Saw previous review and was cautious. Then I realized that review was Only FIVE days after they opened their doors! So we gave them a try...But CHIMAYO was on their game! We had the stuffed poblano to start with which had great layers of flavor without being too spicy....even though they're huge I could've had two...then I had the prime flat iron steak med rare and it was perfectly cooked while the chimichurry sauce (sure I spelled that wrong)complimented everything on the plate right down to the bean in yes butter! Not too heavy at all. My wife had a large warmed veg salad that she added steak to -med rare as well. Hers came out perfect and large was a great size for an entree portion not to mention the great flavor throughout! Our friends had the same except they had a margherita pizza which needed more fresh basil and was just okay...table next to us started with a pork pizza which they raved about and it looked great but they should stick to more entrees like the one we tried ...we would try more entrees before pizzas. As for drinks they were slammed at the bar (FRI night) so our drink came in a reasonable amount of time considering... We could watch the bartenders hustling so we knew they were on it. They haven't been open very long so I expect a few kinks in the flow which will I'm sure they'll get fixed as they were small things from our perspective... The drinks were inventive a delicious I had a Scottish martini which was with Hendricks gin cucumber and some mint, wow nice combo. Our table also had a few La Paz margaritas....Probably the best any of us had ever had all fresh juices no mixes...should have asked for that recipe! The ladies started with and finished with Blueberry Lemondrops also nothing but fresh stuff here! Even blueberries dropped in the martini glass, nice touch! All in all a great experience in a place that just opened for business a couple of weeks ago,we will be back! Chimayo was the happening place yes a touch loud but had a great vibe with open air feel from two very large open windows on each side of the front door, just beautiful! Don't mistake pizza on the menu as a Kids Place as they are rustic style pizzas seemingly meant for more sofisticated palates. Dinner at the bar on 2/24, drinks & dessert several other evenings that week. Sunday night was very quiet night, friendly, attentive staff. I thought the Stuffed Poblano Chile to be an excellent and absolutely deliciously spicy & peppery vegetarian main course. I also sampled an excellent daily special Italian Sausage Lasagne. The Nutella Pizza dessert was huge & just didn't resonate with me. Bar has an excellent vibe most nights and a great selection of scotches. Excellent French Press coffee as well. well miss i dare you to impress me annie b....i beg to differ entirely with your review! ive done my fair share of traveling and have worked in the food industries on various levels over the course of many years and i am very impressed with how well this new addition to durango has done right out of the starting blocks...were a tough crowd! there has not been one night that we have passed by and seen nothing but happy diners enjoying a balmy spring night in a classy yet not stuffy environment. the visual impact of the roll up doors is very inviting...the lighting is well thought out...the long sexy curves of the bar are, well...sexy! the menu is an exciting assortment of flavors and textures...the stuffed poblano chile is to die for!!! i personally love that i can order a salad and add steak to it! the pizzas are all carefully thought out, and the entreés...from the salmon to the meatloaf...done to perfection. weve been in 3 different times...once just for drinks as we had already eaten elsewhere, but were so intrigued by the ambiance we had to pop in. the other two times we stayed for dinner and the wait staff were very friendly and knowledgeable...it was very refreshing to see so many smiles and such eagerness to please. they were honest about the fact that they had only recently opened and are the first establishment to implement the cloud based system for ordering (we thought she was texting at first!) and they were still working out the glitches...as is typical in every new establishment. yes, one night there was a slight delay on receiving our drinks...but we could see the bar was obviously overwhelmed. we tried the nutella pizza for dessert...what a unique treat. we will certainly be frequenting this establishment...great for when we want to entertain guests who enjoy an upbeat elegant scene...this is not a kid friendly place, nor is it a late night bar hang out...its just what durango has been waiting for! thank you read more

We eat here every week or so, usually for lunch. I am hooked on the pizzette, a small luncheon pizza served with their house salad, and my wife is nuts about the roasted vegetables, particularly the brussels sprouts. In a town full of good restaurants, we keep going back and taking our out-of-town guests. read more

