicken is temperature hot and juicy and it's topped with cabbage, Cotija cheese, and crema. I loved the chicken tinga! The shell is perfectly crispy and not oily. The ground beef taco also had a lot of great flavor. If I had to choose - chicken! But, you can't go wrong here! The plate had beans and rice. Wow! The beans were delicious! I've been to Carolina's three times now and every visit has been consistently good. The food always tastes fresh, the portions are solid, and everything I ordered tonight was really good. I also like that they don't cook with seed oils, which is hard to find at a lot of places. The birria eggrolls were excellent, and the taco trio had great flavor. The birria itself wasn't overly fatty like it can be at some spots, and the consommé was really good. If I had one small preference, I personally wish the beans were refried, although I know the way they serve them is more authentic. Only funny complaint is that it was 4/20 and they didn't have any desserts, which felt like a missed opportunity. It's like coconut water with sweetened condensed milk, topped with whip cream and coconut shavings. So light, refreshing, and perfectly not too sweet. Amazing! We've visited Carolina's a few times and every single time the experience has been over the top. It's busy most times but the waiting isn't long. We are always greeted by every single employee and every time we visit they all make us feel like family. Everyone is really friendly and they're always patient every time we order. They also always check in on our tables to make sure we have everything we need. It's always a great vibe and you can tell Carolina cherishes and values her employees because they're always happy. Ignore the negative reviews. If they have something negative to say, chances are they started some drama or were disrespectful and did not deserve to be there. On to the food. One word: BEST! Seriously! I was never a fan of birria until I visited Carolinas. All other birria I tasted gave a pot roast feeling with some Mexican sauce. This birria is perfectly seasoned, tender, with high quality meat. Truly the best in Las Vegas hands down and the one and only place I'll recommend for anyone looking for birria. Their rice and beans are also one of the best I've had. We've ordered the tinga, birria, ground beef tacos. Don't sleep on their birria egg rolls because you won't find anything like it. My wife and I came here for lunch. We are new to Las Vegas and didn't want to go to some chain restaurant. This hidden gem was in the area so we decided to try it.
