We were heading to a different place when the rain suddenly let loose. So we dodged into Chimayo and could not have been more pleased! Chimayo is not cheap, but oh, is it worth every penny. We shared a blueberry & prickly pear margarita, along with a carrot bisque that hit the spot after freezing in the rain. This was one of our favorite places in town. But not today. We ordered drinks and appetizers. Then our waiter returned and we asked about our drinks and appetizers. He took our lunch order. No drinks yet. My husbands meal came out then the appetizers still no drinks. And no food for me. I canceled my drink and then my meal came out totally gross and swimming in grease. Food to die for !! Generous portions meant I was stuffed. I had the Wahoo fish tacos. Unbelievable! Of course I thought Wahoo was just a name for some mysterious fish that no one would order. Boy was I wrong. It was so flavorful. But it was too much food. I could have shared this entire with someone easily. Why did we have the guacamole and chips as an appetizer? Visiting from Phoenix for my sister's birthday and decided to try Chimayo after seeing great reviews on here. We got several plates to share. The seasonal squash fondue appetizer was so flavorful and delicious! Our favorite dish of the night. We also shared the steak pizza, seasonal pear salad and Mac n cheese with green Chile and bacon, none of which disappointed. Another highlight was the peach martinis. Our server, Bradley, really made the night that much better. He made great recommendations, was so kind (we didn't realize they closed and he never said a word...just let us relax and chat and finish our drinks) and was fun to chat with. Over-priced. I got the shrimp and mango (special that day) ceviche, which was $15. It was about maybe $10 good at most, lacking a bit in flavor but not terrible and came with some bland tortilla chips. I got the Mexican Street Corn, which was seasonal and it was quite tasty but a whopping $6 (I think they missed part of the meaning of "street" corn). My hubby got one of the salads with salmon, which he said was good. I tasted the salmon and a bit of the dressing and was not impressed. I think that was $18.50. And one more critique: NO children's menu areyoucrazy?? C'mon, with a menu this expensive, you could do me a little favor. Our waiter kindly suggested we get the mac and cheese, plain with butter...HA! So what, you could charge me full price for buttered pasta?! (I think that would have been about $15. Ummm, no thanks). Or we could get sides (potato wedges was the only thing my kid woulda touched). Our waited was nice though and comped us a free drink (woulda been two but I wasn't nearly ready) for my corn coming out late. So, well, three stars for friendly staff and food that was not too bad. We came for our 5 yr anniversary. We both had the filet mignon, medium rare. Mine was a bit on the more rare side while my partner's was textbook medium rare. *still delish* we were both amazed with the taste of everything. Pros: Knowledgeable, attentive (but not hovering) wait staff, owner circulating and actually working, excellent wine list, and the food was EXCEPTIONAL as well as reasonably priced. The regular menu seems to offer something for everyone, with gluten free options. We ordered two seasonal offerings, the Roasted Butternut Squash Salad and the Elk Two Ways. We split both, and they were phenomenal: terrific mixtures of taste, texture, and spice. The salad combined squash, dates, spicy pecans, apple, bacon, and a soft blue-style cheese in a light vinaigrette. The elk chops were prepared in a chokecherry reduction glaze, paired with sweet potato gratin, and roasted vegetables. So tasty! Cons: b/c of the open architecture, it's a bit noisy, but that's minor. This is definitely a place to enjoy and recommend! We'll be back. read more

My co-worker have been here three times, and I have been here twice, and both food and service are fantastic. We had an opportunity to sit and watch the chef prepare our food. Showmanship and entertainment of preparing the food are picture capture moments. I had the Scottish Salmon, which actually came from Scotland, really good agave mixture sauce. Will be back for more, and probably next time I will have some lamb. :) Chimayo opened on first week of May 2012. As a new restaurant, they are open to suggestions and comments. My observation suggest, that twice I have been here, the restaurant is full. For customer service in Durango, Colorado, I can say that over all service are medium to slow, sense of urgency is not priority. As a relax town, I understand why. They are friendly, and I can see how they talk and take care of their customers. If only the customers will communicate with their server, I am sure they will accommodate and will make you happy. read more