I visited this spot when I first moved to town and had great service by a guy named Michael. Really there were no complaints except the items seemed ridiculously overpriced for the quality. I mean, don't get me wrong, I really enjoyed their fish tacos, but it just didn't quuiiiiiiite seem worth what I paid for them. I would be giving this review 4 or 5 stars if it weren't for our waitress, Shari. This is the second time I have had her and am thoroughly unimpressed. She had an attitude from the beginning and wouldn't even do separate checks for our party of 6. She used the excuse that it was so busy because of spring break when clearly it was not busy during the time we were there. If she is there next time I will ask for a different waiter/waitress. We were a little hesitant to try this restaurant, considering it only received 3 stars, but considering it was Friday evening and other places were filling up quickly, we thought we'd give it a try! My husband and I were both pleasantly surprised! My husband had the chicken mushroom enchiladas with mole sauce and I had the San Danielle pizza. Must say both were very good, as we shared each other's meal. Our waitress Kelsey did a great job with her pleasant demeanor and attentiveness. As to the price of our meals, I don't think $52 before tip, which included one drink each, is all that bad for the quality of food and ambience. My first night in Durango, and I am greeted with the best and the most friendly service, great food, and wonderful tasting wine. The waitress, Mariposa was so pleasant, and informative. She let me know about different choices of wine during happy hour. She also found out this was my first stay in Durango and that I am a vegetarian. She offered suggestions on the menu and info regarding current events. The salad was delightful with a light dressing and fresh romaine. Also the margarita pizza arrived quickly. It was so tasty! I had to stop myself from eating it all - more than enough for another meal. The wine she suggested was smooth and tasty. And since Durango is fun to stroll down Main, I didn't mind having three glasses. Finally, she handled an otherwise awkward situation with grace when a woman ordered food but could not pay for it. Several of us offered to pay for her meal. I thank her for being a compassionate human being and a fantastic server! I will be back. read more

During a trip to Durango for a birthday we went around town and this restaurant had seating on a Saturday night which was hard to find. We st down and were severed water in a large corkable bottle which lent to the atmosphere and ambience. We looked at the menu which had a good variety. We each ordered the steak Sandwich dinner mine with the potatoe wedges and my girlfriend with the salad. The sandwiches were great full of flavor but the wedges were very spicy (and not called out as such in the menu). A desert of Creme Brulee finished out the meal rather nicely. When we return this place will be one of our first stops. read more

With high hope, my husband and I went to Chimayo for its brunch. I was expecting some good brunch food with the southwestern flavor.... boy was I disappointed. I ordered the smoked salmon Hash N' eggs. It sounded very delicious on the menu but in reality it was made with "big chunks" of potato (too big to be consider HASH), sauteed with salmon ( good salmon but i did not taste the smokiness in the "smoked salmon" supposely), bacon and tasteless poblano chili. it was hardly detectable the flavor of chipotle in the chipotle hollandaise over the eggs. The other odd thing for this dish is that they offered chunky potato wedges or a salad as side. There is so much potato in the HASH already, why would anyone offer more chunks of potatoes to complete the potato hash!!!! read more

Excellent brick oven pizza. The "warm roasted vegetables" salad was fresh, tasty and large enough for two people. The salad plus the pizza was more than enough for the two of us. Went there on a Saturday and and was very pleased. 4 stars because it was expensive. I got carne asada ($28) which was cooked perfectly but still on the expensive end. My fiancée ordered a fancy pizza ($18) which had a medium thickness crust and was delicious. The food was great but just be prepared to pay a bit more than you would normally.. but being Durango is a tourist area, its a great choice. read more

I have always loved this restaurant from day 1. I eat here all the time. It has never been that busy - it's kind of a fall back place when you can't get into the super popular places. You can always get a table - at the very least at the bar. Lately it has been more busy and I can't help noticing that the customer service has tanked. It's like they're mad they're busy. I thought the first time was a fluke but the second time we were here on a really busy day the wait staff was literally rolling their eyes at requests that they easily honored on a slow day. Too many restaurants in Durango to spend hard earned money on great food but be treated like crap. This could possibly be my last meal here. read more

