Took some business associates from Japan here to celebrate a great 2025 and it did not disappoint. Obviously it's a steak house so you are doing yourself a disservice if you order anything other than that. We did try a few apps including the beef skewers, pork belly, and cheesesteak. All were excellent with the skewers being the standout. We ordered a variety of steaks but the table favorite was the classic Ribeye. Mine was cooked perfectly and seasoned well. Hard to beat a quality steak and you get to choose your knife from a several options which is a cool touch! Lots of sides to choose from but we landed on asparagus, mac & cheese, and creamed corn. The corn was my favorite but people also enjoyed the asparagus which was cooked well and shaved to remove the tougher lower portion of the stalks. If you enjoy wine, there are very few inexpensive bottle options so just be prepared and all of their drinks come at a premium. We also enjoyed a variety of desserts but the overwhelming favorite was the Baked Nevada... their take on a baked Alaska. Lit on fire and then sliced 6 ways, we did not leave this meal hungry! I will say that the marshmallow outside did get a bit burnt but was still really tasty. My only critique again here is the price... I don't mind paying for a great steak and the steak prices are actually very reasonable. However, everything else on the menu is super expensive including any of the additions or sauces you can add. Came with high expectations and was still impressed. Prices are a tad higher than other Strip steakhouses but I think it's justified as they're much more well-rounded than other Strip steakhouses. Too bad they're located in Resorts World. Their filet mignon was a perfect medium for us. It didn't come with any superfluous sauces and wasn't overseasoned. They have quality meat and are happy to let it do its own talking, and I really appreciated that. The Lobster en croute was unique and super good. I don't see it on too many menus, and they don't play around with the portions. There was enough lobster meat that it's probably best shared with at least 2 people unless you plan to fill up on lobster only. The salad was a great starter, and the carrot cake ended up being a clutch recommendation from our waiter. There were several other desserts that looked great on the menu, but our waiter told us the carrot cake was a seasonal special that was doing really well among customers, and I can see why. Importantly, Carversteak is located all the way by Resort World's northeast entrance, literally the complete opposite corner from their parking lot. Thanks to Resort World's disastrous floor planning, it wouldn't be much longer of a walk if you're visiting from Fontainebleu, Circus Circus, or the Convention Center. Carversteak's closest and most direct parking might actually be one of the lots of the businesses/restaurants directly across the street. Personally I plan to look into parking elsewhere next time to avoid Resort World's annoying parking practices (we came just to eat and they charged us for event parking 4 hours prior to that event starting even though the parking lot was quite empty; MGM typically won't institute event parking until 3 hours prior to an event). read more

Tried out Carversteak after a lot of research as a top option for a future group dinner. The menu - on paper - looked absolutely perfect. This place has a lot of buzz - including mentions as one of the best steakhouses on the strip and so forth. The restaurant is beautiful, ambiance is great, and service is impeccable. We were treated so well, and genuinely a great group of workers here. The food - sadly, it was an experience that the further we got in our taxi from the restaurant the more we realized it just wasn't good. Appetizers and drinks - fantastic. The pork belly and cheesesteak sliders had us thinking the rest of the meal would be epic. Then the salad came (Caesar) and it was fine. And then the mains came - fish was cold, odd; not really seasoned and in an odd red sauce without flavor and some grapes. What we thought was spinach may have been some form of other green, like chard? Stems weren't removed, resulting in strings of about 6-8 inch long, not super chewable vegetable. It was odd all around. Mashed potatoes - decent, warm at least, but a bit of a slimy texture. The Brussels sprouts - we love Brussels sprouts! They were so odd we literally each tried one piece and then a second to validate our POV and didn't touch them again. Tangy is good - sour, not so much. Lastly, the Dubai sundae - sounded so so good but alas it was just meh. Again, service was so so good. Food, just really not, and we are not picky people. What made me sad is all the people here on vacation (place is packed!) coming for the hype and anticipating a remarkable (albeit proxy) dinner, and potentially feeling like we did. We kicked off my birthday weekend in Vegas here after hearing glowing reviews and having one friend who *had* to have steak. Big mistake. We had a dinner reservation on a Friday and were seated promptly. The restaurant itself is gorgeous - moody lighting, upscale décor, and these incredible rope-like light fixtures that hang from the ceiling. Drinks and appetizers came out fast and were solid. Then... everything fell apart. It took about 30 minutes just to flag someone down to place our dinner orders. We'd told the staff upfront that we had show tickets later and would need to leave a full three hours later - they said no problem. Yet, 45 minutes after ordering and 2 hours after being seated, our mains finally arrived: cold, dry, and sad. My filet mignon and lobster tail were both overcooked, the wagyu was somehow bone dry, and the scallops - though beautiful - were cold too. The sides (Brussels sprouts and potatoes au gratin) came after the mains and were actually delicious, which only made the rest of the meal more disappointing. Our waitress was lovely and genuinely tried to make things right, but management's first offer was to remake all our mains or give us free desserts despite us having to leave for the aforementioned show. They then tried to reason they would only comp the drinks, apps, and sides - basically, the only things we actually liked. After some very uncomfortable back and forth, they did comp our mains instead, which was the least they could do. For a restaurant this hyped, the experience was a total flop. The food was bad, the timing was worse, and it ended up being a ruined birthday dinner. The space is stunning, but that's about all it has going for it. read more