Gave this place a chance since the Irish Embassy Pub was only serving brunch and my parents and I were ready for lunch! We were seated promptly, given menus, and served a pitcher of water for the table. My dad ordered the Machaca scramble, my mom had the steak tacos, and I ordered the pork street tacos. The food took quite awhile to come out, to the point where we were going to flag down our waitress and ask what was going on. But just as we were going to do this she came with the food :) I LOVED the pork tacos. The plate comes with two of them that are STUFFED with delicious, spicy meat. Topped with fresh avocado and pico de gallo and only a tiny bit of cheese = PERFECTION. On the side they give you a delicious mixed kale salad/slaw. I was so ecstatically happy with my order that I scarfed it down in minutes. The steak tacos are a favorite of my mom's so there were no problems there. The meat was tasty and the side salad was fresh. My dad enjoyed his scramble but said the eggs were a bit undercooked in some parts which gave them a weird texture. The interior of the restaurant is chill but also classy looking which I enjoyed. There were so many great options on the menu that I'm definitely looking forward to coming back here again! read more

I'm from Orange County, CA so I've had some of the best restaurants and was totally blown away by a small local spot in Durango. Must tries are the Mac & Cheese, stuffed poblano chile. One of the better meals we've had in a while. I had an amazing mushroom and caramelized onion pizza, and my wife had a great poached pear salad. For dessert we had a wonderful pear and cranberry tart. We've only got 3 nights in Durango this trip, but we're already planning to return tomorrow. For tomorrow I think the mushroom pizza needs a repeat, but I'm eager to give the cauliflower steak a try. A tip: sit at the at in front of the kitchen. Visited Saturday night for dinner with my I got fish tacos, they were pretty good. My wife ordered the mac and cheese with chicken added...not a good idea. The mac and cheese came out without the chicken, the waiter took it back to the kitchen but by the time he brought back the corrected order, I was almost finished with my meal. This wasn't that big of a deal but a minor annoyance. The reason for the one star is that the mac and cheese upset my wife's stomach. We were just shopping our way thru Durango and decided to break for lunch. Chimayo caught our eye, and after a few things on the outdoor menu caught our eye we decided to venture in. Comfortable and tastefully modern design without looking like they tried too hard. Our server was pleasant and helpful. We had Mahi Tacos, the BLTA Pizzetta, the Margherita Pizzetta, and the Mac and Cheese. Portions were generous and the food was excellent! Best vegetarian meal in ages. Up there with big-city cuisine, in a friendly atmosphere with plenty of fresh air from the open front of the restaurant. Delicious, creative, generous portions, completely satisfying. I highly recommend Chimayo for vegetarians. We ordered several things. Favorite was Stuffed Poblano Chile with mushroom, zucchini, corn and tres queso filling, pepita crust, Chimayo red pepper sauce, crema, served with saffron rice, black beans and house coleslaw. This alone is worth dining here. Even if you're a meat fan, try this. The chile was fresh and delicious, the crust crunchy and flavorful (unlike the "chile rellano" you get at a typical Mexican or Southwestern restaurant), and the filling super-yummy -- and plenty of it. Cauliflower "Steak" -- pan-roasted cauliflower, sauteed veggies, parmesan & oven-dried tomato vinaigrette -- was unusual and yummy, cooked to a perfect texture. Roasted Brussels Sprouts, cranberries and toasted almonds (without the bacon) - a huge portion that was more than 3 people could eat. Delicious, perfectly seasoned, and cooked just until done (no soggy mush here) They were out of the butternut squash risotto cakes (which the waiter raved about). Our waiter was friendly and knowledgeable without being syruppy or obsequious. My only complaint - the place is very noisy -- even when half full. On a busy weekend night, probably would be too loud for me and definitely too loud for older folks. Highly recommend this place for vegetarians. Hope they find a way to reduce the noise. read more

Great experience, showed up Saturday night with 6 people and no reservation; they were about to turn us away but the manager (I'm guessing) real kind lady was able to squeeze us in. We have lived here for 6 years, eating in town every week at one of our many amazing restaurants and Chimayo's is at the top of our list. We really like how they change their menu frequently as well as make it gluten free friendly. All the staff is excellent and they have very low employee turn-over. My husband and I ate at Chimayo this evening. The hostess seated us at the working kitchen. First, I must say this was so much more interesting than watching sports on a TV. My husband and I were interested in watching the many chefs work together unanimously to pull off a great evening for their many patrons. My husband started off with their onion soup- which was excellent; and I had a yummy salad with cubes of roasted squash and many other delectables. I also enjoyed the slices of cheese and apple which balanced out the acid of the dressing. This combination was well thought out! Chef Michael gave us a sampling of his carrot & leek soup which was delectable.( I love food and will have to try that next time!) For our entrees, I had one of the specials-the bison short ribs . It came with a side of mashed potato and acorn squash. ( Acorn squash must be an available, and in veggie- for it was on the menu in several places. And- that is okay with me!) My husband had the fish tacos- off the regular menu- which he said were very good! I would suggest that if you are in Durango, and want an excellent, family owned and operated place- where the ambiance is good, and the food is fabulous- then you have found the place at Chimayo! read more