I was visiting a friend and she took me to dinner at Chimayo. My stomach was a bit upset and I chose the macaroni and cheese. Never have I enjoyed this dish more than that night. It was delicious. Two days ago I ate at a new restaurant in Taos who flaunts how good their food is and ordered the mac & cheese there. I gave it a thumbs down. My sister, husband and I had a terrific dinner here last night. We started with specialty drinks from the bar, which were great, and had the Chimayo pizza, which is a yummy blend of avocado, pulled pork and peppers. The crust was perfect. Then 2 of us had the pasta which is the best I've had in Durango (you can tell the wait staff how hot you want the pepper). My husband had the special, fish tacos which were very fresh and full of good flavors. We washed down our entrees with a bottle of one of the red wines from the diverse and very reasonably priced wine list. For dessert we shared the banana tart which was top flight. I can't say enough good things about the quality of the food and the modest prices for it. We also had very friendly and efficient service. The atmosphere is terrific, with the open air front windows and the beautiful bar area. This place is a winner. read more

I went to Chimayo for brunch on a Saturday afternoon.The service and atmosphere were great, but the food not so much. My eggs were overcooked and my salad was so overdressed, that I was unable to eat it. When you are paying $14.00 for breakfast, they should cook the eggs correctly. I felt the menu was thoughtful but the execution was not. I would not reccomend anyone having brunch there. The quality of the food and the price did not match. read more

We've always left Chimayo full and happy, and continue to go back for the wide selection on the menu and the nice atmosphere (get a seat up front by the garage door windows). I've tried quite a few of the entrees and never been disappointed with my meal. Have had off service here and there (a drink order that didn't arrive until our appetizers were already out, a waitress who was sullen and didn't crack a smile the entire night) but overall I think it's one of the better places for a dinner out or a get together with friends. read more

Ok, tonight was meal number 8 at Chimayo and all I can say is the food is great, the service is attentive and spot on and the vibe is really wonderful. The very fact that the owners are there and on the line cooking is a testament to their commitment serving their customers. For me as a food professional and retired chef I can say this is a rare thing these days. The current trend of running a restaurant by having a manager run the operation is not doing a service to the customer. The menu is limited but top notch, that's the key. read more

Their pizzas are to die for, especially the mushroom, carmelized onion one. We love this place! Started with the roasted butternut squash salad, all of my favorites in a salad bowl. We also shared the cauliflower steak which is a veggie lover's dream. The short ribs (one of the recommended specials) was in a spicy sauce that was truly delicious. The best short ribs I've had. The Mac and cheese with sausage was comfort food at its best! breaks my heart to give one of our favorite restaurants a bad review but bad service 2 times in a row is annoying. First off if you go to chimayo don't go during the day bartender is by far the worst. Slow, rude and because of her we will never go back again during the day. Evenings no problem because the best bartender and staff our working. Aaron behind the bar is why we come back. We stopped in Saturday for a mimosa, bartender ended up charging us twice, didn't tell us. We found out after checking our account. She was slow and came off like we were interrupting her social hour. My husband sat waiting and waiting for a second drink. We get our bill for 3 drinks and it was $30. Damn! We had local beer and a mimosa! The good things about Chimayo is the food is bomb, you will usually see the owner who is extremely kind and friendly, the manager is top notch. Get rid of the day time bartender and all will be better. read more

I agree with Mikala M. It was the worst service ever. We arrived at happy hour, and were given the menu. Right off, the waitress grabbed the menu from my husbands hand, and flipped it over stating "you can't order from that side, only these items are available." The drinks at happy hour were priced at $3.00 to $6.00. My husband ordered 2 Cadillac Margaritas, and I ordered a glass of wine. My drink was $3.00. We ordered 2 hamburgers, and the bill added up to $72.00!!!! Really? The waitress NEVER said that his drinks would cost $14.00 extra EACH on top of the $6.00 happy hour charge because they used Don Julio tequila. Odd thing is the night before, right across the street the very same margarita was $3.50. The waitress had a snooty attitude and was very unfriendly. We would NEVER return to this rip-off establishment. read more

I have high hopes that this restaurant can work out some of its issues because it is a nice setting for Durango. However, the food service is not anywhere close for this type of restaurant. I either had the same server as Annie B or Chimayo needs to get on top of this issue. I would recommend management or the owners be going around to all the tables and ask how they are doing. We Loved Chimayo! Our food was spectacular, my husband said it was the best ribs he has ever had. The pasta was fantastic as was the salad. The acai blueberry lemon drop was out of this world and our waitstaff was excellent and prompt. I would highly recommend Chimayo to anyone heading to Durango for a wonderful dinner. read more
