Using cured lemon was a very clever idea as the sauce was not too strong but still had depth; the saffron and turmeric were well balanced. The fish itself was NOT overcooked and flaked perfectly. The vegetables were also executed well and cooked so they could be eaten with the same bite. The star of the show was still the cook on the fish with the wonderful sauce. The Seared Branzino was okay - there were bites where I had a very fishy taste - and it was a very small piece of fish. The sauce is actually a 'roasted pomodoro' gravy - which is an 'intensified' version of a classic Italian sauce. It's made by roasting the tomatoes at a very high heat and almost caramelizing them. We decided to share two entrees - the Beef Short Ribs and the Lobster Ravioli. I always ask if the short ribs are lean - our server responded they were very lean...and they were.