I'm trying to figure out why every new restaurant in "tourist" towns thinks they have to "gussie up" their menus with all sorts of "new" stuff. Why can't restaurants just serve good food at a decent price? My friend and I tried this restaurant last night and, although the service was decent and the decor is lovely, the atmosphere was ruined by a young lady across the room who tried to cackle rather than laugh ladyike. My friend ordered the beef enchiladas, and she said they were good - BUT where was a side - like a salad? $18 for that dinner with no side is ridiculous. I had the steak sandwich, which ended up eating only the steak with a knife and fork, as the ciabatta bun was too tough to bite into. The accompanying "salad" was not a salad--it was a small pile of "exotic" greens on the plate with a very small amount of dressing. AND,, whe are restaurants going to learn that not everyone likes "yuppie" iced tea? I want just regular, brewed, pekoe tea--not rasberry tea, not peach tea, not a "mixed fruit flavored" tea - I want PLAIN old ordinary iced tea.. If these new restaurants are going to offer iced tea, they should at least have plain iced tea for those of us who don'tl ike the flavored stuff. The creme brulee was good, but not spectacular; I've had better several times. And not worth the price. A steak sandwich, diet Coke, and creme brulee set me back $30.00---it wasn't worth it. The selections on the menu are eclectic and "nouvelle cuisine" and aren't meant for those of us who like plain food or food not gimmicked up. I won't go back. read more

We loved Chimayo! We arrived during the "happy hour" time frame. The food was wonderful (we tried the pork nachos, a margherita pizza, taco and macaroni and cheese which we added bacon). But do you want to know what the best part of our visit was? Our server Jason Hill was a true delight! He was friendly and genuine, on top of being a wonderfully attentive server. What a great place for food and ambience. We met one of the owners' and she said they change the specials every two weeks depending what is in season. We lucked out and ordered the House made sausage pistachio pizza and the roasted artichoke with lemon butter, garlic aioli......it was so delicious. The wine menu is very reasonable....my suggestion is get a bottle the price point is a better deal and you can take it home what you do not drink. The food price is on the expensive side....out special pizza was 18.5 it feed two only and that fabulous roasted artichoke was 8.5 and that was a great deal because that fed 4. Service....was great. I know when we came in it was an off night.....at 1st our waitress was really stressed both owners were out serving drinks and food... but our waitress was awesome even with a broken elbow and the hostesses was so sweet answered all our questions. Would I come here again? Absolutely. It's expensive because the specialty pizza's are small but they are fabulous and delicious. The wine selection in my opinion are very reasonable and what you don't drink you can take home. The roasted artichoke was awesome...even my 12 year ate it. I've been visiting Durango for a few years now, and Chimayo has always been a solid choice for dinner. The food is tasty and has always been consistent, and they have a decent wine list and inventive cocktails. On this last visit, my friend and I enjoyed the pork tacos, chopped salad, seafood soup and roasted brussels. That may sound like a lot of food (and we most certainly were full and had to take some home), but this place acts like it's almost a tapas restaurant although it isn't. Point is, many menu selections are considered small/shared plates, so you can get a few things to share among you and your friends. The seafood soup so fantastic! You could really taste the shrimp stock they used. The chopped salad was perfect for sharing, and they didn't skimp on the bacon. Also, I loved how the dressing was more of a vinaigrette than the typically creamy flavor/texture that most chopped salads come with. The brussels were solid; I'm pretty sure we got them on previous visits. And the pork tacos were fantastic (even the next day), as the pork was nice and tender and juicy. They had a little kick to them which was nice. If I had to say one thing, I would encourage the use of a bit more salt. The brussels in particular were somewhat bland, and we found ourselves having to add a bit more seasoning to our plates. For drinks, my friend had the blood orange margarita and I had a manhattan. Both were really good. The restaurant is a bit on the pricier side -- I mean, $15 for two pork tacos is a bit ridiculous. But it's definitely a trendier restaurant for Durango, and that usually means a bit more of a price point.
