    This restaurant is a must try for an intimate dining experience. The dim lighting and modern, luxurious design set the mood right away. Our large group was seated in their private Whiskey Room, which was spacious and beautifully decorated. One detail that really caught my eye was the birth certificates on the walls showing the birth dates of classic spirits. We had a set menu, but they were accommodating to guests who wanted items from the regular menu. The appetizers were great, especially the jumbo shrimp cocktail and the wagyu cheesesteak sliders. The shaved wagyu on Texas-toast-style bread was definitely my favorite. For the entree, I chose the salmon. It was cooked well, but the skin was a bit overdone, making the filet tougher than I prefer. I like salmon medium so it's tender enough to cut with a fork. I tried the striploin tender steak and I should have ordered that. The sides were all very tasty, especially the mushrooms and mac and cheese. I'd definitely recommend this place if you're looking for a very nice dinner. But be prepared to pay $120+ per person.

    The cheesesteak appetizer was the star of the show! Unfortunately everything else fell short of expectations. While service was attentive, the rest of the food (rib cap, mac n cheese) was mediocre at best compared to other spots in Las Vegas. Ambiance had no view which was a missed opportunity.

    Date night on Valentine's Day was very busy, upon showing up, I was greeted with a beautiful rose and seated at our table. It was so nice inside and smelled amazing. So many menus but especially their valentines menu was a favorite. We tried the main dishes people's rave about and they did not disappoint. The steak was decadent and perfectly cooked. I loved the service here. The only problem I had was getting food sickness after eating here. I didn't make a big deal or even say anything because my partner did not have the same experience and we ate the same things. Unsure what that was about but the experience really was great.

    EXCELLENT EXPERIENCE I want to preface with everything that our server recommended was a winner. Everything that we decided to order on our own definitely fell short of expectations. Server's recs below - we would have taken the other recs of the creamy potatoes too however we were not too hungry at that time and wanted some light dishes Wagyu Cheesesteak bites - so rich, with tender wagyu, buttery brioche bun, creamy sharp cheese, this was so good Rib Cap - done to perfection! love the crispy crust. there were no chunks of fat, everything was well marbled into the meat so that there was no gummy parts. You can pick a hot knife from their box set, which was a unique experience. Horseradish - SO FRESH, SO GOOD! it really was such a refreshing powerful kick that went will with the meats Dubai Chocolate Sundae - LOVE the pistachio paste with the crispy filament cookies. the ice cream itself was not too sweet and rich/creamy, with a strong real chocolate presence. the strawberries were pristine and unbruised. Our orders: Half dozen oysters - some were dry like they've been shucked a while ago and sitting out , and some had miniscule meat compared to the others. IMO, they should've tossed the bad/very thin ones and kept a minimum standard of size and juice Broccolini - THICK stems , you could get better quality at Costco with younger thinner stems but with a retained rich flavor Matcha Cocktail - well balanced with vanilla Season's Essence - tequila and mezcal cocktail - would have preferred it to be less sweet, but it does the job if you like sweet and strong Service from everyone was excellent - frequent water refills, frequent check ins, a cocktail cart, excellent knowledge of the menu, and nice touches as someone comes to immediately fold your napkin when you leave the table to go use their restroom. Ambience was clean, classy, large and fancy. the bathroom stall itself is the size of a new york studio. there was all sorts of cute seating. it was a luxurious feel to everything. Overall, I recommend to come for a special occasion and to just follow your server's recommendations solely. I would return again as it was an excellent experience!

    We came at seven for our reservation and while it took a few minutes to seat, we had a great table on the "porch" area. We had a rather large party but CS was on it the entire meal! Staff were great! The food was while very expensive, it was an amazing meal. Got the full ribeye cooked to perfection! Sides were great and I can say the onion rings were perfect, crispy and crunchy! Finally stuffed we left happy! Can highly recommend, but plan on spending $ 125 per person minimum.

    5-stars for all of it... food, service, and ambiance! We went randomly on a Sunday night and were very impressed with this place. Services was great (shout out to Morgan and Isaac) who were both very attentive and personable. We started with the crab cake, which was perfectly "lumpy" with slightly sweet and salty seasoning. I ordered the branzino, which was not what I was expecting as far as preparation and presentation, but i was pleasantly surprised. It was the perfect balance of umami and sweet. My husband had the boneless ribeye and that was an amazing texture with excellent flavor. We shared the asparagus and sautéed spinach. Everything was prepared well and we really enjoyed it. We also ordered the tequila old fashion which was also pretty good... unique, but good. We'll definitely be back as the ambiance is so nice... upscale, but not stuffy. They also had a really nice mix of music playing which complimented the vibe well. Pics don't do this place justice.

    Hailey was my wonderful server that gave us a lovely experience. The caviar poppers were sooooo delightful! The yellowtail sashimi was probably the best I've ever had it was so flavorful . The cod was really good and I also enjoyed the branzino as well. The sides weren't good though. Wasn't a fan of the brussels sprouts but I should've known when I seen it came with pomegranate. The potato au gratin could've had more seasoning too. The ambiance was beautiful, I'd definitely come back.

