I got the original castella and it was very underwhelming. The cake looked like someone sawed a side of it and took out a piece since there was a hollow portion. The disappointment didn't end there. I expected a smooth cut, but cutting into the cake felt like cutting into stale bread. The top and bottom layer were dry. The middle layer wasn't soft or spongey. Castella was a fairly popular pastry item in Korea, at least when I used to live there. I pretty much grew up with this stuff and got sick of it. I always thought it was rather bland in flavor. This place takes castella to a new level by adding cheese, chocolate chips, or cream. It also has Japanese style cheesecake, which is more like a sponge cake than a traditional cheesecake we are familiar with. I only tried the cheesecake so far. I did like the texture and subtle sweetness of the cheesecake, but much like castella, it lacked flavor. I really didn't get much cream cheese flavor. If someone gave this to me without telling me what it is, I probably would've guessed it as a slightly under-baked sponge cake. It was still warm when I got it so the texture was very soft. They recommend you try eating half of it warm, and other half cold (after it's been refrigerated). There was little more flavor when it was warm, but it had better texture after it was refrigerated. I wouldn't mind trying other items at this place, but wish they sold single serving portions instead of whole portions. This is a take-out place only. There's no seating inside or outside. read more

Cheesetella: The fluffy Korean cake that is less wiggly than a corgi's butt while making my butt more jiggly at the same time! So the Cheesetella is a castella sponge cake with cheddar cheese in it. Let that sink in because you just won't believe how excellent it works. The sponge cake is super airy and delicate in flavor. You would think the cheddar would easily overpower this cake but it doesn't. The cheddar cheese adds just the slightest amount of saltiness with a hint of cheddar cheese at the end. It works if you love sweet-and-savory combinations. If you don't like sweet-and-savory, stick with the original castella, the Chocotella, or the Creamtella. They also sell Japanese cheesecake as well. But I'm sorry you sweet-and-salty haters have baby tastebuds though. You probably also hate pineapple on pizzas, think mayonnaise is too spicy, and you probably have the Solitaire app installed somewhere on your phone. Dude, the menu says $4.75 for the drink but the girl charged me $6. She said that their menu was outdated from 2 years ago but it's huge and up against the side, and some of the prices are changed so I don't get it??? She said it says $6 on their website but it literally says 4.95 on the website LMAO. They need to get their shit together and have some clear signage? Cus even the sign next to the ordering place in tiny font that said these drinks are $6 didn't include the one I ordered, but only the sky lemonade. Regardless, the itself drink was awful. It was called sparkling flower fizz but it should be called sparkling lemon piss. It was so goddamn sour it gave me a stomachache. Deadass it tasted like little lemon peel bits with like a crap ton of lemon juice and maybe a little splash mango flavoring. I tried to force myself to drink it since I paid $6 dollars for it, but I couldn't do it. Once my stomach started hurting from the acidity I just gave up. I go to the Source often and usually stop by Cheesetella once a month. The first time I bought, probably 1.5 year ago, it was great 5 out of 5 stars. It's so fluffy and soft. After that the quality depends on your luck. Sometimes I got the shorter piece and more dense. Sometimes too dry. This time I got the piece that fluffy at the top and the bottom is dry and hard. Was recommended to try this place! This location is a small stall located at The Source OC. I ended up getting the original castella. For $10, you get a pretty huge part of the cake. Cake was very underwhelming. It had a cotton soft texture, but was very eggy for some reason. I don't get this place at all. It's located on the first floor of The Source. I came on a weekday afternoon and there was no wait. The teeny-tiny store, which is actually not much more than a counter, can only accommodate one customer at a time. There are a few patio tables in the communal outdoor mall area but this is really a grab and go kind of place. I ordered a cheesetella and an iced mint latte. The guy working here was very nice. Although it just tasted like minty milk, the "latte" was refreshing - and was gone in three or four sips because the cup was almost entirely ice. I was expecting a small piece of cake but was handed a box containing a slab of "cake" the size of a loaf of bread. I thought the cheesetella actually is more bread-like than cake. I sat at one of the outdoor tables and had a couple bites and thought "This is it???" I took it home and heated it up as per the instructions but warming this travesty did nothing to help it. No, did not like it at all. I'm not sure what I'm missing. To better describe how it tasted, let me give step by step instructions on how to make a cheesetella yourself: 1. Take an unsliced loaf of Wonderbread and cut it lengthwise in half. 2. Remove top half of loaf. 3. Take some Kraft cheddar cheese slices and put one layer on the bottom half of the loaf. 4. 15 minute wait after 6pm for a Castella Bread. The bread is very soft and good - smells like eggs. I thought it wasn't too sanitary - the cashier was also touching the bread without washing her hands. I would really like her to wear gloves or wash her hands before handling bread. This place has been open for about two years now and I've seen it here and there when I've gone to The Source but it's really small on the corner in the way back of the plaza so it's easy to miss. I was at there yesterday with a couple friends while waiting for a table to open up at Yoshiharu Ramen and we wanted something light because we were all starving. The four of us shared their Creamtella and honestly, I wasn't expecting much after seeing all the mixed reviews. The cream was evenly distributed all throughout the nice and fluffy sponge cake. Well, Cheesetella is one of those places. They have another shop on Diamond Bar Blvd, but the one I went to was in Brea. Their cake is super soft & light, not too sweet. It's amazingly delicious. I actually find it tastier than Yu Cake's. The price is only 10.50 for an ENTIRE cake. That's equivalent to ONE slice at Yu Cake. This is definitely better bang for the buck. Incredibly quality cake at an affordable and reasonable price. Their box and packaging isn't bad either. The only issue is you have to wait 15 minutes for the cheese cake. Japanese JIGGLY cheesecake is a difficult recipe but SO yummy. It's hard to find a good place that sells consistently fluffy goodness. When my friend and I saw this, we were ecstatic to try some of these! Layout: it's kind of small and cramped. I like the window setup where you can see them wrap the fresh cakes that come out. For the Japanese cheesecake, I thought this was a little disappointing in the lack of bounce. The typical jiggly cheesecake gives you that airy bouncy texture that I didn't get for this. The taste was light and yummy in itself. The first time I came, though, they said we had to wait three hours for it. I think they bake in batches, so if you have a specific cake you want, consider falling ahead of time. Chocolate cake wasn't very good. The cake was a little flat and wasn't very moist. This definitely was much worse. It was kind of dry and too eggy. I tried their matcha latte, and it was HORRIBLE. It was too sweet and dense. I couldn't even finish it. Good thing I walked over to the side and saw these giant slices of cake shaped into rectangles (6-7 inch x 4 inch approx). That was when I realized why it costs $8-10, because it will feed 2-3 people. I got the one called "Cheese" because I love cake, and I love cheesecake. Took it home, thinking it was going to taste like a soft Japanese cheesecake, then that's when I saw the slices of cheese in the middle. So it looked more like a sponge cake cheese "sandwich" Caution: If you want or are expecting a "sweet" or super sweet cake, don't buy their cake because it will not meet your expectations. When I saw this place yesterday on my way to Ding Tea, I immediately thought this was the same thing as Uncle Tetsu, the japanese jiggly cheesecake, but it was almost a lighter version of castella and it was amazing!