I got the Kansas steak, dry aged very well prepared. They actually have a selection of steak knives to choose from... like they come out with a presentation box and you choose. Mine was very sharp and had signs of being sharpened regularly. I also had the potatoes au grat... which is French for cheesy potatoes... they were excellent... now a bit about the service. My waiter was James... well turned out possibly early thirty's with an epic handlebar mustache... he provided me with excellent service and other staff backed him up as a good crew will but my service aside ( and again it was excellent) I watched as an older couple was sat next to me. The lady mentioned chilled... within a minute James returned with a shawl. ( think the blanket granny kept on the couch. The lady was comfortably wrapped and no one on staff blinked an eye telling me this wasn't exceptional service as much as expected service. First time visiting Carversteak inside Resorts World, and it did not disappoint! The restaurant has a chic, with dim lighting in the front dining room, where we were seated. Service was excellent--Steven took care of us and was incredibly attentive, offering thoughtful suggestions for both food and drinks. I splurged on the tableside Tequila Old Fashioned. It was smooth, well-balanced, and such a fun experience--though at \$45, definitely a luxury treat. For starters, we ordered the yellowtail sashimi, salmon crispy rice, and the corn & clam chowder. Each one was outstanding. The chowder was especially unique, topped with popcorn for a playful twist. Our main course was the 18oz Dry-Aged Ribeye, paired with Pommes Purée (whipped potatoes with truffle) and creamed spinach. The steak was tender, juicy, and perfectly seasoned--so flavorful it didn't even need the sauces we ordered. The whipped potatoes were rich and very truffle-forward (a must if you're a truffle fan, but possibly overpowering if you're not). Although we were stuffed, we couldn't resist dessert. The crème brûlée was creamy, decadent, and full of vanilla bean flavor--a perfect finish to the meal. Overall: stylish ambiance, fantastic service, and memorable food. We ate here one night during my Husband's work trip in LV. It was a great location to our hotel being walking distance. My husband overall enjoyed his steak as well. The bone marrow was underwhelming and tasteless for the $15 add on. You only got half the bone and there was zero flavor. I make that at home all the time and you can definitely season it several ways to elevate your steak. The potato gratin was fabulous; another great recommendation. We also tried the Mac and cheese, the Brussels, creamed corn and onion rings. The batter on the onion rings were over done and/or the grease was dirty/old that they fried them in. Not a table favorite. The Brussels were done nicely, I liked the sweet factor, and the creamed corn was tasty as well. Mac was just Mac, nothing special to write home about. Drinks were excellent. Desserts were ehhh; the only amazing one was the waitress's recommendation of the carrot cake. It was moist, delicious and definitely the best one we ordered. I have been here several times, and every time the bill has been picked up by the company I was with, which definitely helps the good time. However, having said that, read on... Las Vegas is rife with Steakhouses- overpriced, over-the-top steakhouses. I find most of them pretentious, and the steaks are unnecessarily expensive- it's a steak, not a bar of gold. There are a few steakhouse that I have been to that are actually okay, and go against the pretentious mode- and Carversteak is one of them. While expensive, it is not pretentious, the service is excellent without being overbearing and the steaks are definitely good. On my most recent visit, I was with a group of 10, I ordered a Wedge Salad and an aged KC bone-in Strip steak. While it wasn't the best steak I ever had, it was good, cooked perfectly, although it lacked that "aged" flavor which I love so much. Still, it was good and I was happy. One Filet of Ribeye and the other 2 Filet Mignon. Our sides were Roasted Mushrooms, Creamed Corn, 2 orders of Beer-Battered Onion Rings and Asparagus. Everything was delicious! My cousins and I take an annual trip to Vegas, and this year we chose Carversteak to celebrate my birthday. We went on Friday, 8/22, and even though the restaurant was busy, we immediately felt welcomed. The staff was attentive from start to finish, making our night feel truly special. Our server, Jason, was exceptional. He guided us through the menu since it was our first time dining there, and his attentiveness meant we never had to ask for much. He basically he anticipated anything we could even think to ask for. We also loved Betty (nicknamed "Pretty Betty" because she looked like a model and was such a joy to talk to). She radiated positivity and made every interaction a delight. Honestly, every staff member we encountered went above and beyond, which made the evening memorable. The fun touch of getting to "choose our weapon" for the steaks added to the overall experience. As for the food, it was absolutely incredible. While it is on the pricier side the quality, flavors, and service make it well worth it. If you can, don't miss their carrot cake (a recommendation from Jason as it wasn't actually listed on the dessert menu). It was hands down the best carrot cake I've ever had. Recently had the opportunity to dine at Carversteak for my mom's birthday dinner. Right when we got seated, they gave her a birthday card and everyone throughout the night wished her happy birthday. Super thoughtful touch that made her feel special on her birthday! The food itself was amazing - everything we ordered even down to the salad was delicious. Service was amazing, never had to ask for anything because they really thought of everything. I loved the knife selection for our steaks too! I'd recommend ordering the martini cart as they make it table side and it's a fun little experience. I'd recommend dining her for a girls night out, date night, or a celebration! read more

Great early evening, a private night at the bar early. Michelle my bartender was attentive but not obtrusive, funny smart and knows the menu as a professional of her status should. Ryan the GM stopped by to ensure my evening was going well. Ryan is funny, smart and works hard to know his customer. Excellent food, above and beyond team and a feeling of being cared for.
