We stopped in on our way from Estes Park to the airport, so I'm basing this review on only one visit, but I was very impressed with the food and service (thank you to our server, Lauren)! I had the chicken enchiladas with red sauce from the lunch menu and they were so delicious! The red sauce was so rich and complex and I was in heaven with the first bite. We also ordered the salsa sampler and all of those were fresh and delicious--my husband especially liked the apricot habanero salsa. My date + I arrived on time for our reservation but all the booths were occupied so we happily caught a 4-top, ordered a couple cocktails, + struck up a brief conversation with Bobby, the GM. While normally beer battered, the chef happily grilled the cod for us in order to keep the meal a bit lighter. I've had numerous street style tacos but never served on a board where you assemble the tacos yourself, so I wasn't sure how I'd like that. It was perfect! No bueno. After three visits with yesterday's visit being the worst, I feel compelled to share. The service and margarita were absolutely dreadful... so bad it was almost comical. I sat at the bar and was prepared to have appetizers and dinner. But after being ignored then served the worst watery tasteless margarita, I took apps and dinner off the table and took my appetite to go. But not before paying $17 (marg plus tip) for service and product worth a dollar in quarters, maybe less. Needless to say, I'll never be back. I went last night close to closing (felt terrible about it) and the staff were incredibly kind, service was super fast, & the food was just as great as always. First time here, I walked in and asked hostess if we can get table for 2 outside. She sat us and we waited probably 10 mins for the manager to come up to us and ask if anyone greeted us. Server came late to greet us and manager ended up taking our order. Our server was very unpleasant, bad day? I don't know but he barely checked our table, first didn't greet us or take our order, the manager did. Second at the end I asked for Togo boxes and you would think he would grab a bag to go with it. But when he came back I asked for refill on chips and he gave me the feeling of him not wanting to be there. So he brings me my chips and then I asked if he can get me a bag. I love Centro! I think that the environment is overall awesome, and the staff is always nice and welcoming. I personally love going to Centro on dates and splitting two of the taco boards. He was able to scrape it off with ease though. My favorite and best deal is the queso. I was extremely skeptical to try this queso with pumpkin seeds and pesto?? It doesn't sound like your typical queso and let me tell you...it ISNT! This queso is hands down the creamiest, most delicious queso you will ever have, in addition to this delightful offering, you can also get it for free on your first check in with Yelp. Anytime I have visitors coming, Centro is the place I take them, hands down. Please know the reason for the 4 stars is actually because of staff. Staff can be a hit or a miss. Some staff are always alert and others could be laughing in a corner and not notice I've been out of water for 10 minutes or forget our check. *I went with a group for Galentine's Day and the waiter refused our coins to pay for the bill, she said if she accepted them it would come out of her own pocket (which made NO sense). We were also going to leave her tip in cash, but since her attitude seemed snooby, we decided to just use card and not argue as to the fact we couldn't put coins down to create exact change. Came here for dinner last night after original dinner plans fell through and I'm glad we did! We came in as a party of 6 to celebrate a birthday and were seated right away inside, the patio was packed. The host was so kind and accommodating, I had cupcakes in hand and he offered to refrigerate them and present them when ready. I really appreciated that! Now to food. I ordered a spicy passion fruit margarita, guac for the table and the carnitas al pastor taco board. Guacamole was perfect, not too spicy, not too many things in it. The margarita was so delicious, a little spicier than other spicy margs I've had but so yummy! The carnitas were perfectly cooked and flavor was really good. The board comes with pineapple, pico cabbage, 2 sauces, and lime for you to add to the taco. It also came with street corn that was to die for!! The rest of the table got birria burritos and a grilled squash and tofu bowl. I didn't try the burrito but was told it was tasty. The beef consommé is brought over in a small pitcher and poured over the top of the burrito. My son devoured the whole thing and that says a lot! I did get to try the tofu bowl and it was great if you're looking for a vegan option. The green sauce it was served with was amazing!
