The broccoli bits are what you get after you shake a grocery bag holding your broccoli crowns. Grilled onion rings are charred sand sweet. A sweet chocolatey gravy of black garlic is dusted on top. Half of what you're paying for is the service, and all the staff we interacted with were extremely knowledgable about ingredients and techniques, and noticed that my partner was left handed almost immediately and adjusted accordingly. The highlight of the standard menu was the morels stuffed with quail (served alongside, you guessed it, quail), drizzled with concentrated birch sap. We were left puzzled as to why we as a society are not consuming more birch sap! The caviar supplement is simply the best caviar course in all of LA, with a generous helping of golden osetra caviar hidden beneath a white asparagus forest.