    By far my favorite restaurant in Las Vegas. This specific meal: Our host was warm and welcoming. Our server, Jason, was professional and attentive. Thank you. The service: If you really watch there is much to be appreciative of. You notice nothing and everything at once. The front of the house moves with grace. The silent nods. The hand upon the chest. The attention to detail is unmatched. The water that is topped not too high and never reaches the bottom. The courses were planned with such precision and care. The service never missed a beat. The food. Perfection. The highlights were (for us) the Caviar Poppers, the Harvest Salad & the Pommes puree. But the steak. Let. Me. Thank. Whoever cooked that meat to perfection. The KC 14 oz Striploin is what dreams are made of. We enjoyed every single bite. We even took the cookie trio back upstairs, got in robes and had some of the most delicious cookies in bed to end the best night ever. So thanks to the pastry chef for being whimsical & talented. Come here and support them. Tip your servers well and enjoy a fantastic fu*king meal.

    Carversteak delivers one of the best steakhouse experiences on the Strip. From the moment I walked in, the atmosphere was upscale yet inviting, modern but with a classy touch. There is a dress code but it seems relaxed during the summer. I thought the knife presentation was a unique touch. One of the servers brought out a selection of knives to choose from and I chose a finer one. This made the experience personal and fun. My medium striploin steak was absolutely perfect.. Juicy, flavorful, and beautifully seared on the outside. I paired it with a twice-baked potato, a Caesar salad, and warm blue cheese bread that was rich and indulgent. The service was outstanding from start to finish--attentive without being intrusive, and every detail was handled flawlessly. Between the exceptional food, the elegant setting, and the thoughtful touches, Carversteak easily stands out as a solid option. I'd return.

    Although it's a bit of a walk to the restaurant from the valet area, the decor and lighting was balanced perfectly. It wasn't too bright where you could see everyone's face and it wasn't too dark where you would need to use your flashlight on your phone to look through the menu. The server we had was outstanding. I wish I remembered his name. He was accommodating with my allergies in both food and cocktails. I had a few cocktails, appetizers, a steak entree with lobster tail and a dessert. What I thought was quite interesting is that they would change the brightness of the table lamp depending on your course. It was pretty neat. Something so little yet noticeable if you really pay attention. Overall, I'd go again and try out some other dishes.

    Amazing environment and a very upscale experience. Staff was professional, the restaurant was spotless, and the dark, comfortable setting feels perfect for a nice night out. The food was excellent, and the mashed potatoes were phenomenal, easily the best I've ever had. It's definitely pricey, but worth it. Highly recommend.

    Sometimes fate has a funny way of guiding you to the right place. A few days before our Vegas trip, my husband said "Carvers" when he actually meant "Culver's," and we laughed about it. The next day, I randomly noticed the same word again -- Carvers. When it came time to make dinner reservations in Vegas, that same name popped up, and I decided to take it as a sign. And I'm so glad I did, because Carver Steakhouse completely exceeded our expectations. From start to finish, everything was flawless -- from the warm welcome to the best seat in the house. The caviar was absolutely delicious, perfectly chilled and rich in flavor. My Hugo from the Spritz Bar was light, refreshing, and perfectly balanced. Our steaks were cooked to perfection, sides were incredible, and to top it all off, the complimentary dessert was such a thoughtful touch that truly sealed the evening. Carver Steakhouse, you outdid yourself. Thank you for making our Vegas celebration unforgettable -- amazing food, impeccable service, and just the right amount of magic.     Upon checking in for our reservation we were greeted with such a welcoming smile. "We're celebrating your anniversary? And we're so happy to have you join us for this special occasion" We were escorted to our table where a card was placed under a small table lamp... "Happy Anniversary, we hope your day is filled with happiness, great company and an even better meal" Minutes later we were offered water followed by an attractive cocktail cart. My wife and I have our go to drinks, and based on this knowledge, our mixologist gave us some recommendations. Personally I love an Old Fashioned Bourbon, but also I love good tequila. Hence the Alto Reposado Old Fashioned. Absolutely delicious. What's interesting is the chocolate crisp makes an excellent compliment same as a luxardo cherry would to the last few sips. While the decor and the service were all beautiful, romantic and worth an article on its own, I want to say that the food was absolutely the star of the experience! What Did Order? - Blue Crab Cake 5/5 stars - Yellowtail sashimi 5/5 - Potato Gratin 5/5 - Wagyu Rib Cap 5/5 In conversation with our waitress, Daniela, "My wife typically is capped at a 4oz of any steak, my self I'm good with 6oz, considering the crab cake and the sashimi, what do you recommend?" "The Wagyu Rib Cap, you'll love it... if I could have it every night of the week, I would."Standing no more than 5'3" and 120lbs the look in her eyes when she said that had me convinced. Let me say this on record, this little Wagyu Rib Cap is the absolute best steak I've had this year. I cannot think of another steakhouse I would rather go to. Not Nobu, not ARC, not Flemings, Peter Luger, Capital or Palm in NYC and all of those I love. Overall, Carversteak really made a great first and lasting impression from service to the kitchen, the management all deserve recognition and praise, all around excellent a fully convinced 5 out of 5 stars. We were so full that we passed on dessert, but would definitely be back because the options were inventive and looked so tasty. A doughnut bread pudding, a bourbon brownie; yes to both please!
